440 g cream-style corn
2 tablespoons oil

Steps:

  • Sift flour, baking powder, salt and pepper to taste into a bowl.
  • Add egg, mixing to combine.
  • Stir in sweetcorn.
  • Heat oil in a frying pan.
  • Drop tablespoonsful of corn mixture into pan.
  • Cook until golden then turn and cook the other side.
  • Drain on absorbent paper.
  • Serve hot.

2 green onions, finely chopped
2 tablespoons chopped fresh parsley
4 -5 tablespoons cornflour, heaped
salt & freshly ground black pepper
vegetable oil (for frying)
sour cream, to serve

Steps:

  • Mix together the corn, salad onions, parsley, cornflour and plenty of seasoning.
  • Heat a little oil in a large frying-pan and cook large spoonfuls of the mixture for 2-3 minutes on each side until crisp and golden.
  • Drain on kitchen paper and serve with a dollop of sour cream and a little freshly ground black pepper.

1 x small can no-salt sweetcorn, drained
small handful baby spinach leaf
1 small garlic clove, crushed
1 spring onion, chopped
50g plain flour
½ tsp baking powder
1 egg
50ml milk
1 tsp rapeseed oil, for frying

Steps:

  • Pulse all the ingredients except the oil in a food processor until fairly but not completely smooth.
  • Heat a little oil in a frying pan until hot and dollop four spoonfuls of the mixture into the pan leaving space around them. Fry for just under 1 min on each side until lightly golden. When you flip the fritter, flatten with a spatula to ensure even cooking the whole way through. Cook in three batches, placing the cooked fritters on a plate covered with kitchen roll. Serve warm.
  • You can freeze any fritters you don't need. Lay them on a baking sheet, then once frozen, transfer to a freezer bag. Reheat the frozen fritters in the oven (180C/160fan/gas 4) for around 10 mins until piping hot. Allow to cool to lukewarm before serving.

198g can sweetcorn, drained
2 spring onions, finely chopped
50g courgette, grated
1 tsp smoked paprika
50g self-raising flour
5 eggs, 1 beaten, 4 for poaching
40ml milk
4 tbsp sweet chilli sauce
juice 1 lime
1 tbsp vegetable oil
mixed leaves, to serve

Steps:

  • Mix the sweetcorn, spring onions, courgette, paprika, flour, beaten egg, milk and some seasoning in a large bowl and set aside.
  • Put a large pan of water on to boil. In a bowl, mix the chilli sauce with the lime juice and set aside.
  • Heat the oil in a large, non-stick pan and spoon in four burger-sized mounds of the fritter mixture, spaced apart (you may need to do this in two batches). When brown on the underside, turn over and cook for 3 mins more until golden.
  • Meanwhile, poach the eggs in the simmering water for 2-3 mins until cooked and the yolks are runny. Remove with a slotted spoon. Serve the fritters topped with a poached egg, mixed leaves and a drizzle of the chilli dressing.

2 tbsp plain flour
200g can sweetcorn
3 spring onions , finely sliced
1 tbsp rapeseed oil
1 garlic clove , finely sliced
200g cherry tomatoes , halved
1-2 tbsp chipotle chilli sauce
1 lime , zested and juiced
2 skinless cod fillets
½ small bunch of coriander , chopped

Steps:

  • Beat the eggs and flour together until smooth. Stir through the corn, spring onion and some seasoning.
  • Heat half the oil in a medium non-stick frying pan. Pour in the batter and fry over a medium heat for 3 mins on each side until golden.
  • Heat the grill to high. Heat the remaining oil in a frying pan and cook the garlic and tomatoes for 5 mins. Stir through the chipotle and the lime juice and zest.
  • Meanwhile, cook the fish on a baking tray under the grill, set to medium-high and cook for 3-4 mins on each side.
  • Slice the corn fritter into four and divide between two plates. Sprinkle over the coriander and serve with the fish and chipotle tomatoes.

