Georgia is famous for the sweet onions grown in the Vidalia area. My family looks forward to the time these onions are available to use in salads and casseroles.

4 to 5 large Vidalia or sweet onions, sliced 1/4 inch thick
1/4 cup butter
1/4 cup sour cream
3/4 cup grated Parmesan cheese
10 butter-flavored crackers, crushed

Steps:

  • In a large skillet over medium heat, saute onions in butter until tender. Remove from the heat; stir in sour cream. , Spoon half into a greased 1-qt. baking dish. Sprinkle with cheese. Top with remaining onion mixture and crackers. Bake, uncovered, at 350° for 20-25 minutes or until golden brown and bubbly.

5 links sweet Italian sausage
1 large vidalia onion (or other sweet)
1 (28 ounce) can diced tomatoes
2 medium summer squash
3 minced garlic cloves
2 bay leaves
1/4 teaspoon red pepper flakes
1/2 teaspoon celery seed
1/2 teaspoon dried rosemary
1/2 teaspoon black pepper
1 teaspoon sea salt
1 tablespoon italian seasoning
1/4 cup extra virgin olive oil

Steps:

  • Heat olive oil on medium high heat in a large fryig pan.
  • Remove sausage from casing and cut into 1/2 inch slices.
  • Peel onion and slice in 1/4 inch slices.
  • After heating oil in large fryinng pan, add italian sausage.
  • Once the italian sausage is browned, add the onions and garlic.
  • Cook until onions are transluccent.
  • Add tomatoes, undrained.
  • Add all spices and mix thoroughly - taking care not to break up sausage.
  • Bring to a boil and turn down to medium low.
  • Cover tightly.
  • Wash squash
  • Slice squash into 1/4 inch slices.
  • Remove cover.
  • Add squash into sauce and stir lightly.
  • Replace cover.
  • Turn down burner to low.
  • Simmer for approximately 30 minutes.
  • Serve over jasmine rice or pasta.

5 large vidalia onions, sliced and lightly sauteed
12 buttery crackers, crushed
1 lb sausage meat, browned and drained
1/4 tsp seasoning salt
10 3/4 oz can cream of mushroom soup
1/2 c grated cheddar cheese
1 small jar of pimento

Steps:

  • 1. Preheat oven to 350 degrees. Combine all ingredients except the crackers and transfer to a large casserole dish. Top with crackers and bake for 30 minutes or until crackers are golden brown. Serve warm

12 Ritz crackers, crushed
1 lb sausage meat, browned and drained
1/2 teaspoon salt
1/4 teaspoon seasoning salt
1 (10 1/4 ounce) can cream of mushroom soup
1 1/2 cups cheddar cheese, grated
1 (2 ounce) jar pimento pepper, well drained

Steps:

  • Put onions in bottom of 12" x 17" Pyrex dish.
  • Add Ritz crackers, then sausage meat.
  • Add a layer of onions, cream of mushroom soup, salt, and seasoning salt.
  • Sprinkle layer of cheese and pimento.
  • Bake in preheated oven at 400F for 1 hour.
