1 small onion, thinly sliced
1 garlic clove, thinly sliced
1 1/2 tablespoons olive oil
1 small tomato, cut into 1/4-inch dice
1 cup rinsed canned chick-peas
1/2 pound Swiss chard, stems discarded and leaves coarsely chopped
1/2 tablespoon fresh lemon juice

Steps:

  • Cook onion and garlic in oil in a large nonstick skillet over moderately low heat, stirring, until softened. Add tomato and chick-peas and cook, stirring, 5 minutes. Add Swiss chard and cook, covered, until wilted, about 2 minutes. Add lemon juice and season with salt and pepper.

4 tablespoons vegetable oil
6 ounces sirloin steak, thinly sliced
Kosher salt
1 tablespoon minced garlic
1 tablespoon minced ginger
4 scallions, thinly sliced on the bias
1 tablespoon hot chile sauce (such as Sriracha)
6 ounces sugar snap peas, ends trimmed
1 bunch Swiss chard
1 lime

Steps:

  • Heat a wok over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. Season steak with salt and add to wok. Cook, stirring, until beef is golden brown on both sides, about 2 minutes. Transfer to a medium bowl and set aside.
  • Add another tablespoon vegetable oil to the wok and swirl to coat. Add garlic, ginger, scallions, chile sauce, sugar snap peas, and 1 pound thinly sliced Swiss chard stems (remove and tear leaves into 2-inch pieces and reserve). Cook, stirring constantly, until snap peas are bright green and crisp, about 2 to 3 minutes. Transfer to bowl with beef.
  • Add another tablespoon oil to wok and swirl to coat. Add half of the Swiss chard leaves and cook, stirring, until wilted, about 1 minute. Transfer to bowl with beef and snap peas. Repeat with remaining tablespoon oil and chard.
  • Return everything to wok, heat briefly, and season with salt. Squeeze with lime juice, toss to coat, and serve immediately.

Add one 15-ounce can black-eyed peas (drained; 1/4 cup liquid reserved). Cook 5 minutes, then add the reserved liquid. Add the chard leaves and let wilt, 4 minutes. Season with hot sauce.

8 oz linguine
2 Tbsp butter
2 Tbsp flour
1 c milk
1 dash(es) salt
1 dash(es) pepper
1 dash(es) nutmeg
1 c grated swiss cheese
1 c diced cooked ham
1 c frozen peas, thawed

Steps:

  • 1. Cook linguine according to package directions; drain.
  • 2. In a large pot, melt the butter. Add the flour and whisk until smooth.
  • 3. Cook over low heat for 2 minutes.
  • 4. Add milk, salt, pepper, and nutmeg. Continue to cook, stirring, until thickened.
  • 5. Add cheese and stir until cheese is melted.
  • 6. Add ham and peas; then add hot cooked pasta and toss.
  • 7. If the pasta has just come from the pan, serve immediately. If not, then heat over very low heat until hot throughout.

1/4 pound ground turkey, formed into a patty
Salt and ground black pepper to taste
2 teaspoons extra virgin olive oil
1/2 small onion, sliced
1/2 cup sliced mushrooms
1/4 cup frozen green peas
2 tablespoons shredded Swiss cheese

Steps:

  • Lightly season patty with salt and pepper. Heat olive oil in a large skillet over medium-high heat; add patty and cook until golden brown on the first side, about 3 to 4 minutes. Flip patty, move to one side of skillet. Add onions, mushrooms, salt and pepper to cleared side of skillet and cook until softened and golden brown, about 5 minutes. I just got my Instant Pot and wanted to make black eyed peas. This is a Frankenstein recipe from several I found, but didn't really take a shine to. So, I made my own! It is DELICIOUS. My picky vegetarian daughter had 2 servings! Try it! Soooo easy!

2 1/2 cup(s) pre soaked black eyed peas
2 bunch(es) swiss chard or other preferred hearty leafy green de-stalked
1/2 large white onion, diced
2 large carrots, rough chopped
3 stalk(s) celery, rough chopped
2 - vegetable bouillon cubes
7 cup(s) water
2 - capfuls liquid smoke
3 - capfuls white vinegar
3 clove(s) garlic, minced
- salt and pepper to taste

Steps:

  • Add all ingredients to minimum 6 quart instant pot. Mix well.
  • Put lid on.
  • Set to manual for 40 minutes. Use quick release. 60 minute cook time includes pot warm up time.
  • Serve with crusty hot bread and bask in the compliments!

This was a recipe that they used to serve at Wednesday night suppers sometimes at the church where I grew up. Of course they made huge batches, but this is the closest I could get. They were so sweet....they knew as my mom grew older she couldn't tolerate onions or any kind, and always made her a portion without the green onions instead of just giving her plain peas.

2/3 cup(s) sliced green onions
1 tablespoon(s) butter,melted
2/3 tablespoon(s) all-purpose flour
1/6 teaspoon(s) salt
2/3 cup(s) whipping cream
1/3 teaspoon(s) grated lemon rind
1/2 cup(s) shredded swiss or gruyere cheese (2 ounces)

Steps:

  • Cook the peas according to the package directions; drain well and set peas aside.
  • Saute the green onions in butter in a medium saucepan over medium heat until tender. Reduce heat to low, and add the flour and salt, stirring well.
  • Cook for 1 minute, stirring constantly. Gradually add the whipping cream and lemon rind; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
  • Add the Swiss cheese; cook, stirring constantly, until the Swiss cheese melts. Stir in the reserved peas and cook until the mixture is thoroughly heated.
