Simple Parisian-Style Potato Salad image

A simple and fresher version of potato salad that's perfect for summer cookouts, picnics, or anytime you want a delicious side dish.

2 pounds baby Yukon Gold potatoes, unpeeled
salt to taste
1 bay leaf
¼ cup extra-virgin olive oil
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
salt and ground black pepper to taste
¼ cup finely chopped shallots
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • Place the potatoes in a large saucepan and cover by 1 inch with water. Season with salt. Add bay leaf and bring to a boil over medium-high heat. Reduce heat to medium and simmer until potatoes can be easily pierced with a knife, 12 to 15 minutes. Do not overcook.
  • Meanwhile, whisk olive oil, white wine vinegar, Dijon mustard, salt, and pepper in a small bowl together until emulsified.
  • Drain cooked potatoes in a colander and cool until just warm enough to handle. Cut the potatoes into 1/2-inch slices and transfer to a large bowl.
  • Drizzle vinaigrette over potatoes, gently tossing to coat. Add shallots and parsley and toss lightly to combine.
  • Set the potato salad aside for about 10 minutes, allowing the flavors to meld. Taste and adjust seasoning if needed. Serve warm or at room temperature.

I had this potato salad at a small Armenian deli in Glendale. I was impressed by how simple but beautiful and delicious it is. So, I decided to try to duplicate the salad at home. I hope you like my version. I call the dressing "Armenian Salsa" because it's a great topping for lots of other things.

2 lbs medium russet potatoes, scrubbed clean
armenian salsa (parsley sauce)
1 bunch parsley, preferably flat-leaf
3 tablespoons fresh lemon juice
6 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • Steam the potatoes for about 30 minutes.
  • Allow to cool, then.
  • peel off the skin.
  • Cut potatoes into a 1 inch uneven dice shape.
  • Chop the parsley and mix with the other salsa ingredients.
  • For a spicier salsa, substitute 1/2 of the parsley with watercress.
  • Mix the potatoes with the salsa.

From chabad.org with small changes. One of the biggest changes was reducing the amount of lemon juice from three quarters of a cup down to one quarter cup. You can add more lemon juice if desired. Go easy on the allspice, too. Start with a small amount.

6 medium potatoes (i used a mix of yukon gold and red fingerling)
2 medium carrots, chopped (i added these for color)
2 stalk(s) celery and leaves, thinly sliced and leaves minced (the celery was my addition)
DRESSING:
1/4 c extra virgin olive oil
2 large lemons, juice of (plus save some zest for garnish)
1/4-1/2 tsp ground allspice, to taste (i use whole allspice and grind in a pestle and mortar)
1 tsp ground cumin, to taste
1 tsp kosher salt
GARNISH:
2 hard-boiled eggs
few sprigs of fresh chives, for garnish (you can substitute italian parsley, cilantro or scallions if desired)

Steps:

  • 1. Boil the potatoes (and carrots if using) in large pot until tender, about 20 minutes.
  • 2. Dressing: As the potatoes boil, whisk together the dressing and set aside.
  • 3. Drain the potatoes and cool briefly. Once cool enough to handle dice the potatoes and place in medium mixing bowl. Add the celery and leaves.
  • 4. Pour the dressing over the cooled potatoes. Toss gently to combine the ingredients.
  • 5. Peel the eggs and cut into fourths. Arrange the hard boiled eggs around the edge of the bowl and garnish the top of the potato salad with lemon zest and fresh chives or other suitable fresh herb (Italian parsley or scallions.)
  • 6. Cover and refrigerate. You can serve the potato salad chilled or at room temperature.
