Sweet Potato Doughnuts

These little tasty bites are just perfect for a snack on a fall afternoon or even for a few quick bites on a busy morning. They're moist on the inside with a slight crunch on the outside. Dust them with some powdered sugar and watch 'em disappear!

2 c sweet potatoes, boiled & pureed
1/2 c flour
1/2 c sugar
1 Tbsp baking powder
1 bottle cooking oil, for deep frying

Steps:

  • 1. Boil sweet potatoes until soft. Smash or puree in a separate bowl.
  • 2. Mix sweet potatoes with the sugar and then sift flour in and also your baking powder.
  • 3. Use your deep fryer or a large deep pot. Heat 1qt. of oil on Medium high to medium heat.
  • 4. Shape into 1 inch size balls and drop into hot deep fryer. Let cook on all sides until golden brown.
  • 5. Remove from oil and you're done. Enjoy with your morning coffee if you have leftovers... :-)

I was looking for a "healthy" donut recipe that used the deep-frying method, not the oven-baked method, since I just got a deep fryer. I couldn't find what I was looking for, so combined the Plain Cake Doughnut recipe, with another healthier recipe, then added a few extra touches with a friend one rainy day, and came up with this.

1 quart oil for frying, or as needed
2 cups all-purpose flour
3 tablespoons all-purpose flour
½ cup brown sugar
1 tablespoon baking powder
1 teaspoon salt
¼ teaspoon ground cinnamon
1 dash ground nutmeg
2 tablespoons unsalted butter, melted
¼ cup mashed sweet potatoes
¼ cup milk
¼ cup applesauce
1 large egg
1 teaspoon vanilla extract

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Combine 2 cups plus 3 tablespoons flour, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl. Stir in melted butter until crumbly.
  • Combine sweet potatoes, milk, applesauce, egg, and vanilla extract in a medium bowl. Mix well.
  • Pour wet ingredients into dry ingredients and combine, kneading well.
  • Turn out onto a well floured surface and roll to 1/4-inch thickness. Cut with a donut cutter.
  • Slowly lower the doughnuts into the hot oil. Fry in batches, turning once, until golden, about 2 minutes.

4 eggs
¼ cup white sugar
1 teaspoon vegetable oil
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup white sugar
1 teaspoon ground cinnamon
1 cup vegetable oil for frying

Steps:

  • In a large bowl combine eggs with 1/4 cup sugar and beat until thick and lemon-colored. Add the oil. Combine separately 1-1/2 cups of the flour, the baking powder and the salt. Gradually add this to the egg mixture and beat well.
  • Turn dough out onto a floured board (use remaining 1/2 cup flour) and knead thoroughly until dough is smooth.
  • Shape dough into sixteen balls. Roll each one into a circle about 5 inches in diameter. Let stand uncovered on waxed paper for about 10 minutes.
  • Heat oil in a deep fry pan to 350 degrees F (175 degrees C). Fry circles until golden brown, turning once. Drain on paper towels. Sprinkle with sugar/cinnamon mixture. Store airtight.

3 tablespoons butter, softened
1 cup sugar
3 large eggs, room temperature
1 cup mashed sweet potatoes
1/2 cup buttermilk
1 teaspoon vanilla extract
3-1/2 cups self-rising flour
2 tablespoons pumpkin pie spice
3/4 teaspoon salt
Oil for deep-fat frying
TOPPING:
1 cup sugar
4 teaspoons ground cinnamon

Steps:

  • In a large bowl, beat butter and sugar until blended. Beat in eggs, sweet potatoes, buttermilk and vanilla. In another bowl, whisk flour, pie spice and salt; gradually beat into creamed mixture., Turn onto a well-floured surface; pat to 1/2-in. thickness. Cut with a floured 3-in. doughnut cutter. In an electric skillet or deep fryer, heat oil to 375°. Fry doughnuts, a few at a time, 2-3 minutes on each side or until golden brown. Drain on paper towels. 3 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs, lightly beaten
1 cup sour cream
1 cup cooked mashed sweet potato (I roasted mine)
vegetable oil, for frying

Steps:

  • In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  • In a large bowl, combine eggs, sour cream, and sweet potato.
  • Gradually add flour mixture, stirring to combine.
  • Turn dough out onto a heavily floured surface.
  • Knead in flour with hands as needed (dough will be sticky).
  • Roll out dough to 1/2-inch thickness.
  • Cut out dough with a 2 1/4-inch round doughnut cutter.
  • No doughnut cutter? Use a soup can as a cutter then poke a hole in the middle of the dough round.
  • Using your fingers, stretch the dough until an inch opening is formed and the doughnut is about 3 " wide.
  • Re-roll dough as needed.
  • In a Dutch oven, heat vegetable oil over medium heat to 360 degrees F.
  • Cook doughnuts, in batches of 4-5, in hot oil, 2 minutes per side, or until lightly browned.
  • Drain on paper towels.
