Layers of rich peanut butter cookie, peanut butter filling and chocolate frosting beg to be indulged in.

1 pouch (1 lb 1.5 oz) Betty Crocker™ peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
1/2 cup butter, softened
1/2 cup creamy peanut butter
2 cups powdered sugar
2 teaspoons milk
1 cup semisweet chocolate chips
1/4 cup butter

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In large bowl, stir all Cookie Base ingredients until soft dough forms. Press dough in bottom of pan using floured fingers. Bake 15 to 18 minutes or until golden brown. Cool completely, about 1 hour.
  • In small bowl, beat all Filling ingredients with electric mixer on medium speed until smooth. Spread mixture evenly over cookie base.
  • In microwavable bowl, microwave all Frosting ingredients on High 30 seconds; stir until smooth. Cool 10 minutes; spread over filling. Refrigerate 30 minutes or until set. For bars, cut into 9 rows by 4 rows.

Crisco® Original No-Stick Cooking Spray
1 cup (6 oz. pkg.) semi-sweet chocolate chips
1 cup packed brown sugar
2/3 cup Jif® Creamy Peanut Butter
1/2 cup butter, softened
1 large egg
1 teaspoon vanilla extract
3/4 cup Pillsbury BEST® All Purpose Flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick rolled oats

Steps:

  • HEAT oven to 350 degrees F. Spray 13 x 9-inch pan with a no-stick cooking spray. Melt chocolate chips in dry, microwave-safe bowl on HIGH (100% power) 1 minute. Stir. Microwave at additional, 10- to 15-second intervals, stirring just until chips are melted. Set aside.
  • BEAT together brown sugar, peanut butter and butter in large bowl with an electric mixer, until smooth and creamy. Add egg and vanilla. Beat until well blended.
  • STIR together flour, baking soda and salt. Add to peanut butter mixture. Beat just until combined. Stir in oats. Press 3/4 of dough into prepared baking pan. Spread evenly with melted chocolate. Dot chocolate layer with remaining dough.
  • BAKE 24 to 26 minutes. Cool. Cut into 24 bars.

Lake Tahoe, a ski resort and gambling destination straddling the border between California and Nevada, was not my first choice of places to live when I left Ireland, but a bakery in one of the casinos there offered me a job, and I grabbed it. At the bakery, I was required to start work at the shocking hour of three a.m. When it's that early, it's hard to know what an appropriate breakfast is, so I'd often eat one of the bakery's peanut butter bars, which featured a layer of chocolate and were salty and sweet and really very good. As time went by, the number of bars I ate each day started to climb, and I realized I had to limit my peanut butter bar intake or risk a slippery slide into gluttony. Consider yourself warned.

1 1/2 cups (3 sticks/340 grams) butter, softened
1 cup (225 grams) sugar
1 cup (225 grams) smooth peanut butter
1 large egg
1 teaspoon pure vanilla extract
2 cups (283 grams) all-purpose flour
2 1/3 cups (198 grams) unsweetened flaked coconut
1 teaspoon salt
1 cup (142 grams) salted roasted peanuts, chopped
2 cups (12 ounces/340 grams) chopped milk chocolate

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C) and line a 9 x 13-inch baking pan with parchment paper.
  • In a large bowl, cream together the butter and sugar with a wooden spoon until light and fluffy.
  • Mix in the peanut butter, followed by the egg and vanilla.
  • Add the flour, coconut, and salt and mix until well combined.
  • Spread the mixture evenly in the prepared pan.
  • Scatter the peanuts over the top. Press them into the dough with your hand.
  • Bake for 25 to 30 minutes, until golden brown on top. Let cool in the pan for 20 minutes.
  • Melt the chocolate in a small heatproof bowl in the microwave or over a bain-marie. Spread a thin layer of the melted chocolate over the top of the bars in the pan. Transfer the pan to the fridge and let the chocolate cool for 2 hours. When the chocolate has set, cut into 24 bars.
  • Store the bars in an airtight container in the fridge for up to 5 days.

1/4 cup butter, melted
1 package (3.90 ounces) instant chocolate pudding mix
1-1/2 cups 2% milk
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/3 cup crunchy peanut butter
1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup milk chocolate chips
1/4 cup peanut butter chips

Steps:

  • Preheat oven to 350°. In a large bowl, finely crush 24 of the cookies; stir in melted butter. Press onto the bottom of an ungreased 9-in. square baking pan. Bake until lightly browned, about 10 minutes. Cool completely., In a small bowl, whisk pudding mix and milk until smooth; spread over cooled crust. 1 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour

1/2 cup 2% milk
FROSTING:
3/4 cup creamy peanut butter
1/4 cup butter, softened
3-3/4 cups confectioners' sugar
5 to 6 tablespoons 2% milk
1 cup chopped unsalted peanuts

Steps:

  • Preheat oven to 350°. Grease two 13x9-in. baking pans., In a large bowl, cream butter, sugar and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour and baking powder; add to creamed mixture alternately with water and milk, beating well after each addition., Transfer to prepared baking pans. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Meanwhile, for frosting, in a large bowl, beat peanut butter and butter until blended. Beat in confectioners' sugar alternately with enough milk to reach spreading consistency., Remove cakes from oven; place on wire racks. Spread frosting over warm cakes; sprinkle with peanuts. Steps:

  • Pre-heat oven to 350 degrees.
  • Cream together butter and peanut butter. Add sugars, vanilla and egg. Mix until combined. In a separate bowl, mix flour, salt and baking soda. Add dry ingredients in small amounts to wet ingredients. Once this mixture is combined, pat into a 9 X 13 in pan and bake for about 20 minutes.
  • Sprinkle chocolate chips over mixture in pan while it's still warm. As they melt, spread the chocolate chips evenly onto cookie mixture with a rubber spatula.

Steps:

1/3 cup creamy peanut butter
1 cup (from 8-oz package) Reese's minis peanut butter cups, coarsely chopped
1 cup semisweet chocolate chips
1/2 cup Reese's peanut butter chips
1/2 cup cocktail peanuts, chopped

Steps:
