Recipe video above. Terrific side dish option with a tropical or summer flair! This is a Thai dish made with a classic Thai Fried Rice Sauce. Use ONE of the 3 sauces - all are traditional. Serve with all things Thai, Asian, BBQ, tropical themed, Caribbean (excellent match!), fish, prawns/shrimp, salmon - see in post for ideas. Also - featured in Monday's Honey Soy Chicken.

2 tbsp vegetable oil
2 garlic cloves (, finely minced)
1/2 onion (, finely chopped)
1/2 red capsicum / bell peppers (, diced (~ 3/4 cup))
1/2 cup peas (, frozen)
3 cups day old jasmine rice (, cooked (Note 1))
1 1/2 cups pineapple pieces (, fresh or canned drained (~ 220g) (Note 2))
1/2 cup green onion (, sliced)
1 tbsp oyster sauce
1 1/2 tbsp fish sauce
1/2 tsp sugar
1 tbsp oyster sauce
1 1/2 tbsp soy sauce (, light or all purpose (not dark soy))
1 1/2 tbsp soy sauce
1 tbsp Thai Seasoning (Gold Mountain)

Steps:

  • Heat oil in a wok or large non stick skillet over high heat.
  • Add garlic and onion, cook for 1 minute.
  • Add capsicum, cook for 1 minute.
  • Add peas, stir for 30 seconds.
  • Add rice and Sauce ingredients of choice. Cook, stirring constantly, for 2 minutes or until rice grains goes from being wet with sauce to sort of caramelised.
  • Add pineapple, stir for just 30 seconds to warm through.
  • Stir through green onions then serve!

This easy pineapple fried rice is full of bright flavors, with chicken, bell peppers, peas, sweet chunks of pineapple, and a squeeze of lime juice. Ready in just about 30 minutes, it's a delicious, healthier meal for any night of the week!

4 cups cooked brown or white rice, chilled (see notes)
1 lb boneless, skinless chicken thighs ( cut into bite-sized pieces )
3 tablespoons coconut oil (divided)
½ yellow onion (chopped)
½ green bell pepper ( chopped)
½ red bell pepper (chopped)
1 large garlic clove (minced)
1 inch piece fresh ginger (grated)
2 tablespoons soy sauce (gluten-free, if needed)
1 tablespoon honey
1 ½ cups cubed pineapple
¾ cup frozen peas
1 small lime (juiced)
green onions and sesame seeds (to serve)

Steps:

  • Season the chicken pieces generously with salt and let them sit for 10-15 minutes while you prep the other ingredients. Blot dry with a paper towel to remove the excess moisture.
  • Melt 2 tablespoons of the coconut oil in a large skillet over medium heat. When shimmering, add in the chicken and cook, stirring occasionally, until it is no longer pink in the center, about 5-7 minutes. Remove the chicken from the pan and set it aside.
  • Melt the remaining tablespoon of coconut oil in the pan and add the onion. Cook for 3-4 minutes, until just softened. Add the bell peppers, garlic, and ginger and sauté for 2-3 minutes. Add the soy sauce then scrape up any browned bits stuck to the bottom of the pan.
  • Stir in the rice, honey, cubed pineapple, and cooked chicken. Reduce the heat to low and cook until heated through, about 5 minutes. In the last few minutes of cooking stir in the frozen peas and lime juice.
  • Serve warm with fresh green onions and a sprinkle of sesame seeds, if desired.

1 pineapple
8 tablespoons vegetable oil, divided
2 eggs, beaten
½ lb king prawn
3 cloves garlic, minced
1 red chili, finely diced
1 onion, finely chopped
1 ¾ cups rice, cooked
1 cup mixed vegetable
1 tablespoon fish sauce
1 lime, juiced
2 spring onions, finely chopped

Steps:

  • Using a sharp knife carefully cut the pineapple in half lengthways.
  • Using the tip of a knife, cut around the edge of the pineapple being careful not to cut through the skin.
  • Slice down and across the pineapple flesh then scoop out the pineapple cubes with a spoon. Discard the core and set the flesh aside.
  • In a large wok, heat 2 tablespoons of oil over a medium heat. Fry the beaten eggs in a hot wok.
  • Once cooked, push the eggs to a side and add in the prawns to the other side.
  • Fry until the prawns are just cooked. Remove eggs and prawns from the wok and set aside.
  • Heat the wok until smoking hot and pour in 6 tablespoons of oil.
  • Add the garlic, chilli, and onion and stir until fragrant.
  • Add in the rice and vegetables, and fry until rice turns slightly brown and the veggies are thoroughly cooked.
  • Add the cooked eggs and prawns, add in the fish sauce and the prepared pineapple flesh and stir until everything is well mixed together.
  • Serve in the empty pineapple halves, along with some lime juice and spring onions.
  • Enjoy!

