PINEAPPLE GLAZED RIBS

6 lb pork baby back ribs (about 2 racks)
2 tbs brown sugar
1 tbs kosher salt
1 tbs garlic (finely minced)
1 tbs olive oil
1 1/2 tbs cider vinegar
1/2 cup cilantro
1 chili pepper (finely minced)
3 cups pineapple juice
1/2 tsp red pepper flakes
1 cup mirin
3 tbs brown sugar
2 tbs rice vinegar

Steps:

  • Place all marinade ingredients in a food processor and pulse a few times. Rub the mixture onto the ribs. Place ribs in a covered dish or large freezer bags and marinate overnight.
  • You can make the glaze ahead of time as well (recommended). Place all glaze ingredients in a medium saucepan and bring to a boil. Reduce heat so you have a medium simmer (some bubbles on top of the liquid) and reduce until it's a syrupy consistency-this will take about 1 hour. Season to taste with salt and you may like a splash (about 1 tsp) of fresh lemon juice added.
  • Line a baking sheet with either parchment or aluminum foil. Place ribs on the sheet and roast in a 350F/180C oven for about 2 hours. Basting with glaze during the last 15 minutes of cooking.
  • Brush with additional glaze then cut into individual rubs. Serve remaining glaze as a dip if you desire.

  • Mix 4 tablespoons melted butter, 1/4 cup light brown sugar, 1/4 teaspoon each curry powder, cinnamon and vanilla extract, a pinch of salt and a splash of dark rum in a bowl. Slice a pineapple in half lengthwise (keeping the top attached), then cut each half into 3 long wedges; cut out the core. Place 2 wedges on a sheet of foil; brush with the spiced butter and fold up. Repeat to make 2 more packets; grill over medium heat until the pineapple is soft and golden on the bottom, 15 to 20 minutes.

2/3 cup pineapple juice
3 tablespoons lemon juice
3 tablespoons lime juice
1 tablespoon minced ginger
1 jalapeno, seeded and finely chopped
2 tablespoons soy sauce
3 tablespoons honey
3 tablespoons chopped cilantro
1 pound large shrimp, peeled and deveined
1 1/2 cups pineapple chunks, fresh or canned
1 red onion, peeled and cut into chunks
1 green bell pepper, seeded and cut into 1-inch squares

Steps:

  • Heat a cast-iron grill pan or outdoor grill over medium-high heat.
  • Combine the pineapple juice, lemon juice, lime juice, ginger, jalapeno, soy sauce, honey and cilantro in a small saucepan. Heat the mixture over medium-high heat and simmer until the liquid is reduced by half.
  • Skewer the shrimp on 8 metal skewers or on 8 wooden skewers that have been soaked in water for at least 20 minutes, alternating with pieces of pineapple, onion and bell pepper.
  • Brush or drizzle the kebabs with the pineapple glaze. Grill until the shrimp are opaque, about 3 minutes per side, brushing occasionally with the glaze. Serve hot.

1 large whole, fresh pineapple
1/4 c honey bbq sauce
3 Tbsp soy sauce
1 Tbsp honey mustard
1/2 c brown sugar
1/2 tsp salt
1/2 tsp chili powder

Steps:

  • 1. Pre-spray grill with non stick spray and heat to 350
  • 2. Stand pineapple upright and slice off skin with a bread knife. Leave crown on
  • 3. Mix BBQ sauce, soy sauce and mustard in small bowl
  • 4. On heavy duty aluminum foil sheet, spread brown sugar, salt and pepper
  • 5. Place whole pineapple on grill and rotate every 5 minutes to achieve grill marks around entire pineapple
  • 6. Remove pineapple from grill and allow to cool for 5 minutes
  • 7. Brush pineapple with BBQ sauce mixture
  • 8. Roll pineapple into sugar mixture to evenly coat, the seal into foil and replace on grill for 15 minutes, turning every 5 minutes.

I came up with the glaze for this ham using ingredients on hand and it's the best I've ever tasted. If you have any glaze left over, you can add it to the pan drippings with a little flour or cornstarch and make a nice sauce to accompany the meat. Use the bone and ham trimmings to make soup afterwards.

1 (10 pound) fully-cooked, bone-in ham
1 ¼ cups packed dark brown sugar
⅓ cup pineapple juice
⅓ cup honey
⅓ large orange, juiced and zested
2 tablespoons Dijon mustard
¼ teaspoon ground cloves

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place ham in a roasting pan.
  • In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, Dijon mustard, and ground cloves. Bring to a boil, reduce heat, and simmer for 5 to 10 minutes. Set aside.

2 cups sugar
1 1/2 cups water
1 vanilla bean split
1/4 cup dark rum
1 tablespoon minced ginger
2 Thai bird chiles
1 banana, chopped
1 tablespoon passion fruit syrup (or 2 tablespoons puree)
1 tablespoon pink peppercorns, for garnish
1 ripe pineapple, peeled (Costa Rican)

Steps:

  • Preheat an oven to 350 degrees. In a small saucepan, mix together the sugar, water and vanilla bean and cook until golden brown. Add the rum, ginger, chiles, banana, passion fruit and mix well. Allow to cool then blend in a food processor. Strain and set aside. Place pineapple in a shallow baking dish and brush on glaze. Bake for 1 1/2 hours, basting every 15 to 20 minutes. Save the warm sauce in the baking dish for plating.

1 small onion, diced
1 egg

1 teaspoon Worcestershire sauce
⅓ cup ketchup
¼ cup pineapple preserves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, bread crumbs, bell peppers, onion, egg, 1/3 cup ketchup, 1/4 cup pineapple preserves, 1/4 cup brown sugar, garlic powder, and Worcestershire sauce in a food processor until combined; put into a bread pan.
