ROASTED SWEET POTATO FRIES OR ROUNDS



Roasted Sweet Potato Fries or Rounds image

A nice change of pace from "regular" fries. I like dipping them in sour cream or eating them plain.

2 large sweet potatoes
1 tablespoon olive oil
1 tablespoon butter, melted
salt

Steps:

  • Scrub the sweet potatoes, leave unpeeled, and cut into fries or rounds. (Trust me, rounds are much easier!).
  • Combine olive oil and melted butter.
  • Arrange the potato slices, not touching, in rows on a baking sheet.
  • Lightly brush the potatoes with the oil mixture; being careful to not use too much or the fries get mushy.
  • Roast at 450°F for 18 to 22 minutes, or until they are golden and crisp, turning them once with a spatula.
  • Transfer the potatoes to paper towels to drain, sprinkle them with the salt to taste, and serve them warm.
  • Note: can be sprinkled with cinnamon sugar instead of salt.

For sweet potatoes:
3 large garlic cloves
1/4 cup olive oil
2 1/2 pounds sweet potatoes, peeled and sliced into 1/2-inch-thick rounds
For fried sage:
1/3 cup olive oil
24 sage leaves

Steps:

  • Roast sweet potatoes:
  • Preheat oven 450°F with rack in upper third.
  • Purée garlic with oil and 3/4 teaspoon salt in a blender until smooth. Toss sweet potatoes with garlic oil in a large bowl, then spread in 1 layer in a 15-by 10-inch shallow baking pan.
  • Bake until golden in patches and cooked through, 20 to 30 minutes.
  • To fry sage leaves:
  • Heat oil in a small heavy skillet over medium-high heat until it shimmers, then fry sage leaves in 2 batches, stirring, until crisp, 30 seconds to 1 minute per batch. Transfer with a slotted spoon to paper towels to drain.
  • Serve sweet potatoes with sage leaves scattered on top.

JERK TURKEY BURGERS ON SWEET POTATO ROUNDS



Jerk Turkey Burgers on Sweet Potato Rounds image

Thick-cut sweet potatoes work nicely as stand-ins for hamburger buns in these island-inspired turkey burgers. The yogurt helps keep the ground turkey moist and delicious.

12 ounces ground turkey
2 tablespoons 2-percent Greek yogurt
1 scallion, sliced
1 small garlic clove, finely grated
1/2 teaspoon jerk seasoning
Kosher salt
2 cups coleslaw mix
1 tablespoon mayonnaise
1 tablespoon white vinegar
2 large, fat sweet potatoes (about 1 1/2 pounds), peeled and cut into eight 1/2-inch rounds
1 tablespoon olive oil, plus more for oiling the grill grates
Nonstick cooking spray
2 tablespoons mango chutney

Steps:

  • Prepare a grill for medium-high heat.
  • Use your hands to gently combine the turkey, yogurt, scallion, garlic, jerk seasoning and 1/2 teaspoon of salt in a medium bowl. Form into four 3-inch patties about 1/2-inch thick. Chill for at least 30 minutes (this helps to keep the burgers from sticking to the grill).
  • Combine the coleslaw mix, mayonnaise and vinegar in a small bowl. Cover and refrigerate until ready to use.
  • Brush the sweet potatoes with the oil and sprinkle with a large pinch of salt. Lightly oil the grill grates. Arrange the sweet potato rounds on the grill, cover with the lid and cook until there are nice grill marks and the potatoes are tender but not mushy, 8 to 12 minutes per side. Remove and set aside to cool completely.
  • Spray both sides of the turkey burgers with nonstick cooking spray and grill, covered, until the burgers have nice grill marks and an internal temperature of 165 degrees F, 8 to 12 minutes per side.
  • Assemble the burgers: Spread 4 sweet potato rounds each with mango chutney. Top with the patties and 1/4 of the coleslaw and sandwich with the remaining sweet potato rounds.

1 1/2 teaspoons coriander seeds
6 tablespoons unsalted butter
6 cardamom pods, seeds removed and crushed, pods reserved
Kosher salt and freshly ground pepper
4 pounds sweet potatoes, scrubbed and cut into 1/2-inch rounds
1/3 cup packed coarsely chopped cilantro leaves and stems

Steps:

  • Preheat oven to 450 degrees with racks in upper and lower thirds. In a small skillet over medium-high, toast coriander seeds until dark brown and fragrant, about 3 minutes. Grind in a spice grinder, or crush with a mortar and pestle.
  • In a small saucepan, bring butter, coriander, cardamom seeds and pods, 2 1/2 teaspoons salt, and 1/2 teaspoon pepper to a boil. Toss with potatoes on a rimmed baking sheet to evenly coat. Transfer half of potatoes to a second rimmed baking sheet; spread in a single layer on both sheets.
  • Roast, flipping potatoes and rotating sheets once halfway through, until potatoes are easily pierced with the tip of a knife and golden brown in places, 30 to 35 minutes. Serve, sprinkled with cilantro.

This is a good summer potato recipe--grilling the potato pieces vs. cooking them in the oven. The heat of the grill caramelizes the potato nicely and since they're already mostly cooked, burning them is less likely. Th seasonings could be varied to whatever suits you.

I've been trying to find an alternative to our usual roasted potatoes. This is a combo of a few recipes I've seen. The seasoned oil after tossing has a really neat flavour. (I was cooking them along side a roasted chicken so the temperature was lower and cooking time is longer. I have no doubt these could be done faster at a higher temp. Based on recipes I've seen, 425 Fahrenheit for about 20 minutes)

2 sweet potatoes
1 large sweet onion
3 tablespoons olive oil
1 teaspoon chili powder
1 tablespoon brown sugar
1 teaspoon coarse salt

Steps:

  • Heat 1 Tbsp of the oil in a pan.
  • Preheat oven to 325 (I was cooking them along side a roasted chicken so the temperature was lower and cooking time is longer. I have no doubt these could be done faster at a higher temperature Based on recipes I've seen, 425 Fahrenheit for about 20 minutes).
  • Slice onions and sautee until tender and brown at the edges.
  • Peel and wash potatoes then slice into rounds about a centimetre thick.
  • Combine potatoes, chili powder, brown sugar, salt and remaining oil in a bowl, toss to coat evenly.
  • Add sauteed onions and continue to toss to combine flavours.
  • Spread potato and onion mixture evenly on a baking sheet with edges or a large roasting pan that will allow the potatoes to barely overlap.
  • Toss halfway through to ensure coating and cooking is even.

Steps:

  • Preheat oven to 400 degrees. Slice sweet potatoes 1/2 inch thick, and place in a single layer on a lightly oiled baking sheet. Roast until browned on bottoms, 30 to 35 minutes. We topped these with spicy black beans, crumbled cotija cheese, and cilantro leaves. You can also try them with the cheese of your choice and chutney, salsa, or pesto.

1 teaspoon(s) mccormicks perfect pinch mexican seasoning

3 medium sweet potatoes, peeled and thinly sliced rounds
1-2 tablespoon(s) olive oil
- pinch each of nutmeg, thyme, black pepper
1 teaspoon(s) brown sugar
1/2 cup(s) panko bread crumbs, opt

Steps:

  • Peel potatoes and slice into thin rounds. Place in a bowl, drizzle with olive oil and sprinkle with spices. Using hands, mix taters well making sure they are all coated. Then add 1/2 c of panko bread crumbs and toss.
  • Lightly grease med. size cookie sheet with olive oil. Place potatoes into layers on sheet. Drizzle with a little olive oil and bake 400°° for 30 min. on upper middle rack to prevent burning.
