heavy-duty aluminum foil
1 pound lean ground beef
½ cup plain bread crumbs
¼ cup milk
2 tablespoons taco seasoning mix
2 baking potatoes, peeled and diced
1 cup salsa
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Cut four 12x18-inch sheets of aluminum foil.
  • Mix ground beef, bread crumbs, milk, and taco seasoning mix together in a medium bowl until well blended. Shape into four 4-inch patties. Mix potatoes and salsa in another medium bowl.
  • Place 1 patty onto each piece of foil and top with 1/4 of the potato mixture and 1/4 of the Cheddar cheese. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • Place packets, seam-side up, on the preheated grill. Cover the grill and cook, rearranging the packets several times, until patties are cooked through and potatoes are tender, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

1/2 cup Progresso™ plain bread crumbs
2 tablespoons Old El Paso™ taco seasoning mix (from 1 oz package)
1/4 cup milk
3 cups frozen diced hash-brown potatoes (from 32-oz bag)
1 cup salsa con queso dip (from 15-oz jar)

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix ground beef, bread crumbs, taco seasoning mix and milk until well blended. Shape mixture into 4 (4-inch) patties. In another medium bowl, mix frozen potatoes and dip.
  • Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. Place 1 patty on each; top with 1/4 of potato mixture. Wrap each pack securely using double-fold seals, allowing room for heat expansion.
  • When grill is heated, place packs, seam side up, on grill over medium heat; cover grill. Cook 15 to 25 minutes, rearranging packs several times, until patties are thoroughly cooked.
  • To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender and burgers are cooked through (at least 165°F in center).

A new twist on an old favorite! Feeds a family of 6-8, and is great on a cold winter night. I came up with this recipe when I was trying to get my husband to eat more family-style casserole dishes (he's not a fan of casseroles). I served it right out of the oven, bubbling hot, with a slice of crusty french bread and a small dinner salad. He ate three helpings and told me that I should definitely put "that one" in my recipe box.

1 medium onion, chopped
1 (1 1/4 ounce) package taco seasoning
3/4 cup water
1 (14 1/2 ounce) can sweet corn
2 (10 1/2 ounce) cans condensed tomato soup
1 cup cheddar cheese (grated)
4 cups macaroni noodles (cooked al dente)
1/4 cup green pepper (chopped)
1/4 cup black olives (chopped or sliced)

Steps:

  • Cook macaroni noodles according to package directions for al dente, drain and rinse with cold water. Set aside. In a large skillet, brown ground beef with onion, drain. Return meat mixture to skillet, stir dry taco seasoning mix into meat mixture along with water. Cook over medium heat, stirring occassionally, for 10 minutes. Add the corn, tomato soup, cheddar cheese and cooked macaroni noodles to the meat mixture and stir until well blended. Turn mixture into a greased, large oblong casserole dish. Cover, and bake at 350 degrees for 45 minutes. Remove cover and bake an additional 15 minutes or until bubbly. You may add extra grated cheese to top the casserole, if you wish, during the last 15 minutes of baking time.

1 teaspoon garlic powder
1 teaspoon kosher salt

4 slices Monterey Jack cheese
4 potato buns
Blue corn tortilla chips, for serving

Steps:

  • Add the turkey, onion, chili powder, garlic power, salt, coriander, cumin and pepper to a bowl and stir until combined. Shape the mixture into 4 burgers and refrigerate for 30 minutes.
  • Heat the oil in a cast-iron skillet over medium-high heat. Add the burgers and cook for about 5 minutes; flip and cook until the internal temperature registers 165 degrees F, another 4 to 5 minutes, topping the burgers with the cheese in the last 2 minutes.

1 bag tortilla chips
1 pkg (1 - 2 lb.) ground turkey burger
1 pkg Taco Bell Taco Seasoning
1 can Taco Bell Fat-Free Refried Beans
1 can fiesta nacho cheese soup or pepperjack cheese soup
2 cups shredded mozzarella cheese
1 cup shredded pepperjack cheese
Sour cream and salsa (optional for garnish)

Steps:

  • Line the bottom of a large baking dish with a layer of tortilla chips.
  • Brown ground turkey until done, drain grease. Add taco seasoning following directions on package. Add can of refried beans to turkey burger. Add can of cheese soup to turkey and bean mixture. Mix until well blended then pour over the layer of chips. Top with shredded cheese. Cover with another layer of chips.
  • Bake at 400 degrees F for 12 - 15 minutes or until chips are slightly browned and cheese is melted. Serve topped with sour cream and salsa.

From about the mid-1960's through the mid-1970's Taco Bell made a Sloppy Joe like sandwich called the "Bell-Burger". It used the same flavored ground beef mixture as a crunchy taco, along with a sauce similar to Mild Border Sauce and shredded mild cheddar cheese. This was served on a hamburger bun that had been steamed slightly to soften and warm it. This is not the "Bell Beefer", which came a few years later from the mid-1970's through the mid -1990's. The regular "Bell Beefer" had seasoned loose meat, sauce, onions and lettuce on a bun.

6 - hamburger buns (steamed slightly to soften and warm them)
3/4 cup(s) shredded cheddar cheese
- diced onions

Steps:

  • BEEF FILLING: Combine in a mixing bowl raw ground beef, flour, chili powder, salt, minced onion flakes, paprika, onion powder and garlic powder.
  • Mix thoroughly like you would mix a meatloaf.
  • In a skillet on the stove top, add 1/2 cup of cold water and the seasoned ground meat mixture. Mix well.
  • Cook over medium heat, mash and stir ground meat as it cooks, breaking it up.
  • Cook until meat is no longer pink and slightly browned.
  • The meat mixture should be loose, without any large pieces. Drain off any grease or liquid. Steam the burger buns slightly to warm and soften them.
  • FOR THE BORDER SAUCE: Add cold water to a saucepan. Stir in the cornstarch until it is dissolved.
  • Stir in the tomato paste, vinegar, chili powder, salt and cayenne pepper. Stir until well mixed and smooth.
  • Bring to a boil, reduce heat and simmer for 5-minutes to thicken.
  • Allow sauce to cool then store in a covered container in the refrigerator. Makes about 1 1/2 cups of Mild Border Sauce.
  • TO BUILD THE BELL BURGER: Spread a tablespoon of Mild Border Sauce on the bottom bun.
  • Place several tablespoons of the meat mixture on the bottom bun like making a sloppy joe.
  • Add 2 tablespoons of Taco Bell Mild Border Sauce evenly over the meat on bun.
  • Sprinkle 1 or 2 Tbsp of shredded mild cheddar cheese over meat mixture on bun. Add the top bun.
  • Repeat 5 more times. Serve warm.
  • To make a "Bell Beefer" add loose meat, diced onions, shredded lettuce and mild border sauce.
  • To make a "Bell Beefer Supreme" add loose meat, diced onions, shredded lettuce, diced tomatoes, grated cheese and mild border sauce.

2 tablespoon(s) bell pepper ( chopped )
1 package(s) taco seasoning mix
1 can(s) bean with bacon soup
1 medium tomato
1 package(s) cheese, shredded
1 large egg

Steps:

  • Mix ground beef, onion, bell pepper, egg, and taco seasoning together. Pat out 4 patties and cook to no longer pink. Drain the grease off of patties and return patties to skillet.
  • In a bowl mix bean & bacon soup and enough water to make it creamy. Pour over patties. Dice tomatoes and spread over top. Sprinkle cheese over top. ( I use 2 cups of cheese, We like it cheesey )
  • Turn the oven on to 325 degree's. Place the skillet in the oven and cook about 10 to 15 minutes or until cheese is melted.
