2 c shredded cabbage
1/2 c shredded carrots
1 mango (not fully ripe)
3 medium scallions--chopped
3 Tbsp rice vinegar
1/2 lime--juiced
1 Tbsp low sodium soy sauce (tamari or gluten free)
1 Tbsp sesame oil
1 tsp black & white sesame seeds

Steps:

  • 1. JULIENNE THE MANGO (CUT INTO STRIPS) COMBINE WITH CABBAGE, CARROTS, SCALLIONS & TOSS TOGETHER IN LARGE BOWL.
  • 2. PREPARE DRESSING BY WHISKING TOGETHER RICE VINEGAR, SOY SAUCE, LIME JUICE, SLOWLY WHISK IN OIL.
  • 3. POUR DRESSING OVER CABBAGE MIXTURE & TOSS TO COAT. LET IT SIT AT LEAST 15-20 MINS. TO LET THE DRESSING SOAK IN.
  • 4. SERVED SPRINKLED WITH SESAME SEEDS

1/2 cup rice vinegar (can be found in Asian Markets)
2 tablespoons oriental sesame oil
2 tablespoons soy sauce
1 tablespoon fresh ginger, peeled, minced
1 tablespoon golden brown sugar
1 tablespoon Thai fish sauce (omit to make vegan or vegetarian, can be found in Asian Markets)
1 medium cucumber, peeled, seeded, cut into matchstick-size strips
1 medium carrot, peeled, seeded, cut into matchstick-size strips
1 red bell pepper, cut into matchstick-size strips
4 cups cabbage, thinly sliced

Steps:

  • Whisk first 6 ingredients in a medium saucepan.
  • Bring to boil; pour into a large bowl.
  • Add cucumber, carrot and red bell pepper.
  • Add cabbage to vegetable mixture.
  • It can be made up to 4 hours ahead.