2 1/2 cups shredded cooked chicken
310 g corn kernels, drained
1 small red capsicum, finely diced
1/2 bunch english spinach, well washed, leaves shredded finely
2 tablespoons flour
6 eggs, lightly beaten
1/4 cup oil

Steps:

  • Heat oven to 160c.
  • Place chicken, corn, capsicum and spinach in a large bowl.
  • Stir in the flour and eggs and season with salt and pepper. Mix well.
  • Heat half the oil in a large non-stick frying pan.
  • Using ¼ cup of mixture for per fritter, spoon mixture, 3 fritters at a time, into hot oil. Cook for 3 to 4 minutes each side or until golden and firm to touch.
  • Drain on a rack over kitchen paper and keep warm in oven whilst cooking remaining fritters.
  • Add additional oil to pan as needed.

1 tsp baking powder
2 eggs
125ml milk
2 tbsp yellow or red Thai curry paste
140g frozen sweetcorn kernels, defrosted
small bunch spring onions , chopped
small bunch coriander leaves, chopped
140g raw peeled king prawns , chopped
vegetable oil , for frying
sweet chilli sauce , to serve

Steps:

  • Tip the flour, baking powder and ½ tsp salt into a bowl or jug. Whisk in the eggs and milk to form a thick smooth batter. Stir the curry paste into the batter and mix until combined. Tip the sweetcorn, spring onions, coriander and prawns into another larger bowl.
  • Pour the batter onto the sweetcorn, mix and fold through to combine. Heat a few tbsp of oil in a large, non-stick pan until hot. Fry large spoonfuls of the batter at a time (do this is batches), for about 2 mins each side, or until golden and cooked through. You will make about 8-10. Keep warm in a low oven while you cook the rest. Serve with sweet chilli sauce.

I love this recipe for its versatility. I can make it Weight Watchers friendly by reducing the oil. I can vary the amount of chilli to give it more or less heat. And it can be served with a range of sauces/ dips to add extra flavour! Despite the long list of steps, it comes together surprisingly quickly. If you make these the healthy way using less oil, make the fritters smaller so they cook quickly without browning too much before the middle is cooked through.

3 tablespoons nut oil
1 small onion, peeled and finely chopped
1 red chili, deseeded and finely chopped
1 garlic clove, minced
1 1/2 cups frozen corn, thawed
6 spring onions, trimmed and finely sliced (green onions)
1 egg, lightly beaten
salt and pepper, to taste
4 tablespoons all-purpose flour
1 teaspoon baking powder
sweet chili sauce, to drizzle over (optional)
fresh coriander leaves (optional garnish)

Steps:

  • Heat 1 tablespoon of the oil in a non-stick pan, add the onion and cook, stirring, for 5 minutes, until beginning to soften. Add the chilli and garlic and cook for a further minute. Remove from the heat and set aside.
  • Put the sweetcorn in a mixing bowl and lightly mash with a potato masher to break down the kernels a little.
  • Add the onion mixture, spring onions and egg to the mixing bowl.
  • Season to taste with salt and pepper and stir to mix.
  • Sift in the flour and baking powder and stir to mix. The mixture is quite runny at this stage but don't worry- it firms up nicely when cooked!
  • Heat 1 tablespoon of the oil in the non-stick pan.
  • Drop four heaped spoonfuls of the sweetcorn mixture in once the oil is hot. Flatten them using a spatula until roughly 1cm/ 1/2inch thick- do this gently so the mixture does not stick to the spatula and break up the fritter.
  • Fry the fritters for 3-4 minutes, or until golden and crisp on the underside. Flip them using the spatula and fry the other side for 3-4 minutes until done.
  • Remove the fritters from the pan and keep warm.
  • Wipe the pan with kitchen paper and repeat from step 6 to cook the remaining fritters.
  • Serve drizzled with sweet chilli sauce or your favourite sauce/ dip. You could also garnish with chopped fresh coriander leaves.

Steps:

  • Firstly, make your mayonnaise. In a bowl, add your egg yolk and whisk until nice and creamy. Now, add a little oil to the egg and whisk. Now you need to add a little oil and continuously whisk. This is important for the creamy mayo texture. Once you have used all of your oil, you can stir in the hot sauce to create the spicy mayo.
  • In another bowl, add the egg and milk and whisk. Add the defrosted or canned sweetcorn to the mixture and stir.
  • Now, sieve in the flour and paprika and stir until well combined.
  • Put a frying pan over a medium heat and add some oil
  • Scoop 2 large spoonful of the mixture and place in the frying pan
  • Fry for a couple of minutes until golden brown then turn over and cook for a further minute to brown the other side.
  • Enjoy topped with sliced avocado and a boiled egg and with your spicy mayonnaise.