1 tbsp vegetable oil
2 shallots , chopped
2 garlic cloves , chopped
1 tsp mild curry powder
600g cold cooked rice (basmati or jasmine would work best)
300g/11oz fresh pineapple chunks, cut into smaller pieces, reserving any juice
4 tbsp soy sauce
pinch sugar
finely sliced spring onion and chopped coriander

Steps:

  • Heat the oil in a wok or frying pan. Sizzle the shallots until tinged then add the garlic and stir-fry for 1 min. Then add the curry powder and rice, and stir-fry to separate the grains. Add the pineapple chunks and juice and season with the soy and sugar. Stir through the spring onions and coriander.

1 1/2 cups water
1 (8 oz.) can crushed pineapple in pineapple juice (1 cup)
2 tsp. sugar
1 Tbsp. unsalted butter
1/2 tsp. kosher salt
1/4 - 1/2 tsp. red pepper flakes
1 cup basmati or jasmine rice, not quick-cooking
Juice 1/2 lime (about 1 Tbsp.)
Fresh cilantro, chopped

Steps:

  • In a small saucepan, combine water, pineapple, sugar, butter, salt, and red pepper flakes. Cover and bring to a simmer over medium heat. Stir in rice and bring back to a simmer. Reduce heat to low, and simmer, partially covered for 15 minutes or until all of the water is absorbed. The rice will be almost done with a slight bite to it.
  • Remove the saucepan from heat and let the rice steam another 5 minutes, covered. Fluff rice with a fork. Stir in lime juice and chopped cilantro. (I love cilantro so I usually go heavy but you can add as much as you like).

This recipe is sweet and tangy. You just can't get enough off it, both kids and adults go wild. It was given to me by a South African friend. Add enough turmeric to give a soft yellow colour.

1 cup basmati rice (only)
1/8 teaspoon turmeric powder
1 1/2 cups sugar
1/2 cup water
1/2 teaspoon saffron
1/2 cup ghee
2 cinnamon sticks
2 cardamom pods
1/2 cup canned crushed pineapple
1/2 lemon, juice of

Steps:

  • Boil rice with turmeric until al dente.
  • Combine sugar, water and saffron. Boil until it forms a sticky syrup. Add lemon. Heat ghee with cinnamon.
  • Add pineapple and syrup.
  • Add rice and toss well. Simmer on medium heat for 10 minutes.
  • Reduce heat and simmer on low until slightly moist.

I could eat this stuff by the bucket load!! It's spicy and sweet and is the perfect match for fish or chicken. This is a great summer recipe and its super easy. This recipe makes enough for 4 adults as a side dish. To make it super fruity, you could add pineapple chunks to the rice toward the end. For extra flavor, substitute chicken broth for the water.

1/2 tablespoon olive oil
1 small shallot, diced
2 teaspoons curry powder
2 teaspoons minced garlic, from a jar is fine
1 cup jasmine rice or 1 cup white rice
1 cup pineapple juice
1 cup water
1 1/2 tablespoons sweetened flaked coconut
crushed red pepper flakes
1/4 cup drained pineapple chunk (optional)

Steps:

  • In a medium saucepan, sauté shallot and garlic in the olive oil until translucent, approximately 5 minutes. Add curry powder.
  • Pour in rice and stir constantly until rice is opaque and begins to brown.
  • Pour in pineapple juice, water and coconut; bring to a boil.
  • Add crushed red pepper and reduce heat to low.
  • Simmer 25 minutes or until rice is a desired doneness.
  • Add pineapple chunks (optional).
  • Fluff with fork.
