1 red bell pepper, seeded, chopped
¼ cup sweet chili garlic sauce*
1 cup fresh pineapple, cut into 1/2-inch pieces
3 cups cooked rice

Steps:

  • Cook and stir sausage and bell peppers over medium-high heat for 5 minutes or until sausage is lightly browned and peppers are tender.
  • Add chili garlic sauce and pineapple; cook and stir for 5 minutes.
  • Serve over cooked rice.

2 teaspoons oil
1 large onion chopped
1 cabbage head quartered, cored, and roughly diced
1 can crushed tomatoes with added puree - (28 oz)
1 can beef broth - (14 1/2 oz)
1 can low-sodium chicken broth - (14 1/2 oz)
1/4 cup light brown sugar - (packed)
2 teaspoons sweet Hungarian paprika
1/4 teaspoon dried red pepper flakes
3/4 teaspoon ground allspice
3/4 teaspoon salt
freshly-ground black pepper
1/2 cup water
1 pound smoked beef kielbasa sausage split lengthwise, and cut in 1/2" thick slices
1 can tomato soup - (10 3/4 oz)
3 tablespoons lemon juice - (to 5)
2 tablespoons minced Italian parsley (optional garnish) (or snipped chives)

Steps:

  • Heat the oil in a 4-quart pot over medium-high heat. When hot, add the onion. Cook, stirring often, until softened, about 5 minutes. Add the cabbage, crushed tomatoes, beef and chicken broths, sugar, paprika, red pepper flakes, allspice, salt, pepper to taste and the water. Stir well. Bring to a boil, then reduce the heat and simmer, covered, 20 minutes. Add the sausage and tomato soup. Simmer 10 minutes longer. (This can be made 2 days ahead and refrigerated or frozen up to 1 month. To serve, gently reheat until hot. Add more water if the soup is too thick.) Stir in 3 tablespoons of lemon juice. Taste; adjust the lemon juice and seasoning. Serve hot, garnished with parsley or chives, if using. This recipe yields 6 main-course servings. 3 Tbsp vegetable oil
1 lb smoked sausage, sliced
1 c green bell pepper, cut into chunks
1 c red bell pepper, cut into chinks
1 medium onion, roughly chopped
2 clove garlic, peeled and finely diced
1 can(s) sliced water chestnuts, undrained (5 ounces)
2-3 Tbsp cornstarch
1 can(s) pineapple chunks (20 ounces) , drained, liquid reserved
2/3 c light corn syrup
1/2 c apple cider vinegar
3 Tbsp soy sauce
3 Tbsp ketchup
1-2 tsp toasted sesame oil
4-6 servings cooked white rice

Steps:

  • 1. Heat oil in a 12-inch non-stick skillet over medium high heat. Add sausage slices and cook until slices are browned around the edges, about 10-12 minutes. Remove from pan, cover and keep warm.
  • 2. To the same pan, add the green pepper, red pepper, onion, garlic and water chestnuts. Cook for 3-4 minutes, stirring often, until crisp-tender.
  • 3. Meanwhile, in a medium size bowl, combine the reserved pineapple juice, cornstarch, corn syrup, vinegar, soy sauce and ketchup. Mix well to incorporate cornstarch. Pour into skillet with vegetables. Cook for 4-5 minutes until thickened and heated through. Add the pineapple chunks, browned sausage and sesame oil. Mix well. Cook an additional 2-3 minutes to heat through.

I decided that I needed to share this recipe after two people came into our break room tonight to see what I was eating that smelled so good. The recipe is adopted from a woman I work with, she calls it "Party Kielbasa". I like using turkey smoked sausage, but it works well with either smoked sausage or kielbasa. I brown the sausage in a frying pan with the Liquid Smoke before I bake it, because I like it to be a little bit crunchy on the outside, but you can just throw it all together without browning it, it tastes good either way. I serve it over rice because it soaks up the juice nicely. It could probably be a crockpot recipe in the summer, but I like baking it in the winter.

12 ounces chili sauce (I use Heinz.)
20 ounces crushed pineapple with juice, undrained
3/4 cup brown sugar
2 bell peppers, cut into bite size pieces (I use yellow or red and green, to make it colorful)
1 lb smoked sausage or 1 lb kielbasa, cut into bite size pieces
5 -10 drops liquid smoke (I use it if I think my smoked sausage isn't smokey enough.) (optional)

Steps:

  • Mix the chili sauce, canned crushed pineapple with juice, and the brown sugar together in a large casserole dish (I use the stoneware from my crockpot).
  • Add the bell pepper pieces and smoked sausage.
  • Mix everything together.
  • Bake uncovered at 350 for one hour, stirring occasionally.
  • Enjoy!

1 pkg smoked sausage
1 green pepper
1 red pepper
1 yellow pepper
1 onion
2 tomatoes
1 bottle Kraft Sweet & Sour Sauce
Minute Rice

Steps:

  • Cut smoked sausage into 1/4 inch pieces. Fry on low/medium heat. While sausage is frying, chop peppers, onion, and tomatoes into 1-2 inch pieces. After smoked sausage is done cooking, set aside in strainer to drain.
  • In same skillet that sausage was cooked in, saute peppers, onion, & tomatoes to desired tenderness. Drain well. In strainer with smoked sausage, toss vegetables with sausage to mix ingredients. Add ingredients back to skillet and add bottle of Kraft sweet & sour sauce. Mix well.
  • Make Minute Rice. Lay bed of rice on plate then place sweet and sour mixture on top and enjoy!

1 ½ pounds smoked sausage, sliced

1 red bell pepper, sliced into long strips

1 dash hot pepper sauce, or to taste
