1/2 cup molasses
1 cup water
1/4 cup butter, softened
1/4 cup sugar
1 large egg white
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/2 cup chopped pecans
6 tablespoons brown sugar
3/4 cup hot water
2/3 cup butter, melted
Sweetened whipped cream, optional

Steps:

  • Mix molasses and 1 cup water. Cream softened butter and sugar until light and fluffy, 5-7 minutes; beat in egg white and vanilla. In another bowl, whisk together flour, baking soda, salt and spices; add to creamed mixture alternately with molasses mixture, beating well after each addition. Fold in pecans., Pour into a greased 3-qt. slow cooker. Sprinkle with brown sugar. Mix hot water and melted butter; pour over batter (do not stir). , Cook, covered, on high until a toothpick inserted in center comes out clean, 2-2-1/2 hours. Turn off slow cooker; let stand 15 minutes. If desired, serve with whipped cream.

2 tablespoons reduced-fat butter, softened
1/4 cup sugar
1 large egg, room temperature
1/2 cup molasses
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup hot water
9 tablespoons fat-free whipped topping

Steps:

  • In a small bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in egg. Beat in molasses. Combine the flour, baking soda, ginger, cinnamon and salt; add to butter mixture alternately with water, mixing well after each addition., Transfer to a 9-in. square baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares; garnish with whipped topping.

11/2 tsp baking powder
1/2 tsp cinnamon, ground
1/2 tsp ground ginger
1/4 tsp ground cloves

As you can see, I have two (2) names for this dessert. Natives call it Syrup Pudding. Other nationalities call it Molasses Cake. The flavor resembles a moist, ginger snap cookie. Once again the recipe was passed down from generation to generation. This is one recipe that is good anytime of year, but it is delicious in cold weather with coffee, hot tea, hot apple cider, or even a cold glass of milk. DELISH!!!

1/2 cup(s) butter or margarine
2 - eggs
1 cup(s) black molasses
1/2 cup(s) boiling water
2 cup(s) self-rising flour
1/2 cup(s) sugar
1 teaspoon(s) ground ginger

Steps:

  • Spray cake pan with pam.(8x8, 9x9, 9x12) Set pan aside until needed.
  • Mix together all dry ingredients. Set bowl aside.
  • Mix all wet ingredients together. Add dry ingredients slowly, mixing together slowly on 1st speed of mixer, after about a minute move up to medium speed for about another minute.
  • Pour batter into pan
  • Preheat oven to 325 or 350 degrees depending if the pan is coated with dark or light colored pan. Bake and check doness by inserting a wooden toothpick and it comes out clean.

AMISH SHOOFLY CAKE

Shoofly Cake is a moist molasses cake that is similar to shoofly pie. This is a well-known breakfast dessert among the Lancaster County Amish. It pairs perfectly with a cup of coffee.

2 scant c. brown sugar
2 sticks butter (or 1 c. shortening)
4 c. all-purpose flour
2 c. boiling water
2 1/2 tsp. baking soda
1 1/2 c. Golden Barrel unsulfured baking molasses (or any light-tasting molasses)
1 tsp. salt

Steps:

  • Preheat oven to 350°.
  • Mix brown sugar, flour, and butter with a pastry blender until you have fine crumbs.
  • Reserve two cups of the crumbs for the top.
  • Combine the boiling water and baking soda, then add the molasses and salt. Mix well.
  • Mix the molasses mixture with the remaining crumbs. And pour this into a greased 9x13" baking dish.
  • Starting at the edges, scatter the reserved 2 cups of crumbs over the top.
  • Bake for about 45 - 50 minutes. Cool and enjoy.
