¾ pound mahi mahi fillets
1 teaspoon toasted sesame oil
¼ teaspoon garlic pepper seasoning
1 tablespoon sesame seeds, toasted
1 ½ teaspoons grated fresh ginger

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Spray a shallow baking dish with nonstick cooking spray.
  • Pat mahi mahi dry with paper towels. Drizzle with sesame oil, and season with garlic pepper. Press grated ginger and toasted sesame seeds onto both sides of the fish to coat. Place fish on the prepared baking dish.
  • Bake in the preheated oven until the fish flakes easily with a fork, 10 to 15 minutes.

2 cups pineapple chunks
¼ cup fresh cilantro, chopped
1 tablespoon minced red onion
2 tablespoons lime juice
4 (8 ounce) mahi mahi fillets
2 teaspoons sesame oil
¼ cup white sesame seeds
1 tablespoon vegetable oil

Steps:

  • Toss the pineapple, cilantro, red onion, and lime juice together in a bowl until evenly mixed; set aside.
  • Rub the mahi mahi fillets with the sesame oil to lightly coat.
  • Sprinkle the sesame seeds evenly over one side of each fillets; gently press the seeds into the fish to assure they stick.
  • Heat the vegetable oil in a large non-stick skillet over medium heat.
  • Lay the fillets with the seeded side down into the hot oil; cook for 4 minutes, turn, and continue cooking until the flesh turns opaque and flakes easily with a fork, another 3 to 5 minutes. Serve with the pineapple mixture.

1 1/4 cups white rice
3 scallions, thinly sliced (white and green parts separated)
2 tablespoons minced peeled ginger
1 1/2 pounds skinless center-cut mahi mahi fillet (1 1/2 inches thick)
1/4 teaspoon ground white pepper, plus more to taste
4 heads baby bok choy, halved lengthwise
2 carrots, sliced 1/4 inch thick
3 tablespoons vegetable oil
1 Fresno or red jalapeno chile pepper, sliced (remove seeds for less heat)
2 cloves garlic, minced
Kosher salt
2 tablespoons low-sodium soy sauce

Steps:

  • Cook the rice as the label directs. Meanwhile, fill a large skillet halfway with water; bring to a boil over medium-high heat. Set the bottom of a stackable bamboo steamer in the water. Sprinkle the scallion whites and 1 teaspoon ginger on a plate that will fit in the steamer basket; set the fish on top and sprinkle with 1/4 teaspoon white pepper. Set in the steamer basket; cover and cook 8 minutes.
  • Line another steamer level with parchment; add the bok choy and carrots and set on top of the fish basket. Cover and cook until the fish is cooked through and the vegetables are tender, about 7 more minutes.
  • Meanwhile, heat the vegetable oil in a saucepan over medium heat; add the chile, garlic, the remaining ginger and 1/2 teaspoon salt. Cook, swirling the pan, until the garlic and ginger start browning, 2 minutes.
  • Remove the baskets. Drain any liquid from the fish; cut into 4 pieces. Drizzle the fish and vegetables with the chile oil and soy sauce; top with the scallion greens and season with white pepper. Serve with the rice.

A Hawaiian dish, this is an authentic pan-Asian amalgam rather than a product of today's fusion fad. It blends traditional Japanese and Cantonese elements with a light, tropical version of sweet-and-sour sauce. Meaty but mild, mahi-mahi is often known on the mainland as dorado or dolphinfish. We like the dish with Mixed Vegetable Stir-fry.

1/3 cup sugar
1 1/2 teaspoons cornstarch
2 tablespoons rice vinegar
2 tablespoons fresh lime juice
2 teaspoons Japanese soy sauce, such as Yamasa
1 teaspoon minced fresh ginger
Juice of 1 large lime
1 1/2 pounds mahi-mahi fillets, cut into "fingers" about 3 inches in length
About 1 cup dried bread crumbs
Vegetable oil for pan-frying
Hawaiian Chili Pepper Water, optional

Steps:

  • Combine the sugar and cornstarch in a small saucepan. Whisk in 1/4 cup of water. Add the remaining ingredients and bring to a boil over medium heat. When the sauce thickens lightly, remove it from the heat. It can be used warm or at room temperature.
  • Drizzle the lime juice and soy sauce evenly over the fish pieces and let them sit for several minutes. Place the bread crumbs on a plate. Warm 1/4 inch of oil in a large heavy skillet. When a few bits of bread crumbs sizzle merrily and brown quickly in the oil, drain each piece of fish and coat it with the bread crumbs. Saute the fish on all sides until the bread crumbs are golden brown and the fish flakes, about 5 minutes total. Serve the mahi-mahi immediately with the sauce drizzled over it or on the side for dunking. Serve with Hawaiian Chili Pepper Water for more pizzazz.

3 tablespoons brown sugar
4 tablespoons water
3 tablespoons soy sauce
1 tablespoon balsamic vinegar
2 teaspoons grated fresh gingerroot
2 garlic cloves, crushed
1 teaspoon olive oil
4 -6 ounces mahi mahi fillets
salt and pepper

Steps:

  • In a shallow glass dish combine everything except fish and salt & pepper.
  • Sprinkle salt & pepper on fish and place in dish with marinade.
  • Cover and chill for 20 minute.
  • Preheat broiler.
  • Remove fish from dish and reserve marinade.
  • Broil fish 4 - 6 mins on each side or until fish flakes easily.
  • Pour reserved marinade into a skillet and reduce until the mixture becomes a glaze.
  • Spoon over fish and serve.

A simple and tasty way to prepare mild flavored fish. I've included the marinating time in the prep time.

1 1/2 lbs mahi mahi fillets
2 tablespoons butter (divided)
1 garlic clove, minced
1 tablespoon teriyaki sauce
2 tablespoons fresh lemon juice
1 teaspoon honey
1 tablespoon sesame seeds

Steps:

  • In a skillet melt 1 Tbs of butter over medium heat, add garlic, and sauté 'til tender (watch carefully so that it doesn't burn!).
  • Remove from heat and stir in teriyaki sauce, lemon juice, honey and sesame seeds.
  • Let cool a few minutes then pour over fish and marinate 30 minutes in refrigerator.
  • Heat remaining Tbs of butter in skillet over medium heat.
  • Remove fish from marinade and add to pan, sautéing 4-5 minutes per side and basting with marinade.
  • Note: I like to toast the sesame seeds before adding them to the mixture for a more pronounced flavor.
