1 tablespoon peanut oil
1/2 cup chopped onions
2 teaspoons minced garlic
3 medium sweet potatoes (about 2 1/2 pounds total), peeled and cut into 1-inch cubes
4 cups vegetable or chicken stock
1 medium jalapeño, seeded and finely chopped
1 cup fresh or frozen corn kernels
2 tablespoons molasses
1/2 tablespoon kosher salt
1/4 teaspoon ground cayenne
1/4 teaspoon black pepper
Scant pinch ground cinnamon
Finely chopped scallions, green parts only

Steps:

  • In a large saucepan or soup pot, heat oil over medium heat. Add onions and garlic and sauté until just soft, 2 to 3 minutes. Add sweet potatoes and stock and bring to a boil.
  • Reduce heat and simmer until potatoes are soft, about 10 minutes. Remove from heat. Using an immersion blender or a food processor, purée contents of pot, in batches if necessary, until smooth.
  • Reheat soup, stirring in jalapeño, corn, molasses, salt, cayenne, black pepper and cinnamon. Taste, adjust seasonings and serve, topped with scallions.

2 tablespoons butter
3 cloves garlic, finely chopped
1 Vidalia onion, finely chopped
1/2-inch knob ginger, peeled and finely chopped
Kosher salt and freshly ground black pepper
1 chipotle pepper, canned in adobo sauce
4 cups chicken broth
1 1/4 cups apple cider
2 large sweet potatoes, peeled and cubed (about 2 pounds)
3/4 cup heavy whipping cream
Sour cream, for serving, optional

Steps:

  • Add the butter to a large soup pot over medium-high heat. Once the butter melts and becomes foamy, add the garlic, onions and ginger and saute until tender and fragrant, 3 to 4 minutes. Season with salt and pepper. Add the chipotle pepper and saute for 1 minute longer while breaking it up with a wooden spoon. Add the chicken broth, apple cider and sweet potatoes. Bring to a simmer and cook until the sweet potatoes are tender, about 20 minutes.
  • Puree the soup using an immersion blender until smooth and velvety. Finish by stirring in the heavy cream. Top each bowl with sour cream if using.

1 medium sweet potato
1 tablespoon olive oil
2 medium carrots, roughly chopped
1 rib celery, roughly chopped
1 sweet onion, roughly chopped
1/2 teaspoon kosher salt, plus more as needed
4 cloves garlic, peeled and chopped
2 sprigs fresh thyme
1 bay leaf
One 14.5-ounce can fire-roasted diced tomatoes
1/4 teaspoon cayenne pepper
4 cups unsalted vegetable broth, or more as needed
1/4 cup heavy cream
Freshly ground black pepper
Micro basil, for garnish
Pesto Grilled Cheese Croutons, recipe follows
2 cups packed fresh basil
2 cloves garlic, roughly chopped
1/4 cup pine nuts, toasted
1/4 cup freshly grated Parmigiano-Reggiano
1 teaspoon lemon zest
Pinch kosher salt, plus more as needed
1/4 cup extra-virgin olive oil
Eight 1/2-inch slices bread, cut from a loaf of pain de mie
4 slices sharp or extra-sharp aged Cheddar, thinly sliced
3 tablespoons unsalted butter, softened
3 tablespoons mayonnaise

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sweet potato on a baking sheet and bake until soft, 35 to 40 minutes. Allow to cool, then peel it.
  • Meanwhile, heat a large deep skillet over medium-high heat. Add the olive oil and heat until just hot. Add the carrots, celery, onion and salt. Cook, stirring occasionally, until the onions just turn translucent, about 5 minutes. Add the garlic, thyme and bay leaf and cook, stirring occasionally, until the vegetables are nice and brown, 5 to 7 minutes.
  • Stir in the tomatoes with their juices and cayenne, then stir in the broth. Bring to a boil, then reduce the heat to maintain a steady simmer until the carrots are tender, about 15 minutes. Remove and discard the thyme sprigs and bay leaf. Add the roasted sweet potato.
  • Using a blender, puree the soup until silky smooth. Return the soup to the skillet and heat on low. Stir in the cream. For a thinner soup, stir in more broth. Season to taste and serve hot with the micro basil and Croutons.
  • To the bowl of a food processor, add the basil, garlic, pine nuts, Parmesan, lemon zest and salt. Pulse until the mixture forms a chunky paste, scraping down the sides and bottom of the bowl occasionally. With the machine running, add the olive oil in a steady stream. Keep processing until the desired consistency is reached, pulsing less for a more coarse pesto and more for a smooth one. Season to taste.
  • To make the sandwiches: Spread some pesto on 1 side of 2 slices of bread. Arrange a slice of Cheddar over the pesto on 1 slice of bread. Sandwich with the other slice of the bread, pesto-side down. Repeat with remaining pesto, bread and Cheddar.
  • Mix the butter and mayo together in a small bowl. Spread a generous layer on both sides of each sandwich.
  • Place the sandwich in a nonstick skillet and turn the heat to medium-low. Cook, turning occasionally, until the bread is nice and toasty and golden brown, the cheese is melty and the sandwich is heated through. Repeat with the remaining sandwiches. Cut into croutons.

