4 cups peeled and grated sweet potatoes
1/2 jalapeno pepper, seeded and diced
3/4 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon kosher salt
1/2 teaspoon chipotle chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/4 cup whole milk
1 large egg, lightly beaten
Olive oil for frying
Cilantro Lime Cream Sauce, recipe follows
Chopped fresh cilantro leaves, for garnish
1 (8-ounce) container sour cream
1/2 cup minced fresh cilantro leaves
1 lime, zested and juiced
Pinch salt

Steps:

  • In a large bowl, combine the sweet potatoes, jalapeno, flour, baking powder, salt, chili powder, cumin, and black pepper.
  • In a small bowl lightly beat the milk and egg until well mixed. Add to the sweet potato mixture, stirring, until all the ingredients are well combined.
  • Heat a large skillet over medium heat and add enough vegetable oil to cover bottom of skillet. Drop the sweet potato mixture, by rounded teaspoonfuls, into the hot oil. Press lightly to flatten the mixture to the size of a half dollar. Cook until the cakes are golden brown, about 1 to 2 minutes on each side. Transfer the cakes to a serving platter. Top each cake with a small amount of Cilantro Lime Cream Sauce and garnish with fresh cilantro.
  • In a small bowl, combine the sour cream, cilantro, lime zest, lime juice and a pinch of salt. Cover and refrigerate until ready to serve.

Sauce:
1/2 cup sour cream
1/4 cup fresh cilantro leaves, rough chopped
1/2 of a jalapeño pepper, stemmed, seeded, and minced
1 scallion, minced
1 Tbsp lime juice
1/2 tsp sugar
3-1/2 tsp salt, divided
3/4 tsp black pepper, divided
Tots:
2 medium-size sweet potatoes, peeled and cut in large pieces
1/4 cup flour, plus additional for rolling
1 tsp cornstarch
1 tsp chili powder
2 cups panko breadcrumbs
2 egg whites, beaten
Oil, for frying

Steps:

  • Combine the sour cream, cilantro, jalapeño, scallion, lime juice, sugar, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl. Refrigerate until ready to serve. Place the sweet potatoes in a medium-size saucepan. Cover with cool water and add 2 tsp salt. Bring the potatoes up to a boil over medium heat. Pierce the potatoes with a fork every 5-10 minutes until they feel slightly undercooked. Then, drain the water and let the potatoes cool in the pot. Meanwhile, combine the flour, 1 tsp salt, 1/2 tsp black pepper, cornstarch, and the chili powder in a large bowl and set aside. When the sweet potatoes have cooled, mash 1 piece of sweet potato and set it aside. Finely dice the rest of the potatoes. Carefully fold the mashed and diced sweet potatoes into the flour. The mixture should form a dough-like consistency when blended. Cut the sweet potato dough in half. On a floured surface, roll out 1 half of the dough into a 13-14" log that's about an inch in diameter. Repeat with remaining dough. Slice each log into small 1" x 1" logs. Preheat a deep fryer to 375°F. Place the egg whites and breadcrumbs in two small shallow dishes. Roll each tater tot in the egg whites and then dredge in the breadcrumbs. Place the tots on baking sheets that have been lined with a couple layers of paper towels. Fry the tater tots in batches of 6 until they're a deep golden brown, about 2 minutes. Serve with the dipping sauce.

2 sweet potatoes, quartered lengthwise
3 ¼ tablespoons olive oil, divided
1 ¼ teaspoons cayenne pepper, divided
½ teaspoon salt
¾ teaspoon smoked paprika, divided
¼ teaspoon ground black pepper
½ cup pumpkin seeds
salt and ground black pepper to taste
2 (16 ounce) cans black beans, drained and rinsed
½ tablespoon ground cumin, or to taste
1 teaspoon chili powder
¾ lime, juiced, divided
6 ounces vegan sour cream
1 bunch fresh cilantro, finely chopped, divided
1 teaspoon paprika
12 (6 inch) white corn tortillas

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut sweet potatoes into 25 to 40 smaller "French fry"-shaped pieces.
  • Place sweet potato pieces in a bowl. Coat with 2 tablespoons olive oil. Add 1/4 teaspoon cayenne pepper, 1/2 teaspoon salt, 1/4 teaspoon smoked paprika, and 1/4 teaspoon black pepper. Mix until sweet potatoes are evenly coated; transfer to a large baking sheet.
  • Place pumpkin seeds into the same bowl. Add 1/4 tablespoon olive oil; season with salt and pepper. Spread pumpkin seeds onto a small baking sheet.
  • Place sweet potatoes and pumpkin seeds in the preheated oven. Bake pumpkin seeds for 2 minutes; remove and let cool. Bake potatoes, flipping halfway through, about 15 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a large saucepan over medium heat. Add black beans, cumin, chili powder, 1/2 teaspoon smoked paprika, a small squeeze of lime juice, and salt and pepper to taste. Stir to combine. Cook until heated through, 5 to 7 minutes.
  • Combine vegan sour cream, remaining lime juice, 2 tablespoons cilantro, regular paprika, 1 teaspoon cayenne pepper, and salt to taste. Whisk until sour cream flavor is mostly gone and lime-cilantro taste is dominant but not overpowering.
  • Warm tortillas in pairs in the microwave, 15 to 20 seconds.

3 sweet potatoes, unpeeled
Kosher salt
2 teaspoons finely grated lime zest
Pinch of cayenne pepper
1/4 cup canola oil
Freshly ground pepper
1/4 cup finely chopped fresh cilantro

Steps:

  • Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
  • Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.

  • Cover potatoes with cold salted water in a large pot, then bring to a boil. 1/4 cup plus 1/3 cup extra-virgin olive oil, plus more for serving
1/2 tablespoon honey
Juice of 2 limes
Kosher salt, to taste
Black pepper, to taste
2 1/4 pounds sweet potatoes, scrubbed and cut into 1-inch wedges
1/2 bunch cilantro, leaves only (1/2 ounce)
2 green chiles, seeded and chopped
2 garlic cloves, grated on a Microplane or minced
2 tablespoons sliced blanched almonds
1 tablespoon white wine vinegar
1 cup Greek yogurt

Steps:

  • Heat the oven to 350 degrees.
  • In a large bowl, combine 1/4 cup oil, the honey, juice from 1 lime, a large pinch of salt and pepper to taste, and toss with potato wedges. Spread in an even layer on a rimmed baking sheet, bake until tender and lightly browned in spots, 45 to 55 minutes. Sprinkle with additional salt to taste.
  • Meanwhile, in a food processor, pulse to combine 1/3 cup oil, the cilantro, chiles, garlic, almonds, juice from remaining lime, vinegar and a large pinch of salt, until it forms a chunky purée. Taste and add more salt if needed.
