I found this recipe on Y! Answers last week and finally tried it tonight. It did not disappoint. I used burrito size tortillas. I thought maybe that Taco Time's mixture is a little wetter, but the taste is spot-on! I used about 1/4 of a large onion and used a chopper. *Update - added some water as it was warming and it definitely helped. I didn't measure, but it was at least 4 T. Just add a little at a time.

1 tablespoon minced onion
1 1/2 teaspoons instant beef bouillon
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon minced garlic (1 clove)
1/2 teaspoon ground cumin

Steps:

  • Add all ingredients in a small dish and add to one pound of cooked lean ground beef (92/8 is great). Put some mixture on a warm tortilla, add shredded colby/jack cheese, chopped tomato, shredded iceberg lettuce and sour cream.

2 tablespoons chili powder
2 tablespoons cumin
1 teaspoon ground black pepper
1/2 teaspoon salt
3 tablespoons canola oil
1 medium onion
1 tomatoes
1 green bell pepper
3 garlic cloves
1 (12 ounce) can vegetable stock (Swanson's is best)
1 (12 ounce) package Morningstar Farms Meal Starters Grillers recipe crumbles

Steps:

  • Heat oil in a pan.
  • Add onions and peppers and cook until tender.
  • Add Minced Garlic and cook until fragrant.
  • Add Morning start crumbles.
  • Cook until thawed.
  • Add 1/2 of the tomato diced.
  • Add Vegetable Stock and Spices.
  • Bring to a boil then reduce heat.
  • Simmer till most of the liquid has been lost.
  • Let the spices get acquainted for 15 minutes.
  • Top with the sharpest cheddar you can get, sour cream, and the rest of the diced tomatoes.

i was looking for a way to make crispy bean burritos just like taco time does and ran across this recipe on a blog. i added some minced onions for more zip and i like to make my own whole wheat four tortillas.

1/2 cup oil
5 flour tortillas
1 cup refried beans
1/4 cup cheese
2 tablespoons onions, minced (optional)

Steps:

  • Pre-heat oven to 400 degrees.
  • Heat oil in a frying pan.
  • Put 2-3 T. of beans on the end of a tortilla.
  • Sprinkle with a little cheese and onions (if using).
  • Roll up starting at the end with filling.
  • Fry in oil for 15 seconds per side.
  • Place on baking sheet
  • Repeat until all burritos are rolled up on pan.
  • Bake for 5-7 minute.
  • Burritos can be put in a freezer bag before baking and frozen for future use.

For calorie counters use catalina light dressing instead of western, also use baked Doritos instead of regular, and you can also cut a few more calories by using low fat cheese, this dish is a winner everytime .

1 head iceberg lettuce, shredded
1 (12 1/2 ounce) bag Doritos
1 (16 ounce) bottle western salad dressing
1 (8 ounce) bag shredded mild cheddar cheese
1 (4 ounce) can sliced black olives
1 bunch green onion, chopped
1 lb ground turkey
1 large tomatoes, chopped
1 ounce taco seasoning mix

Steps:

  • first brown your turkey meat and after you drain it add taco mix and half a cup of water, mix and set aside to cool.
  • next in a large bowl add shredded lettuce, shredded cheese, chopped tomato, chopped green onoin, and olives, mix well.
  • when your meat is cooled add it to the mixture and just before you are ready to eat, smash up bag of Doritos and add to mix, also add your western dressing and serve.
  • if you are making ahead of time to take with you, keeping the dressing and doritos out of mix until you are ready to eat will make it fresh and crunchy not soggy, good luck and enjoy !
