A simple grill recipe, different from other traditional grill meals. From Betty Crocker I think (someone passed it along to me).

4 boneless skinless chicken breasts
1/2 cup sweet and sour sauce
1 (8 ounce) can pineapple chunks, drained
1 medium bell pepper, cut into strips
1/4 small onion, cut into small wedges
1/2 cup chow mein noodles (optional)

Steps:

  • Heat gas or charcoal grill. Cut four 18x12-inch pieces of heavy-duty foil; spray with cooking spray.
  • On one side of each foil piece, place 1 chicken breast. Top each with 1 tablespoon sweet-and-sour sauce and one-fourth of the pineapple, bell pepper and onion. Top with remaining sauce.
  • Fold foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for heat expansion.
  • When grill is heated, place packets on gas grill over medium heat or on charcoal grill over medium coals; cover grill.
  • Cook 15 to 20 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (170°F).
  • Place packets on plates. Cut large X across top of each packet; fold back foil. Top with chow mein noodles if desired.

2 pkg. (3 oz. each) ramen noodle soup mix, any flavor
1/2 cup KRAFT Asian Toasted Sesame Dressing
6 Tbsp. HEINZ Chili Sauce
1 cup water
1 lb. boneless skinless chicken breasts, cut into thin strips
1 large red pepper, cut into thin strips
1 can (8 oz.) pineapple chunks in juice, drained
2 Tbsp. chopped PLANTERS Dry Roasted Peanuts

Steps:

  • Heat oven to 400ºF.
  • Insert tip of sharp knife into one short side of block of Noodles; use to split each block horizontally in half to make 2 layers. Place each layer on sheet of heavy-duty foil sprayed with cooking spray. Bring up sides of each foil sheet, leaving opening at top; place on rimmed baking sheet. Discard Seasoning Packets or reserve for another use.
  • Combine dressing and chili sauce. Mix water with 1/4 cup dressing mixture; pour evenly over noodles. Top with chicken, peppers and pineapple; drizzle with remaining dressing mixture. Fold foil to make 4 packets; place in single layer on baking sheet.
  • Bake 20 to 25 min. or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
  • Stir ingredients in packets; top with nuts.

1 medium bell pepper, cut into strips
1/4 small onion, cut into wedges
1 1/2 c chow mien noodles (if desired)

Steps:

  • 1. Heat grill. Cut four 18 x 12 pieces of heavy duty foil. Spray with cooking spray.
  • 2. On each foil place 1 chicken breast. Top each with 1 T. of sweet & sour sauce, 1/4 of the pineapple, bell pepper and onion. Top with remaining sauce (1 T. on each again).
  • 3. Fold over foil and seal tightly leaving some space for expansion. Cook on medium heat for 15 to 20 minutes turning after 10 minutes. Top with chow mien noodles.
