2 large sweet potatoes (about 12 ounces each), cut into 1-inch pieces
1 tablespoon canola oil
14 ounces fresh chorizo or bulk spicy pork sausage
2 cups (8 ounces) queso fresco or shredded Mexican cheese blend
1 large egg
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup panko bread crumbs
Oil for deep-fat frying
Pretzel sticks and fresh cilantro leaves

Steps:

  • Preheat oven to 400° Place sweet potatoes on a 15x10x1-in. baking pan. Drizzle with oil; toss to coat. Roast potatoes 30-40 minutes or until tender. Meanwhile, in a large skillet, cook chorizo over medium heat 6-8 minutes or until no longer pink. Drain and transfer to a large bowl., Mash potatoes; add to chorizo. Stir in cheese, egg, paprika, salt and pepper. Refrigerate until cold, about 1 hour., Shape into 1-1/4-in. balls. Place bread crumbs in a shallow bowl. Roll balls in crumbs to coat. In an electric skillet or a deep fryer, heat oil to 375°. Fry balls in batches 4-6 minutes or until golden brown, turning occasionally. Drain on paper towels., Decorate with pretzel sticks and cilantro.

Sweet potatoes and cheese are flavored with cumin, smoked paprika, black pepper and cayenne for warmth, smokiness and a little bit of a kick. Once these croquettes are breaded and deep fried, a crisp crust delicately encapsulates the soft and gooey mixture within. They are very straightforward to prepare, but the process makes them a labor of love, perfect for entertaining or simply showing off your kitchen prowess.

Number Of Ingredients 13

2 pounds sweet potatoes (about 4 medium), peeled and cut into 1-inch chunks
2 teaspoons kosher salt
4 ounces sharp Cheddar, shredded (about 1 packed cup)
1/2 cup/65 grams all-purpose flour
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/4 teaspoon ground cayenne
1 cup/130 grams all-purpose flour
3 whole eggs, beaten with 2 tablespoons vegetable oil
1 1/4 cups/125 grams plain fine bread crumbs
About 4 cups vegetable, canola, peanut or other neutral oil, for stovetop shallow frying
Kosher salt

Steps:

  • Put the sweet potatoes and 1 teaspoon salt in a pot and cover with an inch or two of water. Bring to a boil, reduce to a simmer and cook until tender, 10 to 12 minutes. Drain the potatoes, transfer to a bowl, mash with a fork, and let cool for at least 30 minutes. (You can also do this step ahead and let the mashed sweet potatoes cool in the refrigerator overnight.)
  • Add the cheese, flour, cumin, paprika, black pepper and cayenne to the mashed sweet potatoes and mix until evenly combined. Use a medium cookie scoop (a scant 2 tablespoons) to portion the mixture onto a baking sheet lined with parchment. Freeze until solid, at least 1 hour.
  • Prepare to bread the croquettes: Set up a standard breading procedure in three bowls - flour, egg-and-oil mixture and bread crumbs.
  • Dip each piece in the flour, shaking off any excess, in the egg mixture (turning it a few times to make sure it is completely coated), then in the bread crumbs. Set each breaded croquette on the baking sheet. Refreeze the finished, breaded croquettes until firm. (These can live in your freezer for months.)
  • Add enough neutral oil to a deep-sided pot or pan to reach a depth of 1 1/2 to 2 inches, and heat over medium until shimmering, or when a thermometer reads between 325 and 350 degrees. Working in batches, fry the frozen croquettes, stirring occasionally, until nicely browned all over and piping hot in the center, about 5 minutes. (When frying, it's important to moderate the heat to keep as steady a temperature as possible. Adding frozen products to hot oil brings the temperature down, as does crowding.)
  • Using a slotted spoon, remove cooked croquettes to a baking rack and immediately sprinkle with a little salt before serving.

I came up with this recipe for Thanksgiving to serve as a vegetarian main dish that would marry well with gravy and cranberry sauce. It hit the spot for that purpose, but we'll be making it again and again for more casual meals.

