A party in a bowl. An excellent punch, not overly sweet. From the French site O Delices. A serious cocktail.

1 (750 ml) bottle white rum
750 ml dark rum
2 1/2 cups Grand Marnier
3 quarts orange juice
3 quarts pineapple juice
2 limes
1 vanilla bean
2 1/2 cups simple syrup

Steps:

  • Mix all the liquids together.
  • Halve the bvanilla bean and scrape the seeds into the mixtures.
  • Quarter the limes and them to the mixture.
  • Chill for at least 6 hours to allow the flavors to ripen.

This is a healthy take on the Tahitian coconut breakfast treat called firi firi, which is typically fried. My version is baked and rolled in a spicy island sugar mix. -Sue Falk, Sterling Heights, Michigan

1/4 cup warm water (110° to 115°)
1 package (1/4 ounce) active dry yeast
1/2 cup warm coconut milk (110° to 115°)
1/2 cup sweetened shredded coconut
1/3 cup sugar
1/2 teaspoon salt
2 to 2-1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 vanilla bean
1/4 cup butter, melted

Steps:

  • Add yeast to warm water and stir to dissolve; allow to sit until yeast has bubbled, 5-7 minutes. Add yeast mixture to warm coconut milk. In a large bowl, combine coconut, sugar, salt, yeast mixture and 1 cup flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough (dough will be sticky). Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough. Turn onto a lightly floured surface; divide into 8 portions. Roll each into a 12-in. rope. Curl ends in opposite directions to form a figure 8. Tuck each end under where it meets center of roll and pinch lightly to seal. Place 2 in. apart on a parchment-lined baking sheet. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 30 minutes., Preheat oven to 375°. Bake until light brown, 10-12 minutes. Meanwhile, place sugar, cinnamon and ginger in a shallow bowl. Split vanilla bean lengthwise. Using the tip of a sharp knife, scrape seeds from the center; stir into sugar mixture. Brush warm pastries with melted butter; roll in sugar mixture to coat.

1 (46 ounce) can apple juice, chilled
2 quarts carbonated lemon-lime beverage, chilled
1 pint lemon sherbet or 1 pint lime sherbet

  • In large punch bowl, stir together juices and carbonated beverage.
  • Spoon sherbet into bowl.
  • Serve immediately.

PERSIAN FRUIT PUNCH



Persian Fruit Punch image

I came home with two sweet lemons from the Persian market today. Sweet lemons are also known as sweet limes and they are generally found in ethnic grocery stores. I was, believe it or not, actually surprised when I cut the lemon open and it was not the least bit tart, I smells like a lemon, but it is not acididic - at all - no pucker whatsoever! They are a cool, lemony yellow light color, the skin is very smooth and thin and they are rounder than Eureka (all-purpose) lemons. I had to use it for something, so I added some juice from other citrus I had on hand, a little sugar and water and it was quite tasty and refreshing. It's like fruit punch but not too sweet -- and the color is very pretty. It has a gentle fruit flavor, and you can make it stronger by adding more juice or less water, or the optional double strength herb tea. I prefer a lighter taste and I garnish it with some pineapple sage. The kids thought it tasted like light orange juice - but they are the Hawaiian Punch types. The adults thought it was refreshing and preferred it to the sweeter drinks on the table. Another nice thing is that the pretty color is natural. I have no idea what my Persian neighbors actually do with sweet lemons, or if there is such a thing as Persian Fruit Punch, but it sounds nice, doesn't it?

3/4 cup sweet lemon juice, also known as sweet limes (4 sweet lemons)
1/2 cup blood orange juice (2 - 3 blood oranges)
1 lime, juice of
1/4 cup sugar (to taste)
4 cups water
2 herbal fruit tea bags, steeped in
1 cup boiling water, and cooled (optional)

Steps:

  • Squeeze the fruit juice into a pitcher, add sugar and water and stir.
  • Add optional concentrated tea.
  • Serve over ice.

4 tablespoons lime juice
1 teaspoon gingerroot, finely grated
1 1/4 cups orange juice
1 1/4 cups pineapple juice
1 1/4 cups rum
crushed ice
orange slice
lime slice
pineapple slice

Steps:

  • Peel and pit the mango and chop the flesh.
  • Place in food processor or blender with the lime juice, ginger and sugar and process until smooth.
  • Add the orange and pineapple juices then add the rum and process again until blended.
  • Divide the crushed ice between glasses and pour the punch over the ice.
  • Add the lime and orange slices and arrange the pineapple slices on the rim of each glass.

This is a sweet and refreshing punch. My kids love it. Recipe by Angela Shelf Medearis. Note: We prefer no pulp, so I used Crystal Light lemonade and no pulp orange juice. I found the guava juice in cans in the ethnic aisle at the grocery store and the pineapple and papaya juices in the juice aisle.
