SWEET CHEESE WONTONS
Sweet Cheese Wontons are my FAVORITE item at any Chinese buffet. Most people get them confused with crab rangoon, but these wontons have no green onion or crab in them, just a sweet, yummy cream cheese mixture.

Steps:
- 1. Mix the cream cheese and the sugar together in a bowl until nice and creamy.
- 2. Next, with damp fingers from the water, place a wonton wrapper on a clean surface. The dampness will make them easier to get apart. Wonton wrappers can be found in the refrigerated produce section of the grocery store.
- 3. Spoon a teaspoon of the cream cheese mixture right into the center of the wrapper.
- 4. Get your index finger wet, and brush the edges of the wrapper with the water - this will help the wrapper stay closed. Fold the wrapper into a triangle shape.
- 5. Heat 1 1/2 inches of cooking oil (I use canola) in a frying pan or wok over medium heat until a drop of water dropped in sizzles.
- 6. Place about six wontons into the oil (depending on the size of your pan) and let them cook for about 1 1/2-2 minutes each side, until they are golden brown. Place them on a paper towel to cool. Repeat for the rest of the wontons.
- 7. Let the wontons cool and serve!
PESTO PIZZA PILLOWS
Steps:
- Heat about 2 inches of vegetable oil in a large pot or Dutch oven to 365 degrees F.
- Lay out the wonton wrappers on your work surface. Brush each entire wrapper with egg wash. Top each with a heaping tablespoon of mozzarella, a crumble of sausage, 1/2 teaspoon pesto and 1/2 teaspoon Parmesan, leaving space around the edges. Fold the corners of each wrapper into the center to make a square. Press to seal.
- Fry the sealed pockets in 2 batches, turning occasionally, until crisp and golden brown all over, 3 to 4 minutes per batch. Season lightly with salt and sprinkle with Parmesan while still hot. Serve hot, with marinara for dipping.
SWEET CREAM CHEESE WONTONS
These cream cheese wontons can be filled with a sweet or savory filling and baked in the oven or fried! Filling ideas include cream cheese and cherry pie filling, nutella, and more!

- Mix the powdered sugar and cream cheese together until well combined. (You can use a hand mixer or a silicone spatula for this.)
- Lay out about 4 wontons at a time and cover the remaining with a dish towel (they dry out quickly).
- Fill a small bowl with water and set near the wontons.
- Place about a ½ teaspoon of cream cheese mixture in the middle of each wonton.
- Dip your fingers into the whisked egg/water mixture (i.e. egg wash), and fold the wontons diagonally to form a triangle. Seal and ensure that there are no air bubbles.
- Dip your fingers back into the water. With the longest side of the triangle facing you, fold the left side to the right, and then fold the left side over it, to the right.
- Repeat until all wontons are filled and wrapped!

AIR-FRIED SWEET WONTONS
Crispy and crunchy on the outside with a sweet, soft filling. They're a tasty snack, but be warned, they may be addictive.

Steps:
- Mix peanut butter, brown sugar, honey, and sesame seeds in a small bowl.
- Lay out a wonton square. Dip your index finger into water and moisten all 4 edges. Place 1/2 to 1 teaspoon of the peanut butter mixture in the center, and fold it diagonally to make a triangle, firmly pressing the edges down. Don't overfill, as the peanut butter mixture may ooze out.
- Once you've made a triangle shape, take the bottom corners and fold around your index finger so they meet. Moisten the 2 wonton corners and press together to seal. Repeat with remaining wrappers and filling.
- Preheat an air fryer to 370 degrees F (188 degrees C) according to manufacturer's instructions for 5 minutes.
- Working in batches, add some wontons to the fryer basket; make sure they're not crowded or touching. Spray lightly with cooking spray and cook until just light golden brown, 3 to 4 minutes, flipping halfway through. Cool slightly, dust with confectioners' sugar, and serve.

SWEET WONTON PILLOWS
For the lunar new year a colleague brought me some wonton that her Mother-in-law had made. At first bite I knew I wanted the recipe. She only knew the Chinese name of the wontons so I was not able to find the recipe on line. I was so happy I found this recipe which comes very close. Don't be afraid of the mint leaf; it gives it a bit of contrast. From Martin Yan.

Steps:
- Combine the brown sugar, shredded coconut, dry roasted peanuts and sesame seeds in a bowl.
- Place 1 teaspoon of filling in the center of each wonton wrapper.
- Top with a mint leaf.
- Brush the edges of the wrapper lightly with the lightly beaten egg.
- Fold the wrapper in half diagonally over the filling to form a triangle. Squeeze out the air; pinch the edges to seal.
- In a wok, heat the cooking oil for deep-frying to 350 degrees Fahrenheit.
- Add the triangles, a few at a time, and deep-fry until golden brown, 1 to 2 minutes.
- Remove the triangles and drain on paper towels.