3 large red potatoes, peeled and diced
2 sweet potatoes, peeled and diced
1 ½ cups cooked rice
¼ cup milk
¼ cup butter, divided
1 teaspoon salt, divided
1 tablespoon olive oil
1 cup finely chopped cremini mushrooms
1 tablespoon minced garlic
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh marjoram
2 tablespoons Madeira wine
1 ½ cups bread crumbs
½ cup grated Parmesan cheese
½ teaspoon ground black pepper
½ teaspoon dried marjoram
½ teaspoon dried thyme
¼ cup canola oil

Steps:

  • Place red potatoes and sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Add rice, milk, 2 tablespoons butter, and 1/2 teaspoon salt into the pot; mash until combined.
  • Cover and refrigerate potato mixture until cool, about 15 minutes.
  • Heat remaining 2 tablespoons butter and olive oil in a large skillet. Add mushrooms, garlic, fresh thyme, and fresh marjoram; cook and stir until mushrooms release their moisture and are tender, about 15 minutes. Pour in Madeira wine, scraping up browned bits from the bottom of the pan with a wooden spoon.
  • Place 1/4 cup of the cooled potato mixture in the palm of 1 hand; flatten slightly. Place 1 tablespoon of the mushroom mixture in the center; form potato mixture into a ball around mushroom mixture using the back of a spoon. Repeat with remaining potato and mushroom mixtures.
  • Combine 1/2 teaspoon salt, bread crumbs, Parmesan cheese, pepper, dried marjoram, and dried thyme in a shallow dish. Drop potato balls gently into the bread crumb mixture; roll around until coated. Press down to flatten potato balls into patties.
  • Heat canola oil in a large skillet over medium heat. Cook patties 4 at a time until golden and crispy, about 4 minutes per side.

1/3 cup chopped onion
2 tablespoons unsalted butter
1/4 cup all-purpose flour 1/2 cup additional for dredging the croquettes
1/4 cup milk
1/4 cup chicken broth
2 cups finely chopped cooked turkey
1/2 cup mashed sweet potatoes
1/8 teaspoon cayenne
an egg wash made by beating lightly 2 large eggs with 1 tablespoon water
1 1/2 cups fine fresh bread crumbs
For the salsa
1/2 cup finely chopped picked-over fresh cranberries
3/4 cup finely chopped Granny Smith apple tossed with 1 tablespoon lemon juice
1 tablespoon honey
2 scallions, chopped fine
3 tablespoons golden raisins, chopped fine
2 fresh jalapeño or serrano chilies, or to taste, seeded and minced (wear rubber gloves)
vegetable oil for deep-frying the croquettes

Steps:

  • Make the croquettes:
  • In a small saucepan cook the onion in the butter over moderately low heat, stirring, for 5 minutes, stir in 1/4 cup of the flour, and cook the roux mixture over low heat, stirring, for 3 minutes. Stir in the milk and the broth, cook the mixture, stirring, until it forms a paste, and cook the paste, stirring, for 3 minutes. Remove the pan from the heat, stir in the turkey, the sweet potatoes, the cayenne, and salt and black pepper to taste, and combine the mixture well. Chill the turkey mixture, covered, for 2 hours, or until it is firm, and roll level tablespoons of it into balls. Dredge the balls in the additional 1/2 cup flour, shaking off the excess, coat them thoroughly with the egg wash, letting the excess drip off, and dredge them in the bread crumbs, transferring them to wax paper as they are coated. The croquettes may be made up to this point 1 month in advance and kept wrapped well and frozen. Thaw the croquettes for 1 hour. If serving the croquettes immediately, let them dry at room temperature for 1 hour.
  • Make the salsa while the croquettes are thawing or drying:
  • In a small bowl combine well the cranberries, the apple, the honey, the scallions, the raisins, the chilies, and salt to taste and chill the salsa, covered, for 1 hour.
  • In a large saucepan heat 2 inches of the oil until a deep-fat thermometer registers 365°F., in it fry the croquettes in batches for 1 to 1 1/2 minutes, or until they are golden brown, and transfer them with a slotted spoon to paper towels to drain. Serve the croquettes with the salsa.

1 1/2 pounds yams (red-skinned sweet potatoes), peeled, cut into 1-inch pieces
1/3 cup sugar
1/2 teaspoon vanilla extract
1 egg yolk
1/2 cup cornflake crumbs
1 cup all purpose flour
Vegetable oil (for deep frying)
Powder sugar
Honey

Steps:

  • Steam yams until tender, about 15 minutes. Place in large bowl. Add sugar and vanilla and mash well. Mix in yolk and cornflake crumbs.
  • Line baking sheet with foil. Place flour in medium bowl. With floured hands, shape
  • 1 round tablespoonful of yam mixture into 1 1/2-round; roll in flour to coat completely. Place on prepared baking sheet. Repeat with remaining yam mixture. (Can be made 2 hours ahead. Let stand at room temperature.)

2 cups crushed corn flakes

  • Rub softened butter on the sweet potatoes. Bake whole potatoes until done. Peel potatoes and and mash. Season with sugar, butter, and lemon juice. Make croquettes by shaping potatoes around marshmallows. Chill one hour. Dip into egg and roll in cornflake and pecan mixture. Deep fry croquettes in oil at 375 degrees until golden brown.
