TACO BELL CHILITO (CHILI CHEESE BURRITO) RECIPE!!!
For those of you who live in a place where Taco Bell does not sell their classic Chilito (and judging from Net, this includes alot of places), you can simply make them at home! This recipe is something I developed through trial and error. It is VERY close to the taste of the original. It also has that perfect "chilito" texture. Enjoy!! Steps:
- Brown the hamburger and crumble into very small pieces; drain, but reserve some of the fat.
- Place hamburger back onto heat and add flour and mix until it is thick.
- Add the beans and heat through.
- Add the hot or mild sauce 1 packet at a time until you achieve that 'chilito' taste (usually 8 packets will do).
- Add the cheese, enough to make a big gooey mess, under medium heat.
- Taste, and you might need to add a little more sauce.
- Now here is the trick for that 'chilito' texture:.
- Take a tortilla and run warm water all over it to soften. The pop it in the microwave for 20 seconds to "steam" it.
- Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.

REAL DEAL TACO BELL CHILI CHEESE BURRITO
I'm posting this recipe in response to seeing many inaccurate copycat recipes online. This is an extremely cheap and easy item to make but every other recipe is too complicated, uses too many ingredients, and adds things which were never in Taco Bell's version. They may be good additions but they aren't Taco Bell copycats!

Steps:
- Warm tortillas on a griddle. Keep warm.
- Heat a few spoonfuls of chili in a small pot.
- Add an equal or greater amount of cheese. More cheese than chili tastes most like Taco Bell's version.
- Melt. Don't allow the cheese to stick and burn.
- Wrap about a large spoonful or two of the melted chili cheese in a tortilla.
- Makes a great chip dip. May be easily expanded to make enough for a group.
- Optional (good) additions which make this unlike a Taco Bell version: beans, extra beef, onions, Taco sauce, other seasonings, Frito chips.

- First brown the beef in a pan, finely breaking up the meat with a fork. Combine the tomato paste with the water in a saucepan over medium heat. Stir until smooth. Add the cayenne pepper; chili powder, salt cornstarch, vinegar, and dried onion and stir. Chop the jalapeno slices very fine. You can use a food processor, but don't puree. The best kind of jalapenos to use are those bottled for nachos or pizza. Add them to the mixture. Heat the mixture to boiling. Continue to stir about 3 minutes and remove from heat. Once the beef is cooked drain all of the fat out. Add half of the refried beans to the beef. Slowly add 2 1/2 cups of the tomato sauce mixture. Add half of the cheese, and cook over low heat for 10 minutes, stirring constantly. Let simmer for 30 minutes. Spoon 3/4 cup of the chili into each tortilla, add cheese and tomato sauce mixture (as desired) and wrap up the tortilla.

- Warm a skillet on medium heat. Cook the ground beef until no longer pink. Drain the excess grease into a can. Sprinkle in the taco seasoning. Add the cans of refried beans and tomato paste. Stir to combine. Let the chili-cheese mixture get warm before making the burrito. To make the burrito, spoon on some of the chili cheese mixture and sprinkle the same amount of cheese into a burrito shell. Wrap up the burrito. To press the burrito, heat up a separate skillet. Add the bottom of the burrito to it and let it sit for 1-3 minutes, or until the bottom of the burrito is toasty. Flip and toast the other side, pressing it down with a spatula. Serve with your favorite hot sauce, or if you have it, leftover packets of Taco Bell sauces!
