3 tablespoons olive oil
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
24 slices French bread baguette (1/2 inch thick)
1/2 pound fresh goat cheese
2 cups chopped fresh strawberries
2 cups fresh arugula or fresh baby spinach, chopped

Steps:

  • In a small bowl, combine the first five ingredients. Place bread on ungreased baking sheets; brush with oil mixture. , Broil 3-4 in. from the heat until lightly browned, 1-2 minutes. Spread with goat cheese. Broil until cheese begins to melt, 2-3 minutes longer., In a small bowl, combine strawberries and arugula; layer over cheese.

1 cup finely diced strawberries
1 tablespoon chopped fresh mint
2 teaspoons extra-virgin olive oil
Flakey sea salt
12 toasted baguette slices
1 cup ricotta cheese
Balsamic vinegar (use an aged balsamic that is thick and syrupy), for garnish

Steps:

  • In a small bowl, toss the strawberries with the mint, olive oil and a pinch of flakey sea salt. Spread each slice of baguette with ricotta cheese. Top with a spoonful of strawberries, drizzle with balsamic and sprinkle with more flakey sea salt.

2 slices good-quality fruit & nut bread
50g unsalted butter
200g ripe strawberry , halved
4 tbsp clear honey
¼ tsp vanilla bean paste (or use extract)
3 tbsp toasted flaked almond
pinch of sea salt flakes
4 tbsp ricotta (or more, if you like)

Steps:

  • Toast the bread in the toaster or on a griddle pan for a stripy effect. Melt one-quarter of the butter in a frying pan. When it foams, add the strawberries, cut-side down, and fry over a high heat for 2 mins or until starting to caramelise. Add the remaining butter, the honey and vanilla, and swirl to make a sticky sauce. Stir in the almonds and salt.
  • Dollop or spread the ricotta onto the hot toast, then spoon over the hot berries and honey-nut butter. Serve straight away.
