EASY SWISS STEAK
Swiss Steak is a perfect family dinner; it's easy to make and can be cooked either in the oven or in the slow cooker. This dish has delicious tender beef in a rich tomato gravy and is perfect served over rice, noodles or mashed potatoes!

Steps:
- Preheat oven to 350°F.
- Using a meat mallet, pound meat to ½″ thickness.
- Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
- Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Place onion & carrot in the bottom of the pot. Top with browned steaks.
- Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
- Serve over mashed potatoes.

- Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. Add water and Worcestershire sauce. , Cover and bake 2 to 2-1/2 hours or until meat is very tender. Remove to a serving platter and keep warm. , In a small bowl, combine flour, salt, pepper and broth until smooth; stir into pan juices. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Serve steak and gravy with noodles or mashed potatoes, if desired. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring and adding a little broth or water if necessary.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.

- Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.

- Cut round steak into 6 serving size pieces.
- On a cutting board, dredge pieces with flour, salt and pepper.
- Pound flour into the meat with a meat mallet.
- Turn pieces, dredge, and pound until they can't hold any more flour.
- (This can be a messy process, so be warned!).
- In a large non-stick skillet, heat oil and brown steak pieces on both sides.
- Place in a covered casserole.
- Add onions and garlic to the skillet.
- Saute until onions are limp (5 minutes).
- Place onions and garlic over steak pieces in casserole dish.
- Add enough beef broth to barely cover meat.
- The flour from the meat will thicken the broth as it bakes and will make its own gravy.
- Bake at 300F for 2 hours or until fork-tender.
- Serve over noodles or mashed potatoes.
SWISS STEAK WITH GRAVY
We are big meat and potatoe fans. Add gravy to it and we are in heaven. This is a very filling and warm recipe.

- 1. Tenderize round steak. Sprinkle seasoned salt on one side.
- 2. Sprinkle flour on both sides of round steak. Brown in oil on both sides. Remove beef to plate. Add onions and green peppers to pan and saute for 1 minute. Then add gravy, water, can of tomatoes, dash of salt and pepper. Bring to a boil.
- 3. Return meat to pan and cover. Cook on simmer or low boil for 2 hours until meat is tender. Last 10 min. add mixtures of 1 tsp of cornstarch and 2 tsp of water to thicken and make gravy.
- 4. Serve with mashed potatoes, rice or noodles.

This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. - 1. To prepare steaks: In small container combine flour, garlic powder, black pepper and season salt. Dredge cube steaks in flour mixture and place on raised baking rack in fridge for an hour or two.
- 2. In the meantime slice onion and peppers into julienne strips. Line bottom of casserole dish with 1/2 of onion strips set aside.
- 3. Remove cube steaks from fridge, heat large skillet with 1T canola oil and brown the steaks on both sides. Place steaks on bed of onions. Be careful not to burn.
- 4. When steaks are all removed from skillet add remaining onion, and peppers to the skillet. Add 1 T. canola oil and saute until tender.
- 5. Create the gravy: Sprinkle 2T all purpose flour onto vegetables and cook for 1 to 2 minutes to remove raw flour taste. Deglaze the pan by adding wine and liquid from stewed tomatoes, mix well and let cook for another minute, add garlic, worcestershire, then slowly add water to create a thickened gravy like sauce. You may have to add a bit more or you may not use all of the water.
- 6. Break up the tomatoes and place over the cube steaks then pour the gravy over the cube steaks and cover your casserole dish with foil. Bake @ 350 degrees for 1 1/2 hours. 2 hours makes tough cuts more tender.
