Yam Candy (Aka) Sweet Potato Candy image

I thought I would share some of my favorites, These are some that I have to make quite often. this is a hand me down recipe.

Yield 30 balls

Number Of Ingredients 8

1 lb powdered sugar
1/3 lb margarine, softened
1 1/2 teaspoons vanilla extract, pure
1/8 teaspoon almond extract, pure
1 1/2 cups sweet potatoes, baked
1 1/2 teaspoons milk
1 -1 1/2 cup angel flake coconut
1 teaspoon cinnamon

Steps:

  • Bake sweet potato as you would a plain potato.
  • When done use only insides of potato.
  • Measure out 1 1/2 potato let cool completely.
  • In a bowl Sift sugar, mix well with margarine, milk , cinnamon, almond extract, vanilla extract and cooled sweet potato.
  • Knead until smooth with your hands until mixed well.
  • Add coconut.
  • Shape into balls about 1 1/2 inches round.
  • Dust with powdered sugar.
  • Refrigerate.
  • makes around 25-30 balls.

My children love this old-fashioned potato candy. It's so easy to make and I always have the ingredients on hand. Nutella would also work as a filling in place of peanut butter. -Bonnie Presley, Lovely, Kentucky

1 medium potato, peeled and cubed
5 to 5-1/2 cups confectioners' sugar
1/2 cup creamy peanut butter

Steps:

  • Place potato in a small saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Drain. Transfer to large bowl., Using a stand mixer, beat potato until smooth. Leave only 1/2 cup in bowl (save remaining for another use). Beat in 4 cups sugar until smooth. Gradually add enough remaining sugar until dough forms a ball., Divide dough in half. On a surface dusted with confectioners' sugar, roll half of dough into a 10x7-in. rectangle. Spread 1/4 cup peanut butter to within 1/2 in. of edges. Roll up jell-roll style, starting with a long end. Cover and refrigerate until firm, at least 1 hour. Repeat with remaining dough and peanut butter. Cut into 1/4-in. slices. Store in the refrigerator.

1 lb dried apricot, finely chopped
4 cups flaked coconut
2 cups chopped pecans (chopped & toasted*)
1 1/2 cups sweet potatoes, cooked (or canned)
14 ounces sweetened condensed milk (1 can)
2 lbs powdered sugar

Steps:

  • PREPARATION:.
  • Mix all ingredients in large bowl. Chill 2 hours or until firm enough to handle. Shape chilled mixture into 1-inch balls. To make these more festive, dip in white chocolate or press a pecan into each candy before serving. Store in a tightly covered container in the refrigerator.
  • *To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.
