1 pkg wonton wrappers
1 lb ground beef or turkey
1-8 oz Frontera Taco Skillet Sauce (package)
GARNISHES:
diced tomatoes
Mexican shredded cheese
sour cream
shredded lettuce
diced avocado

Steps:

  • 1. Prepare your skillet and season then brown your ground beef/turkey until no longer pink. Drain, if necessary.
  • 2. Add in your Frontera Taco Skillet sauce or whatever taco seasoning sauce you are using. Once done, cover and put to the side.
  • 3. TO PREPARE WONTON WRAPPERS: You will need a mini muffin tray, non-stick spray, and wonton wrappers. Preheat oven to 350F.
  • 4. Take one wrapper and spray with non-stick spray then fit the wrapper into the mini muffin tin.
  • 5. When tray is filled, place into the oven and watch carefully until the wrappers turn a golden brown. Do not get distracted as they turn very quickly.
  • 6. When wrappers are golden brown, remove from oven and wait for them to cool.
  • 7. Then remove the wrappers and place on a rack. Proceed to stuff them as you would a regular taco.

4 ounces cream cheese, softened
2 tablespoons lime juice, divided
2 tablespoons minced fresh cilantro
1 teaspoon honey

12 frozen breaded fish sticks
1 tablespoon taco seasoning
36 tortilla chip scoops
1-1/2 cups coleslaw mix
3/4 cup cubed avocado
3/4 cup chopped seeded tomato
Lime wedges and additional minced fresh cilantro

Steps:

  • In a blender, combine the salsa, cream cheese, 1 tablespoon lime juice, cilantro, honey and salt. Cover and process until smooth; set aside., Place fish sticks on a baking sheet. Bake at 425° for 10 minutes. Sprinkle with half of the taco seasoning. Turn fish sticks over; sprinkle with remaining taco seasoning. Bake 7-9 minutes longer or until crisp., Meanwhile, place tortilla chips on a serving platter. In a small bowl, combine the coleslaw mix, avocado, tomato, remaining lime juice and 1/2 cup salsa mixture. Spoon into chips., Cut each fish stick into three pieces. Place a fish stick piece in each chip; top each with about 1/2 teaspoon salsa mixture. Garnish with lime wedges and additional cilantro.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
35 each round blue corn tortilla chips
1 cup shredded Monterey Jack cheese, divided
1 cup red salsa
½ cup sour cream, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with foil and spray with nonstick spray.
  • Cook and stir ground beef in a skillet over medium heat until browned and crumbly, about 8 minutes. Drain excess oil from the skillet. Stir in taco seasoning until well mixed. Cook for an additional 2 minutes, then remove beef mixture to a paper towel-lined plate to soak up any excess moisture.
  • Spread tortilla chips in a single layer onto the prepared baking sheet, making sure they don't overlap (you may need to use two baking sheets.) Top each chip with a small amount of cheese, a spoonful of the beef mixture, some salsa, followed by a little sour cream. Finally, sprinkle remaining cheese over the top of each chip, being careful to keep the cheese on the chip so when it melts it doesn't stick to the baking sheet.
  • Bake in the pre-heated oven for 5 minutes, or until the cheese has melted.
  • Pipe or dollop a small amount of the remaining sour cream on the very top of each taco bite. Serve on a platter.

Who doesn't like cream cheese? :) Before this recipe, I hadn't cooked a lot with wonton wrappers, but they make this appetizer crispy and chewy too!

1 (8 ounce) package cream cheese (softened)
1 cup sour cream
2 pressed garlic cloves
1 taco seasoning mix

Steps:

  • Preheat oven to 350.
  • Spray a mini-muffin pan lightly with vegetable oil.
  • Seperate wonton wrappers and place one in each cup of the pan. Using the pampered chef mini tart shaper, press each wonton into the cup, keeping the cup area open. (If you don't have the tart shaper, just press down with your fingers, being careful not to tear the wonton).
  • Combine all filling ingredients into a mixing bowl, and blend until smooth.
  • Fill the wonton cups with a teaspoon each of the filling mixture.