6 medium carrots, chopped (2 cups)
1 medium onion, chopped (1 cup)
3 garlic cloves, minced

1-3/4 pounds sweet potatoes (about 4 medium), peeled and cubed
3 bay leaves
2-1/2 teaspoons curry powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon smoked paprika

1-1/2 cups heavy whipping cream
1 cup sour cream
MINTED CHILI OIL:
18 mint sprigs, chopped
3 tablespoons olive oil
1/4 teaspoon sugar

1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add carrots and onion to drippings; cook and stir over medium-high heat until tender. Add garlic; cook 1 minute longer., Stir in water, sweet potatoes, bay leaves, curry, salt, cinnamon, paprika and pepper. Bring to a boil. Reduce heat; simmer, covered, until vegetables are tender, 10-15 minutes. Discard bay leaves. Stir in cream and sour cream just until blended. Cool., Meanwhile, in a small bowl, combine mint, oil, sugar, salt, pepper flakes and pepper. Let stand 5-10 minutes., Process bisque in batches in a blender until smooth; return all to the pan. Heat through (do not boil). Ladle bisque into bowls; drizzle with minted chili oil.

This soup is perfect in winter-time. The root vegetables are comforting and the ginger is warming. Increase or decrease the amount of ginger to suit your taste. Chicken or vegetable stock may be substituted for the water. Either a blender or food processor can be used to puree the soup. If desired, add cream instead of yogurt to enrich the taste.

  • Place the squash, sweet potatoes, onion, ginger, and garlic in a large pot. Pour in enough water to cover the vegetables. Bring to simmer over medium heat, and cook until vegetables are tender and can be easily pierced with a fork, 30 to 45 minutes.
  • Remove pot from heat. Place soup in batches into a blender or the bowl of a food process. Pulse until smooth. Return soup to pot, and whisk in yogurt. Season with salt and pepper to taste. If necessary, reheat soup over low heat, but do not allow to boil.

I tried out for the show 'Master Chef' this past October in New York City. One of my fellow contestants made a pumpkin soup with applewood bacon. He made it to the next round, but sadly I did not. This is my rendition of his soup. I made it my own by using butternut squash and sweet potato and made it richer by turning this into a bisque. I hope you enjoy it as much as I did. Please share your comments. For less-fat option substitute half-and-half with milk or nonfat half-and-half.

1 (2 pound) butternut squash - peeled, seeded, and cubed
1 pound sweet potatoes, peeled and cubed
2 tablespoons olive oil
salt and ground black pepper to taste
8 slices applewood-smoked bacon
1 tablespoon butter
1 large onion, chopped
2 cloves garlic, chopped
½ cup white wine
1 ½ quarts chicken stock
1 ½ cups half-and-half
1 teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine squash, sweet potatoes, olive oil, salt, and pepper together in a bowl; toss to coat. Pour out onto a baking sheet.
  • Bake in the preheated oven, flipping the vegetables once, until slightly caramelized and tender, about 60 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly crisp, 7 to 10 minutes. Reserve 1 tablespoon bacon drippings. Drain the bacon slices on paper towels; crumble bacon.
  • Heat bacon drippings and butter together in Dutch oven over medium heat. Saute onion and butter in hot butter mixture until onion is translucent, 7 to 10 minutes.
  • Pour the white wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook until white wine is reduced by half, 3 to 5 minutes.
  • Stir roasted squash mixture into onion mixture; add stock and bring to a boil. Reduce heat to low and simmer until all vegetables are tender, about 10 minutes.
  • Pour vegetable mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to Dutch oven.
  • Stir half-and-half into pureed soup; cook and stir over medium-low heat until soup is warmed through, about 5 minutes. Stir nutmeg into soup; season with salt and pepper to taste. Ladle into bowls and top each with crumbled bacon.

