Time 30m

Number Of Ingredients 9

1 medium head cauliflower
1 large bunch Italian parsley (leaves and tender stems only, finely chopped)
10 large sprigs fresh mint (leaves only, finely chopped)
1 bunch scallions (white and light green part only, finely chopped)
2 cloves garlic (minced)
1 jar (6.5-ounce) marinated artichoke hearts (drained and coarsely chopped)
2-3 tablespoons extra-virgin olive oil
1/4 cup lemon juice (or more to taste)
Salt and freshly ground black pepper (to taste)

Steps:

  • Remove outer leaves from cauliflower and cut head into quarters. Grate on a large-holed box grater. Transfer any large pieces that fell or pieces you couldn't grate to a cutting board. Coarsely chop the odds and ends manually.
  • Place all the grated cauliflower in a large bowl.
  • Add the chopped parsley, mint, scallions, garlic and artichoke hearts.
  • Dress with olive oil and lemon juice.
  • Season to taste with salt and freshly ground black pepper.

QUINOA TABBOULEH WITH FETA

Quinoa Tabbouleh with Feta image

This quinoa tabbouleh is one of my go-to recipes. Quinoa, a grain that originated in South America, is considered a superfood because it contains more protein than most grains. It has a nutty flavor that tastes wonderful with the cucumbers, tomatoes, scallions, feta and mint, and it's a great gluten-free alternative to traditional bulgur wheat. Best of all, you can make this salad ahead; if it sits at room temperature for a few hours, the lemon vinaigrette really has time to soak into the quinoa and vegetables, so the salad is even more delicious!

Yield 8 servings

Number Of Ingredients 10

1 cup quinoa
Kosher salt and freshly ground black pepper
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
1 cup thinly sliced scallions, white and green parts (5 scallions)
1 cup chopped fresh mint leaves (2 bunches)
1 cup chopped fresh flat-leaf parsley
1 hothouse cucumber, unpeeled, seeded and medium-diced
2 cups cherry tomatoes, halved through the stem
2 cups medium-diced feta (8 ounces)

Steps:

  • Pour 2 cups of water into a medium saucepan and bring to a boil. Add the quinoa and 1 teaspoon of salt, lower the heat and simmer, covered, for 15 minutes, until the grains are tender and open (they'll have little curly tails). Drain, place in a bowl and immediately add the lemon juice, olive oil and 1 to 1 1/2 teaspoons of salt.*
  • In a large bowl, combine the scallions, mint, parsley, cucumber, tomatoes, 1 to 2 teaspoons of salt* and 1 teaspoon of pepper. Add the quinoa and mix well. Carefully fold in the feta and taste for seasonings. Serve at room temperature or refrigerate and serve cold.
  • * Ina uses Diamond Crystal Kosher Salt, which is coarser than other brands; if you are using a finer-grain kosher salt such as Morton, use the smaller amount.

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 20

4 large artichokes
1/2 teaspoon cumin seed
3 tablespoons extra virgin olive oil
2 tablespoons sherry wine vinegar
2 teaspoons finely chopped oregano
salt
fresh ground pepper
1 cup boiling water
1 cup coarse bulgur (6 ounces)
3 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
2 scallions, finely chopped
1 bunch fresh curly-leaf parsley, coarsely chopped (4 ounces)
1 plum tomato, finely diced
1 tablespoon chopped mint
salt & freshly ground black pepper
10 cherry tomatoes, halved
2 cups packed baby spinach leaves (3 ounces)
1/4 cup crumbled feta cheese (2 ounces)
2 tablespoons toasted pine nuts

Steps:

  • MAKE THE MARINATED ARTICHOKES: Cut the stems off the artichokes. Place the stems and artichokes in a steamer basket set over 1 inch of simmering water. Cover and steam over moderate heat until the artichoke bottoms are tender when pierced with a knife, about 40 minutes. When cool enough to handle, pull the leaves off the artichokes and trim off any fibrous outer skin. Using a spoon, scrape out the hairy chokes. Quarter the artichoke bottoms. Peel the artichoke stems and cut them into 1/2-inch rounds.
  • In a small skillet, toast the cumin seeds over moderate heat until fragrant, about 40 seconds. Transfer to a spice grinder and let cool. Grind the cumin seeds to a powder and transfer to a large, shallow dish. Stir in the olive oil, vinegar and oregano and season with salt and pepper. Add the artichokes and coat well with the cumin marinade. Let stand at room temperature for 1 hour or refrigerate overnight.
  • MAKE THE TABBOULEH AND SPINACH: In a large heatproof bowl, pour the boiling water over the bulgur. Cover and let stand until the water is absorbed and the bulgur is tender, about 40 minutes. Fluff with a fork. Stir in the olive oil, lemon juice, scallions, parsley, plum tomato and mint; season with salt and pepper. Cover and refrigerate for 1 hour, or until chilled.
  • In a bowl, toss the cherry tomatoes with the spinach, feta and pine nuts. Spoon 2 tablespoons of the marinade from the artichokes over the salad and toss well; season with salt and pepper.
  • Spoon the tabbouleh onto plates and surround with the artichokes. Top with the spinach salad and serve.