I learned to make these at a course run by Leith's cooking school in London. They're really easy to make and go well with Thai curries.

340 g sweetcorn, drained or frozen (precooked)
3 -4 tablespoons flour
2 tablespoons rice flour
1 tablespoon green curry paste
1 teaspoon fish sauce
oil (for frying)
4 tablespoons sugar
120 ml cold water
2 teaspoons fish sauce
1 red chile, seeded and finely chopped
1 green chili, seeded and finely chopped
1 tablespoon lime juice or 1 tablespoon vinegar

Steps:

  • Place half the sweetcorn in a blender and whiz until smooth.
  • Scrape into a bowl, add the remaining ingredients and beat until you have a thick batter.
  • Heat enough oil in a frying pan for shallow frying.
  • Use a teaspoon to put spoonfuls of batter in the oil and fry until golden.
  • This will take no more than 30 seconds on each side.
  • Drain on paper towel.
  • Don't make the fritters too big or they won't cook through.
  • Mix the ingredients for the dipping sauce together and serve immediately.

  • 1. Sift flour into a bowl. Season with salt and pepper. Using a fork, whisk milk and eggs together in a jug until combined. Pour over flour. Stir until smooth. Add corn and zucchini. Stir until well combined. 2. Add enough oil to a large, non-stick frying pan to cover base. Heat over medium heat until hot. Steps:

  • Make the chilli and ginger paste by placing all ingredients in a food processor and puréeing until smooth. Rub through a sieve and set aside until needed.
  • Sift together flour and baking powder and season if desired.
  • In a separate bowl beat together the egg and milk and beat in the flour until smooth.
  • Add the sweetcorn, cheese, coriander and onions and mix well. Leave to stand for 15 minutes (It should thicken).
  • Heat the oil and use a large spoon to add batter to the pan, cook until golden on both sides and drain.
  • Serve the fritters with salad leaves, lime wedges and the chilli sauce.

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn't make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn't happen if you only use 1 teaspoon of the mixture). If this happens we'd recommend trying them with less mixture and making smaller fritters, this way it's easier to flip them without breaking.

1 small red onion (85g), finely chopped
4 tomatoes (320g), chopped
2 x 400g cans black beans , drained
1 lime , zested and juiced
½ x 30g pack coriander , chopped

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a large baking tray with baking parchment.
  • Heat the oil in a small pan and fry the onion and pepper for 5 mins until softened. Meanwhile, mix the flour, spices and baking powder in a bowl. Add the onions, pepper, corn and 2 of the eggs, then mix together well.
  • Spoon eight mounds of the mixture onto the baking tray, well spaced apart, then flatten slightly with the back of the spoon. Bake for 20 mins until set and golden.
  • Meanwhile, mix together the salsa ingredients and poach 2 of the remaining eggs to your liking. 400g can sweetcorn, drained
4 spring onions, finely chopped
4 heaped tbsp plain flour
4 eggs, beaten
2 tsp paprika (smoked or sweet)
5-6 tbsp milk
1 tbsp vegetable oil, plus a drizzle
130g chorizo, cut into 1cm cubes
finely sliced chives, to serve
1 large ripe avocado, peeled, stoned and mashed
1 tbsp finely chopped coriander leaves
1⁄2 lime, juiced
1 tbsp olive oil
pinch of chilli flakes (optional)

Steps:

  • Tip the sweetcorn, spring onions, flour, eggs, paprika and milk into a large bowl, season and mix well.
  • Heat the oil in a large frying pan over a medium heat. Spoon 1 tbsp of the batter into the pan to make a mini fritter (you should be able to fit three or four in the pan at a time, depending on the size of the pan) and cook for 4-5 mins, turning halfway through, until golden. Remove to a plate lined with kitchen paper and repeat with the rest of the batter, being careful not to overcrowd the pan. (You should make about 28 fritters.) To freeze, leave to cool completely, then transfer to a tray and open-freeze until solid. Transfer to a freezer bag, seal and freeze for up to two months. Defrost in the fridge overnight before using.
  • Mix the mashed avocado with the coriander, lime juice, oil and chilli flakes, if using, then season to taste. Will keep in an airtight container in the freezer for two months. Defrost in the fridge overnight before using.