2 tablespoons extra virgin olive oil
2 medium carrots, coarsely chopped
1 celery rib, coarsely chopped
1 large sweet onion, coarsely chopped
kosher salt
1 jalapeno chile, stemmed, seeded, and chopped
4 garlic cloves, chopped
2 sprigs fresh thyme
4 fresh basil leaves
1 (14 1/2 ounce) can fire-roasted tomatoes, diced
1 quart vegetable stock (or store-bought unsalted vegetable broth, plus more if desired)
1 medium sweet potato, peeled and chopped
1/4 cup heavy cream
fresh ground black pepper

Steps:

  • Heat a large saucepan over medium-high heat.
  • Add the oil and heat until just hot. Add the carrot, celery, onion, and ½ teaspoon salt. Cook, stirring occasionally, until the onions just turn translucent, about 5 minutes.
  • Add the jalapeno, garlic, thyme, and basil. Cook, stirring occasionally, until the vegetables are nice and brown, about 7 minutes.

  • Bring to a boil, then reduce the heat to maintain a steady simmer. Simmer until the sweet potato is very, very tender, about 1 hour. The sweet potatoes should be soft enough to mash easily with the back of a spoon.

  • Using an immersion blender or stand blender (working in batches if necessary), puree until silky smooth.
  • Reheat the soup over low heat.
  • Stir in the cream.
  • For a thinner soup, stir in more stock.

  • In a 4-qt saucepan or similar size soup pot, combine the onion and oil. Cook over med-high heat, stirring frequently, 3-4 minutes, until onion is soft and beginning to brown.
  • Stir in the broth, sweet potatoes, ginger root, thyme, allspice, and crushed red pepper. Bring to a boil over high heat. Reduce the heat; simmer, uncovered, stirring occasionally, until the sweet potatoes are just tender, 7-8 minutes.
  • Scoop up 3 1/2 cup vegetables, then 1 cup broth from pan and place in a food processor. Process until completely pureed and smooth. Return the pureed mixture to the saucepan.
  • Combine about 2/3 of the canned tomatoes and the peanut butter in the processor. Process until well blended. Return the pureed mixture, then the remaining tomatoes, to the saucepan.

2-3 shallots, minced
1 large onion
4 T butter (2 T olive oil for sauteing and 1/3 cup cream for base)
5 carrots
3 turnips
1 white sweet potato
1 red sweet potato
3-4 cups vegan, no salt bouillon
handful fresh, chopped parsley
1 T thyme
2 bay leaves
pinch of nutmeg
pinch of sage
sea salt and fresh ground pepper, to taste

Steps:

  • Peel and dice onions, shallots, potatoes, turnips, carrots. Saute in butter (or olive oil). Add thyme, sage, nutmeg, salt, and pepper. Add fresh parsely. Add stock and cream as necessary. Food process mixture to bisque. Simmer for 30 minutes (or longer for more robust flavor).

1 large sweet potato, peeled and cubed
2 medium parsnips, peeled and chopped
1 medium turnip, peeled and chopped
1 yellow onion, chopped
2 garlic cloves, minced
1 (32 ounce) container chicken stock
1 cup heavy cream
2 teaspoons extra virgin olive oil
sour cream
flat leaf parsley, chopped

Steps:

  • In a 6-8 quart soup pot saute the onion and garlic in the olive oil until the onion is softened.
  • Add the sweet potato, parsnip and turnip and cook until softened, about 8 minutes, stirring occasionally.
  • Add the chicken stock and bring to a boil.
  • Boil uncovered for 15 minutes or until vegetables are tender.
  • Puree using either a stick/immersion blender or by transferring to a blender and then back to the pot.
  • Slowly add the heavy cream into the puree.
  • Ladle into bowls and garnish with a dollop of sour cream and a sprinkle of chopped flat leaf parsley.

