2 tablespoons toasted sesame oil
2 tablespoons light soy sauce
2 tablespoons clear rice vinegar
1 tablespoon finely chopped cilantro
1 tablespoon finely chopped scallions
1/2 red Fresno chile, sliced into rings, optional

Steps:

  • Stir together the sesame oil, soy sauce and vinegar. Stir in the cilantro and scallions. Pour into a dipping bowl and float a few chile rings on top, if using.

1/4 cup rice wine vinegar
2 tablespoons finely grated ginger
2 tablespoons chopped green onion
2 medium cloves garlic, minced
2 teaspoons sugar

  • Add all of the ingredients to a lidded jar and shake well to combine. Serve as a dipping sauce for tempura or dumplings.

2 teaspoons minced peeled fresh ginger
1/2 teaspoon sesame oil

  • Whisk together soy sauce, honey, ginger, sesame oil and red pepper flakes in a small bowl. (Can be prepared 1 day ahead. Cover; chill. Just before serving stir in sesame seeds.

Great on their own, Chinese jiaozi get a fantastic flavor boost when dipped in a zippy sauce like this one. The tart-salty-spicy combination adds a complex edge to the dumplings. There's no such thing as a definitive dipping sauce, since cooks and diners mix up their own according to personal taste. At the least, your sauce should be tangy and savory. But add some nutty, hot chile oil, and your eating experience will enter a different orbit. Chinese dumplings are wonderful with an extra kick of ginger or garlic in the sauce, too. I prepare the sauce in advance, but you can set out the ingredients and invite guests to do it themselves.

Yield makes about 2/3 cup

1/3 cup light (regular) soy sauce
2 1/2 tablespoons unseasoned rice, Chinkiang, or balsamic vinegar
1/8 teaspoon sugar (optional)
1 to 3 teaspoons Chile Oil (page 216) (optional)
1 tablespoon finely shredded fresh ginger, or
2 teaspoons finely minced garlic (optional)

Steps:

  • Combine the soy sauce, vinegar, and sugar in a bowl. Stir to dissolve the sugar. Taste and adjust the flavors to your liking for a tart-savory balance. Add as much chile oil as you like for some heat. The sauce can be prepared several hours in advance up to this point. Right before serving, add the ginger or garlic for a fresh layer of punch.

1 teaspoon Korean chile flakes
1 tablespoon rice vinegar
1 cup soy sauce
2 tablespoons water
1 1/2 teaspoons toasted sesame oil
1 1/2 teaspoons freshly squeezed yuzu or lemon juice
6 scallions, trimmed and finely sliced

Steps:

  • Place garlic, ginger and chile flakes in a medium bowl. Add vinegar, and stir to combine. Set aside for 5 minutes to allow flavors to come together.
  • Add soy sauce, water, oil, yuzu or lemon juice and scallions. Whisk thoroughly to combine.
