SZECHUAN CHICKEN WITH PASTA



Szechuan Chicken with Pasta image

All the delicious Szechuan flavors combined into an easy, one-dish meal. This version combines it with angelhair pasta, but you could choose an Asian noodle of your liking. Based on a Paula Deen recipe.

1 Tbsp dark sesame oil
1/4 c chili-garlic sauce, divided
4 boneless skinless chicken breast halves
1 lb angelhair pasta
1 1/2 lb broccoli crowns, cut into florets
1 red bell pepper, cut into 1/2 inch strips
1 yellow bell pepper, cut into 1/2 inch strips
12 green onions, chopped
2 clove garlic, minced
1/4 c soy sauce (i always use low-sodium)
1 1/2 tsp fresh ginger, minced

Steps:

  • 1. Heat oil and 2 T. of the chili-garlic sauce in a large skillet over medium heat.
  • 2. Add the chicken and cook for about 4 minutes per side, or until cooked through.
  • 3. Meanwhile, bring a pot of water to boil and cook your pasta according to package directions and drain.
  • 4. Remove chicken from the pan and cut into strips.
  • 5. Add the broccoli, bell peppers, green onions, garlic and the remaining chili-garlic sauce, soy sauce and ginger to the skillet. Cook the veggies, stirring, until they are crispy-tender.
  • 6. Add the chicken strips back to the skillet with the veggies and cook until heated through.
  • 7. Serve over cooked pasta and enjoy!

4 boneless skinless chicken breast halves, cut in thin strips
3 tablespoons light soy sauce
1/4 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
2 tablespoons sesame oil
1/2 lb vermicelli, cooked according to package directions
1/2 cup chopped green onion
1/2 cup finely grated carrot
1/2 cup seeded and grated cucumber
1 1/2 cups fresh bean sprouts, rinsed and drained
1 tablespoon sesame seeds (garnishment)
1/2 cup water
6 tablespoons light soy sauce
3 tablespoons peanut butter
2 tablespoons cider vinegar
2 teaspoons sugar
1/8 teaspoon crushed red pepper flakes

Steps:

  • In glass bowl, mix together soy sauce, sugar and red pepper flakes. Add chicken strips, turning to coat; cover and marinate in refrigerator 20 minutes.
  • In frypan, place sesame oil over high heat. Add chicken strips and stir-fry about 5 minutes or until chicken is lightly browned. Remove chicken from frypan and cool.
  • In large bowl, place vermicelli, chicken, green onions, carrots, cucumber and bean sprouts; toss gently to mix well.
  • Pour Dressing over mixture and stir until well coated. Refrigerate 30 minutes, arrange on platter and sprinkle with sesame seeds.
  • For the Dressing: In small bowl, whisk all dressing ingredients together.

Steps:

  • Poach and cool chicken breasts. Cut into bite-sized pieces and reserve. Cook noodles. Drain and toss into a large bowl with ½ cup soy sauce, then peanut oil. Cool to room temperature, occasionally stirring the noodles to coat thoroughly. Combine mayonnaise with mustard, sesame oil and the remaining ¼ cup soy sauce and chili oil to taste. Refrigerate until ready to use. Add chicken, green onions, carrots, sweet pepper, bamboo shoots, mini corn and chopped cilantro to noodles. Mix gently. Add mayonnaise mixture and blend well. Cover and refrigerate until ready to serve, preferable overnight. Just before serving add julienned snow peas, adding a little extra soy sauce and peanut oil or mayonnaise if noodles seem dry. Garnish with sesame seeds.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade. Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers. Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temperature. The remaining sauce may be added, as needed, to moisten the pasta.

3 whole (6 split) chicken breasts, bone-in, skin-on
Good olive oil
Kosher salt and freshly ground black pepper
1 bunch broccoli, cut into florets and stems discarded
6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon Asian hot chili oil
2 tablespoons dark toasted sesame oil
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
4 scallions, sliced diagonally (white and green parts)
1 yellow bell pepper, julienned
1 red bell pepper, julienned

Steps:

  • Preheat the oven to 350 degrees F. Place the chicken breasts on a sheet pan, skin side up. Rub the tops with olive oil and sprinkle liberally with salt and pepper. Roast for 35 minutes, until cooked through. Set aside until cool enough to handle. Remove the meat from the bones and discard the skin and bones. Shred the chicken in large bite-sized pieces and set aside.
  • Meanwhile, bring a large pot of salted water to a boil and blanch the broccoli florets for 2 minutes. Drain and immediately immerse in a bowl of ice water to stop the cooking and set the color. Drain and set aside.
  • Place the garlic, ginger, vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, 1/2 teaspoon black pepper and the cayenne pepper in a food processor fitted with a steel blade and puree until smooth. Set aside.
  • Add a splash of olive oil to a large pot of boiling salted water and cook the spaghetti according to the directions on the package. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with the sauce. Add the scallions, peppers, chicken and broccoli and toss well. Serve warm or at room temperature.

2 ribs celery
2 small fresh red or green chilies, minced, including seeds
1 tablespoon finely minced ginger
3 garlic cloves, peeled and finely minced
2 scallions, white part only, minced
2 tablespoons light soy sauce
2 tablespoons Chinese white rice vinegar
1 teaspoon sugar
1/4 teaspoon salt (optional)
1 teaspoon freshly ground white pepper
2 whole chicken breasts, poached, cooled and shredded
2 tablespoons sesame oil
2 tablespoons chopped fresh coriander (leaves and stems)

Steps:

  • Cut the celery thinly on the diagonal; stack and cut into matchstick shreds. In enough water to cover the celery, parboil it for 10 seconds; drain and run under cold water to stop cooking. Drain again and set aside.
  • Mix the chilies, ginger, garlic and scallions with soy sauce, vinegar, sugar, salt and white pepper in a bowl, and allow to sit for 5 to 10 minutes.
  • Toss with the chicken, sesame oil, celery and coriander. Allow to sit 5 minutes; toss again and serve.