1/2 small onion, diced

Salt and freshly ground black pepper, for seasoning, plus 1 1/2 teaspoons salt
1 cup frozen corn, thawed
1 1/2 pounds sweet potatoes, peeled and diced
2 cups chicken broth
2 cups apple juice
2 teaspoons poultry seasoning (recommended: Savory Spice Shop s Sage and Savory Stuffing Seasoning)
1/2 teaspoon finely ground white pepper
1/8 teaspoon ground allspice
1/8 teaspoon cayenne pepper
1/2 cup heavy cream
Sage and Savory Croutons, for serving, recipe follows
1 cup cubed French bread
2 tablespoons olive oil
1 teaspoon poultry seasoning (recommended: Savory Spice Shop s Sage and Savory Stuffing Seasoning)

Steps:

  • Add butter and oil to a large saucepan over medium-high heat. Once the butter foams, add the onion and garlic and saute until soft, about 3 to 4 minutes. Season with salt and pepper, to taste. Add the corn and cook for 1 more minute.
  • Add the sweet potatoes, chicken broth, apple juice, 2 teaspoons seasoning, white pepper, remaining 1 1/2 teaspoons of salt, allspice, and cayenne. Bring to a boil, then reduce the heat and simmer until the potatoes are cooked through and fork tender, about 20 minutes.
  • Use an immersion blender and puree the bisque until smooth. Taste for seasoning, then stir in the heavy cream. Rewarm over low heat. Transfer to serving bowls and garnish with Sage and Savory Croutons.
  • Heat olive oil in saucepan over low heat. Carefully add the bread to the saucepan and toss until browned. While browning, sprinkle with poultry seasoning. Transfer to a bowl and set aside.

32 ounces chicken broth
2 cups chopped carrots
1 large sweet potato (peel and chop)

1/2 cup plain yogurt (or Mayo if you want non-dairy)
French-fried onions (like used in the traditional green bean casserole)

chow mein noodles

Steps:

  • Put both carrots and sweet potato into large kettle with the chicken broth and simmer until the veggies are tender (20 minutes or so), adding water if needed to keep veggies covered.
  • Saute onion in butter.
  • When onion is translucent add to pot of veggies.
  • Cool mixture for 15 minutes.
  • Place mix into blender 2 cups at a time and puree until smooth.
  • When all of mixture is pureed, add spices and blend.
  • Simmer about 15 minutes.
  • Blend in yogurt (or mayo) right before serving.
  • Serve with toppings on the side (my kids will eat almost anything they can add toppings to!).

This recipe was published in the New York Times today. It's a New Orleans recipe that was salvaged from Hurricane Katrina, originally published in the Times-Picayune. It was Judy Laine's recipe, a hurricane survivor whose home was flooded with 10 feet of water and who broke both legs during the storm. It's comforting and very inexpensive. Some bisques are vegetarian, but most all have cream. This doesn't, so I'm not sure why it's called a bisque. It's sweet and hot at the same time. I recommend you use less cayenne and jalapeno if you prefer less spicy. Molasses gives it an appealing and distinctive taste, though I'm sure you could use other sweeteners if you don't have any.

1 tablespoon peanut oil
1/2 cup onion, chopped
2 teaspoons garlic, minced
3 sweet potatoes, peeled and cut into 1 inch cubes (about 2 1/2 punds)
4 cups vegetable stock
1 medium jalapeno, seeded and finely chopped
1 cup corn kernel (fresh or frozen)
2 tablespoons molasses
1/2 tablespoon kosher salt
1/4 teaspoon ground cayenne pepper
1/4 teaspoon black pepper
1 pinch ground cinnamon
scallion, finely chopped green parts only

Steps:

  • In a large saucepan or soup pot, heat oil over medium heat. Add onions and garlic and saute until just soft, 2 to 3 minutes. Add sweet potatoes and stock and bring to a boil.
  • Reduce heat and simmer until potatoes are soft, about 10 minutes. Remove from heat. Using an immersion blender, regular blender or food processor, puree contents of pot, carefully and in batches if necessary, until smooth.
  • Reheat soup, stirring in jalapeno, corn, molasses, salt, cayenne, black pepper and cinnamon. Taste, adjust seasoning and serve, topped with scallions.

2 large carrots, peeled
1 extra large sweet potato, peeled
2 large sprigs of fresh thyme
1 medium butternut squash, halved and seeded
1 large leek (white & light green only), diced
1 medium Spanish onion, diced
2 tbsp. olive oil, divided
2 tbsp. butter
5-7 sage leaves
1 large bay leaf
4 cups vegetable broth
1.5 cups whole milk
Salt and pepper to taste
Mascarpone cheese (to serve)
Fresh-cracked pepper (to serve)
You will also need:
2 large rimmed baking sheets
1 heavy-bottomed, 4-6 qt. stockpot

Steps:

  • 1. Preheat oven to 350 degrees. 2. Cut carrot and sweet potato into 1-inch pieces and place in large mixing bowl. Add thyme leaves (removed from stems), salt lightly, and drizzle with 1 tbsp. olive oil. Toss to coat, then spread pieces evenly on first rimmed baking sheet. Set aside. 3. Place butternut squash face-down on second rimmed baking sheet and fill pan slightly with water (to allow squash to steam). 4. Bake the carrots/sweet potato and squash until tender when forked (35-40 minutes for the carrots/potato; 45-60 minutes for the squash). 5. Meanwhile, combine butter and remaining olive oil in heavy-bottomed stockpot. Add leeks and sage, salt lightly, and sauté until soft. 6. Add bay leaf and vegetable broth to pot. Bring to a simmer. 7. Add carrots, sweet potato, and butternut squash (removed from skin) when ready. Simmer all ingredients together for 10-20 minutes to let flavors combine. 8. Remove bay leaf, and puree the vegetables using an emulsion blender. Add the milk, continuing to blend until smooth and creamy. 9. Season with salt and pepper to taste. 10. Serve topped with a dollop of mascarpone cheese and few twists of fresh-cracked pepper.

2 celery ribs, chopped
1 carrot, peeled and chopped
3 lbs sweet potatoes, peeled and diced
6 cups chicken broth, can use veggie broth
2 -3 teaspoons curry powder
2 teaspoons thyme
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
1/4 cup white wine
1 cup light coconut milk
1 cup milk

Steps:

  • In a large soup pot, combine the onion, celery, carrot, sweet potatoes, broth, curry powder, thyme, pepper, cayenne and white wine.
  • Bring to a boil, reduce the heat and simmer, 30-40 minutes, or until the sweet potatoes are soft.
  • With a slotted spoon, remove about 1 1/2 cups of the vegetables and set aside.
  • Puree the remaining soup with a hand blender (or food processor) until smooth.
  • Return the vegetables to the pot.

4 slice bacon
1 medium onions, vidalia, peeled and chopped
2 clove garlic, chopped
2 Tbsp ginger, finely grated
1/2 tsp cinnamon

6 c chicken stock
1 can(s) 15oz pumpkin puree
3 large sweet potatoes, peeled and diced
1 c heavy cream
1/2 tsp cayenne pepper
chopped fresh chives

Steps:

  • 1. Cook bacon in large heavy pot over medium heat until bacon is crisp and fat is rendered, about 5 minutes. Remove bacon with slotted spoon to drain on paper towels. Leave fat in pot. crumble bacon and set aside.
  • 2. Saute' the onion, garlic, cinnamon, allspice, and ginger in bacon fat until tender, about 5 minutes. Season vegetables with salt and pepper. Stir in chicken broth and canned pumpkin, then add the sweet potatoes.
  • 3. reduce heat and simmer 15 minutes or until sweet potatoes are tender. Puree soup with immersion blender until smooth. Stir in heavy cream and cayenne. Serve with bacon crumbles and chives as garnish.

1 tablespoon canola oil
1 onion, chopped
2 garlic cloves, minced
3 cups tomato juice or 3 cups vegetable juice
1 (4 ounce) can chilies, preferably hot, drained
2 teaspoons fresh ginger, minced
1 teaspoon ground allspice
1 (15 ounce) can vegetable broth
1/2 cup smooth peanut butter
fresh ground pepper
2 tablespoons fresh cilantro, chopped for garnish

Steps:

  • Cook the sweet potatoes until just cooked through. Bake, microwave or boil. Set aside to cool.
  • Meanwhile heat oil in large saucepan or Dutch oven over medium high heat. Add onion and cook, until it just begins to brown, 2-4 minutes. Add garlic and cook 1 minute more. Stir in juice, chilies, ginger and allspice. Simmer for 10 minutes.
  • Peel the sweet potatoes and chop into bite-size pieces. Add half to the pan. Blend the other half along with the broth and peanut butter. Puree until completely smooth. Add the puree to the pan and stir well to combine. Thin the bisque with water if needed. Season with pepper. Heat until hot. Garnish with cilantro if desired.

2 large peeled, chopped sweet potatoes
2 Tbsp butter
2 Tbsp minced garlic
1 small diced onion
1 tsp thyme, dried
3 dash(es) nutmeg
4 c chicken broth
salt & pepper to taste

Steps:

  • 1. Melt butter in pot, add garlic and onion. Sautée until soft. Add chicken broth and bring to boil. Add potatoes to broth. Once boiling again and softened, remove from heat. Add your seasonings now. When softened use an emulsion blender or place in a food processor. Blend well. This will have almost the consistency of baby food. It's great served with a spoon of sour cream on top, or maybe a couple small marshmallows and pecans!
