TACO BISCUIT BAKE

1 pound lean ground beef (90% lean)
2/3 cup water
1 envelope taco seasoning
2 tubes (12 ounces each) refrigerated buttermilk biscuits
1 can (15 ounces) chili con carne
1 cup shredded reduced-fat cheddar cheese
Salsa and sour cream, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes or until thickened., Meanwhile, quarter the biscuits; place in a greased 13x9-in. baking dish. Layer with beef mixture, chili and cheese. , Bake, uncovered, at 375° for 25-30 minutes or until cheese is melted and biscuits are golden brown. Serve with salsa and sour cream if desired.

After looking at tons of recipes, I decided to go with what I had on hand. It turned out better than I imagined.

1 pkg pillsbury grand biscuits 8 count
1 lb ground beef
1 pkg taco seasoning mix
1/3 c water
1/2 medium onion, chopped
1 c frozen hash browns, thawed (shredded or diced)
1 Tbsp olive oil
1/2 can(s) black olives sliced
1 large tomato, chopped
1 1/2 to 2 c shredded mexican cheese
serve with shredded lettuce, guacamole, salsa and sour cream

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a non-stick 8" x 8" deep dish pan add biscuits to make a crust by pressing and spreading them across the bottom and up the sides of the pan. (Pinch and overlap.) In the picture, I used a glass pan and the biscuits stuck to the pan slightly.
  • 3. Cook beef and onion in a medium fry pan until done. Drain, add Taco Seasoning Mix and water. Cook for 7 - 9 minutes or until mixture is not watery. Add mixture on top of crust. In same pan, add olive oil and potatoes and cook until heated through and starting to brown. Add on top of meat mixture.
  • 4. Next add sliced olives and then the diced tomatoes. If you like jalapeno peppers, you could add them here (chopped fine). Top with as much shredded Mexican cheese as you like. We like a lot.
  • 5. Bake for 25 - 30 minutes or until crust is done and golden brown.
  • 6. Serve with Salsa, Guacamole, Shredded Lettuce and Sour Cream.

1 pound ground beef
2 tablespoons chopped onion
1 can (15 ounces) tomato sauce
1 teaspoon white vinegar
1 teaspoon Worcestershire sauce
2 to 3 drops hot pepper sauce
1 teaspoon sugar
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon celery salt
1/4 teaspoon onion salt
1/8 teaspoon ground allspice
1/8 teaspoon ground cinnamon
Dash pepper
1/2 cup shredded cheddar cheese
8 taco shells
Shredded lettuce
Chopped tomatoes
SWEET-AND-SOUR DRESSING:
1 cup Miracle Whip
1/3 cup sugar
2 tablespoons white vinegar
1/4 teaspoon salt
1/2 teaspoon hot pepper sauce

Steps:

  • In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, breaking it into crumbles; drain. Add the next 12 ingredients to meat mixture. Simmer, uncovered, for 10-15 minutes or until liquid is almost completely reduced, stirring occasionally. Cool slightly; stir in cheese. , Place taco shells open end up in a baking pan; place a scoop of meat mixture into each shell. Bake at 400° for 10-15 minutes until meat is hot and cheese is melted. , Sprinkle lettuce and tomatoes over tacos. In a small bowl, combine dressing ingredients; drizzle over tacos.

1/4 cup commercial taco sauce
1/4 cup milk
1/2 teaspoon dried onion flakes
2 cups biscuit mix
2 teaspoons butter or 2 teaspoons margarine, melted
2 tablespoons grated parmesan cheese

Steps:

  • Combine first 3 ingredients in a large bowl; let stand 5 minutes.
  • Add biscuit mix, stirring just until dry ingredients are moistened.
  • Turn dough out onto a lightly floured surface, and knead 4 or 5 times.
  • Roll dough to 1/2-inch thickness; cut with a 1 1/2-inch biscuit cutter (or you can use a jar lid).
  • Place on a lightly greased baking sheet.
  • Brush tops with butter, and sprinkle with Parmesan cheese.
  • Bake at 450* for 8 to 10 minutes or until lightly browned.
  • Serve immediately.
  • Yield: about 1 1/2 dozen Note: Dough may be chilled 2 hours before baking, if desired.

2 lbs ground beef
2 envelopes taco seasoning
water
3/4 cup milk
4 eggs
1 1/4 cups biscuit mix (Bisquick)
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup sour cream
2 1/2 cups shredded lettuce
1 large tomatoes, chopped
1 small onion, chopped fine
2 cups shredded sharp cheddar cheese or 2 cups Mexican blend cheese
taco sauce

Steps:

  • Preheat oven to 400 degrees.
  • Brown ground beef in frying pan over medium heat and drain.
  • Add taco seasoning mix and water according to package directions and simmer for 5 to 10 minutes.
  • Place meat into a 9 x 13 baking dish.
  • In a large mixing bowl, beat eggs and milk.
  • Add biscuit mix, salt and pepper and mix until well combined.
  • Pour over ground beef.
  • Bake for 25 minutes or until golden brown.
  • Allow to cool for about 15 minutes.
  • Spread top with sour cream and sprinkle with lettuce, tomato, onions and cheese.
  • Drizzle with taco sauce and serve immediately.

1 ½ cups Old El Paso® Thick 'n Chunky Salsa
1 (16.3 ounce) can Pillsbury® Grands!® refrigerated biscuits
½ cup shredded Monterey Jack cheese or Mexican cheese blend

Steps:

  • In 10-inch nonstick skillet, mix cooked beef and 1/2 cup of the salsa. Cook over medium-high heat, stirring occasionally, until hot.
  • Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.
  • Bake at 375 degrees F 9 to 14 minutes or until golden brown. Serve with remaining salsa.
