BAKED SWEET POTATO FRIES WITH SRIRACHA DIPPING SAUCE

4 medium sweet potatoes
3 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon paprika (optional)
Sriracha Dipping Sauce
1/4 cup reduced fat sour cream (greek yogurt can also be used)
1/4 cup light mayonnaise
1.5 teaspoons Sriracha sauce

Steps:

  • Pre-heat oven to 400 degrees F. Grease a large baking sheet with oil and set aside.
  • Scrub and cut the sweet potatoes into 1/3 inch sticks. You can go as thin or as thick as you would like but remember the thicker the are, the longer they will need to bake.
  • In a large bowl, toss sweet potatoes with olive oil, salt, pepper, and paprika. Place on the baking sheet in a single layer. be sure not to overlap for best results.
  • Bake fries, turning once and rotating pans once, until edges are lightly browned and centers are tender; 15 to 20 minutes.
  • To make sriracha dipping sauce:
  • Combine the sour-cream, light mayo, and sriracha sauce in a small bowl. Mix with a fork until fully combine and creamy.

  • Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

**sweet potatoes, peeled
**sraracha sauce
**brown sugar

Steps:

  • 1. Peel and slice potatoes into french fry size. Place in bowl and drizzle sriracha sauce over and rub well to completely coat potatoes.
  • 2. I made one potato and used a couple of tablespoons of brown sugar, use as much or little as you like. You can also add salt or black pepper if desired. Rub sugar onto potatoes.
  • 3. Place on greased baking sheet, you will probably want to use foil under the potatoes for easier clean up.
  • 4. Bake at 375° for 15 min, then flip and bake another 10-15.

  • Preheat the oven to 450 degrees.
  • Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

2 tablespoons olive oil
1 teaspoon sriracha chili-garlic sauce
2 large sweet potatoes, cut in large batons, approximately 1/4-inch-by-2 inches
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 cup sour cream or 1 cup Greek yogurt
1 small garlic clove, minced
1 tablespoon freshly squeezed lime juice
2 teaspoons sriracha chili-garlic sauce (to taste)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Whisk olive oil and sriracha together in a small bowl. Pour over sweet potatoes in a large bowl and toss to coat.
  • Combine cumin, chili powder, paprika, salt and pepper in a small bowl. Add spices to potatoes and toss to coat. Arrange potatoes in one layer on an unoiled baking sheet.
  • Bake on lowest rack 10 minutes. Turn potatoes with a spatula and bake 10 more minutes, or until golden brown on all sides.
  • While potatoes are cooking, whisk dipping sauce ingredients together in a small bowl.
  • Remove potatoes from oven and serve with sriracha dipping sauce.
