Brown-Butter Salmon With Scallions and Lemon image

This dish is a celebration of soft food and subtle flavors. To prevent overcooking, the salmon bakes in a light yet comforting sauce that's made with just three simple ingredients: butter, scallions and lemon peel. The salmon comes out silky, and the sauce is nutty from the browned butter and slightly sweet from the roasted scallions and lemon peel. Serve with a squeeze of lemon for freshness and a simple side like broccolini, green beans, grains or pasta. This technique also works for other fish like cod, halibut or arctic char.

1 1/2 pounds salmon, skinless or skin-on (1 large fillet or four 6-ounce fillets)
Salt and black pepper
1 lemon
6 tablespoons unsalted butter
1 bunch scallions, thinly sliced

Steps:

  • Heat the oven to 325 degrees. Pat salmon dry, and season with salt and pepper. Set aside. Using a vegetable peeler, peel the zest of the lemon in wide strips. Cut the lemon into wedges for serving.
  • In a large, ovenproof skillet, melt the butter over medium. When it's foaming, add the scallions and the lemon peel, and season with salt and pepper. Cook, stirring occasionally, until the butter turns brown and smells nutty, 3 to 6 minutes. (If you're using a light-colored pan, you'll see the browned bits in the skillet. If you're using a dark-colored pan, look for dark spots on the white parts of the scallions; those are browned bits of butter and a sign to remove the skillet from heat.)
  • Immediately remove from heat, and add ⅓ cup of water. Stir to combine. Lay the salmon, skin side down (if there's skin), into the sauce. Cover the skillet and bake until cooked through, 15 to 20 minutes, or slightly longer if you're cooking a single, large piece. (You'll know the salmon is done when the fish flakes or an instant-read thermometer inserted into the thickest part registers 120 degrees.)
  • Eat the salmon with a spoonful of sauce and a squeeze of the lemon.

4 6 to 8-ounce salmon slices, with skin on the bottom
Marinade:
1/2 cup sesame oil
1/2 cup olive oil
1/3 cup tamari
4 cloves garlic, chopped
4 to 6 tablespoons sesame seeds
4 bunches scallions
Dash of salt
1/4 tsp. crushed black pepper
Lemon for garnish

Steps:

  • 1. First, prepare the marinade. Chop white parts of scallions and reserve green leaves of the scallions. Add the chopped white scallion pieces to the remaining ingredients. 2. Place the slices of salmon in a shallow glass dish and pour the marinade over. 3. Let the salmon marinate for at least 25 minutes. (You can marinate the salmon up to an hour and a half, actually.) 4. Preheat the oven to 375. 5. Create a bed of scallion leaves (the green parts of the scallion) in a 13' by 9' by 2' baking dish. 6. Place the four slices of salmon, skin side down, atop the scallion leaves. Pour *all* of the marinade atop the salmon. (You are almost poaching the fish.) 7. Place the salmon in the oven uncovered and start checking after 12 minutes. When the fish flakes easily it is done. (Cooking time can really vary depending on the fish's cut.) To serve: Remove the fish with a spatula and be sure to place a few scallion greens alongside the salmon. Garnish with lemon slices.

TAMARI LEMON MARINADE FOR FISH

This recipe is from the Black Dog Tavern's "Summer on the Vineyard" Cookbook. This marinade is great on grilled fish, such as salmon, bluefish, swordfish, or tuna. DH and I made this the other night to marinate our swordfish. We thought it was excellent as well as quick and easy. The cookbook also states that the marinade can be used to season cooked fish or vegetables as well.

1 lemon, juice of
1 cup tamari
1 bunch scallion
2 (8 ounce) salmon (can also use tuna, swordfish or bluefish)

Steps:

  • Chop the scallions and combine with lemon juice and tamari.
  • Marinate the fish in this mixture for about half an hour.
  • Preheat the grill and oil it to prevent fish from sticking.
  • Grill, basting with the marinade a few times.

4 6-ounce center-cut salmon filets, skin on
1 cup teriyaki sauce
3 bunches scallions

Steps:

  • Remove any bones from salmon and discard. Place salmon in bowl or shallow casserole. Cover with teriyaki sauce. Marinate for 5 minutes
  • Meanwhile, trim roots from scallions. Trim 2 bunches of scallions so that each scallion has only 1 inch of green on top. Place trimmed scallions in nonstick skillet with enough salted water to cover. Bring to a boil, lower heat, and cook until scallions are soft, about 5 minutes. Keep warm.
  • Remove salmon from marinade. Reserve marinade. Press 1/2 teaspoon of butcher-grind black pepper into skinless side of each salmon fillet. Heat 1 very large or 2 smaller nonstick skillets until very hot. Put salmon skin side up in pan(s) and cook over medium-high heat for 3 minutes. Turn over and cook 2 more minutes.
  • Meanwhile, finely dice remaining scallions so that you have 1/2 cup. Add to reserved marinade. Add marinade and 1/4 cup water to salmon. Heat for 1 to 2 minutes, until salmon is cooked as desired. Serve immediately with boiled scallions.

4 tablespoons toasted sesame oil
2 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
1 tablespoon honey
1 (2-inch) piece fresh ginger, peeled and finely grated (about 1 tablespoon)
1 garlic clove, finely grated
1 pound broccoli, trimmed and cut into florets, thick stems discarded
2 scallions, trimmed and cut diagonally into 1 1/2-inch segments, plus thinly sliced scallions for garnish
1 tablespoon olive oil, plus more for brushing the salmon
Kosher salt and black pepper
4 (6-ounce) skin-on salmon fillets
1/2 lime, for serving
Sesame seeds, for serving

Steps:

  • Heat the oven to 425 degrees. In a small bowl, whisk 3 tablespoons sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside.
  • Place the broccoli florets and 1 1/2-inch scallion segments on a sheet pan. Drizzle with 1 tablespoon olive oil and the remaining 1 tablespoon sesame oil. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper, toss well and roast for 5 minutes.
  • While the broccoli and scallions roast, place the salmon fillets on a plate and pat dry with paper towels. Brush all over with olive oil and sprinkle with salt and pepper.
  • Toss the broccoli and scallions and move to the edges of the pan, clearing spaces in the center for the salmon fillets. Place the salmon fillets, evenly spaced, on the center of the pan. Brush the fillets generously with the glaze.
  • Return the pan to the oven and roast until the salmon is cooked through but still slightly rare in the center, about 12 minutes.
  • Squeeze the lime over the broccoli and sprinkle with salt. Scatter the sliced scallions and sesame seeds over the salmon, and serve hot.