1 clove garlic, minced
1 tablespoon lemon juice (1/2 lemon)
1/2 teaspoon anchovy paste or 1 anchovy, minced
1/4 teaspoon salt
2 tablespoons plus 1 cup freshly grated Parmesan
5 cups finely shredded romaine lettuce (2 romaine hearts)
Nonstick cooking spray, for skillet
36 tortilla chip scoops

Steps:

  • In a large bowl, whisk together the mayonnaise, Worcestershire, garlic, lemon juice, anchovy paste, salt and 2 tablespoons Parmesan. Add the lettuce to the dressing; toss well to coat.
  • Heat a medium skillet over medium heat and spray with nonstick spray. Sprinkle 1/4 cup of the remaining Parmesan evenly over the bottom of the pan. Cook until the cheese is bubbly and beginning to brown, 3 to 4 minutes. Remove from the heat, let cool for 1 minute, and then invert the cheese onto a parchment-lined baking sheet with the help of an offset spatula. Set aside to cool completely. Repeat with the remaining Parmesan. When all of the frico is fully cooled, break into bite-size pieces.

1 cup canned kidney beans, drained
1 cup tomato sauce

1 tablespoon sliced green onions, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Use a 3-inch round cookie cutter to cut 4 rounds out of each tortilla. Carefully press the rounds into each cup of a 24-cup mini muffin tin.
  • Bake the tortilla rounds in the preheated oven until light golden and crisp, 12 to 15 minutes.

  • Combine first 3 ingredients in a large bowl; let stand 5 minutes.
  • Add biscuit mix, stirring just until dry ingredients are moistened.

Steps:

  • Heat oven to 325ºF.
  • Line 8-inch square pan with foil, with ends of foil extending over sides. Combine cracker crumbs and butter; press onto bottom of prepared pan. Bake 8 min.

2 tablespoons taco seasoning

16 miniature cup-shaped corn tortilla chips

1 cup thinly sliced romaine lettuce
1 small plum tomato, diced
Hot sauce, for serving

Steps:

  • Position an oven rack in the top third of the oven and preheat to 425 degrees F. Set a wire rack over a baking sheet and spray generously with cooking spray.

  • For Shells:.

How to make Tequila Lime Shrimp Taco Bites

24 wonton wrappers
1 pound peeled and deveined large shrimp (21-25 count)
2 tablespoons tequila
1/2 teaspoon lime zest
1 tablespoon lime juice
1 tablespoon chopped cilantro
2 teaspoons extra virgin olive oil
1 teaspoon hot sauce
1/4 teaspoon ground cumin, salt and pepper
8 ounce container prepared guacamole, I used this

Steps:

  • Preheat oven to 400 degrees and spray a 24 cup mini muffin tin with cooking spray.
  • Nestle one wonton wrapper down into each of the 24 muffin cups.
  • Bake the cups for about 6 minutes or until golden brown.
  • In a medium sized bowl whisk together the tequila, lime zest, lime juice, olive oil, cilantro, hot sauce, cumin, salt and pepper.
  • Heat a large cast iron or non-stick skillet over high heat.
  • Add the shrimp to the marinade and toss until they are all coated.
  • Spray the skillet with cooking spray then dump in the shrimp and most of the marinade.
  • Cook the shrimp for approximately one minute then flip them oven and cook the other side for another minute or so, just until they are pink and opaque.
  • Remove the shrimp from the skillet onto a plate.
  • Spoon one heaping teaspoon of guacamole into each wonton cup.
  • Place 1-2 shrimp on top of the guacamole.
  • Garnish with fresh chopped cilantro if desired.
  • Notes
  • These are best assembled right before serving to prevent the guacamole from browning and the wonton cups from becoming soft.
  • The shrimp and wonton cups can both be made a day in advance.

1/2 package of Taco Seasoning
2/3 C water
1 package of shredded Mexican cheese
1 package of wonton wrappers
Toppings of your choice

Steps:

  • 1. Cook your chicken. Once cooked, shred it and add 2/3 cup water and the package of taco seasoning. Simmer for about 3-4 minutes until the water is gone. 2. Preheat your oven to 350 degrees. 3. Grab a cupcake pan, and place wonton wrappers to make liners. Place your seasoned shredded chicken into the wonton wrappers. Sprinkle your cheese on top of the shredded chicken. 4. Place in the oven and bake for 7-8 minutes until the cheese is melted. Add your favorite toppings.
