This sweet potato casserole is certainly a delight! The sweet potatoes are creamy and luscious. The praline topping is crunchy, sweet and nutty, giving you that perfect praline flavor. Put this on the dessert table and no one would know it wasn't a dessert.

3 c cooked, mashed sweet potatoes (about 3 medium)
1 c white granulated sugar
1/2 c evaporated milk
1 tsp vanilla extract
1/4 c butter or margarine, melted (1/2 stick)
2 eggs, beaten
1/2 tsp salt
TOPPING:
1/2 c butter or margarine, melted (1 stick)
1 c light brown sugar
1/2 c self-rising flour
1 c pecans, chopped

Steps:

  • 1. Boil sweet potatoes in Dutch oven until soft, about 1 hour. On cutting board or other prep surface, use a knife to cut potato skins length-wise and peel away skins of hot potatoes with fork. Skins should easily come off. Discard skins and place potatoes in large mixing bowl.
  • 2. Using a hand mixer, mash potatoes. Add white sugar, evaporated milk, vanilla extract, 1/4 cup of melted butter or margarine, eggs, and salt. Mix all ingredients together until well blended. Set aside.
  • 3. For Topping: Melt 1/2 cup butter or margarine. Cool slightly. Stir in brown sugar. Add flour, then pecans. Mix thoroughly.
  • 4. Pour potato mixture into a 9" X 13" buttered casserole dish. Sprinkle topping over potato mixture, covering completely. Bake at 350 degrees F for 30 minutes. Serve warm.

2 3/4 lb sweet potatoes
1 1/4 c granulated sugar
1/3 c light brown sugar
1/4 tsp cinnamon
1/8 tsp freshly grated nutmeg
1/8 Tbsp salt
5 eggs
2 c semisweet chocolate chips
1/2 bag mini marshmallows
graham cracker crumbs
chocolate syrup
caramel topping (optional)

Steps:

  • 1. Preheat the oven to 350 degrees F. Bake the sweet potatoes on a baking sheet for about 1 hour, or until soft when pierced. 3 .Let cool; remove the skins. Purée the potatoes in a food processor. In a medium bowl, combine the sugars with the cinnamon, nutmeg and salt. In a large bowl, lightly whisk the eggs. Whisk in 3 cups of the sweet potatoes, then the sugar mixture. Spoon half the mixture into a 9x 13 baking dish that has been sprayed with non stick baking spray.?Top with half the chocolate . Cover with the rest of the mixture. Arrange the remaining chocolate chips on top. Add a few more if needed? Bake in the center of the oven for about 1 hour Take out and top the dish with a bag of mini marshmallows. Put back in the oven until marshmallows are golden. Sprinkle graham cracker crumbs on top Top with chocolate syrup .Top with caramel syrup (optional)

4 large sweet potatoes, peeled and quartered
1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup packed brown sugar
1/2 teaspoon almond extract
3 egg whites
1/4 cup slivered almonds

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender. Drain potatoes; place in a large bowl and mash. Stir in the orange marmalade, orange juice, brown sugar and extract. Cool slightly., In a small bowl, beat egg whites until stiff peaks form. Fold into sweet potato mixture. Transfer to a 2-1/2-qt. baking dish coated with cooking spray. Sprinkle with almonds. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

4 tablespoons chopped nuts
1 ripe banana
1 medium sweet potato, cooked
1 teaspoon oil
1 tablespoon maple syrup (optional) or 1 tablespoon honey (optional)

Steps:

  • In a large frying pan, dry roast the nuts for a few minutes. Shake the pan often.
  • Cut the banana in half lengthwise. Cut the sweet potato in 1/2 inch slices.
  • Add the oil to the pan. Push the nuts to the outer edge and add the banana pieces to the pan. Add the sweet potatos.
  • Cover and cook for 2 minutes. Uncover and cook for 5 minutes until everything is heated through and browned on one side.
  • Drizzle with syrup or honey before serving.

3 cups sweet potatoes mashed
1 can Pet Evaporated Milk
3 eggs
1/2 cup light brown sugar
1/2 stick margarine
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
Topping
1 cup crushed corn flakes
1/2 cup chopped pecans
1/2 cup light brown sugar
1/4 cup margarine
1/2 cup coconut

Steps:

  • Mix together well all ingredients (except topping) and pour into baking dish.
  • Bake at 375 degrees F for 20 - 25 minutes
  • Topping: Melt margarine add sugar and chopped nuts and mix well. Spread over the sweet potato mix hot out of the oven. Put it back into the oven at 400 degrees F for 15 minutes, watch that the coconut does not burn.

George's Sweet Potato Delight image

George, my housemate, does most of the cooking at our house. For Thanksgiving dinner, he created a sweet potato dish to die for. I don't have a picture yet, but a digital camera is at the top of my Christmans list and I will take a picture at Christmas and post it. George is a trained cook and former owner of a restaurant and catering business, which he sold after suffering a stroke. Geoge doesn't measure, but has a good eye for amounts, so we wrote down his "eyeball" amounts of ingredients. Hope you like it.

3-4 cup(s) sweet potatoes, fresh, peeled and cut in one inch chnks
3 small apples, golden delicious, peeled and cut into one inch chunks
1 cup(s) craisins
1 cup(s) golden raisins
4 tablespoon(s) butter, melted (or more)
2/3 cup(s) brown sugar
1 teaspoon(s) cinnamon, or to taste
1/2 tablespoon(s) nutmeg, or to taste

Steps:

  • Preheat oven to 350 degrees. Have an 8x8 glass casserole dish ready.
  • In bowl, mix sweet potatoes, apples, Craisins and raisins.
  • In microwave melt butter. Add brown sugar and add to sweet potato mixtue. Mix together.
  • Add Cinnamon and Nutmeg and mix in.
  • Place in baking dish and bake for 1 hour.
