1/4 cup rice wine vinegar
1/4 cup chopped fresh basil leaves
1 teaspoon sugar
Salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
8 ears corn, grilled in the husk, kernels removed
1 sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced
1 pint Sweet 100 tomatoes or cherry tomatoes, halved
8 ounces blue cheese, crumbled
Fresh basil sprigs, for garnish

Steps:

  • Combine the vinegar, basil, sugar, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and oil in a blender and blend until smooth. Can be made 2 hours in advance and refrigerated. Bring to room temperature before using.
  • Combine the corn kernels, onion and tomato in a large bowl. Add the dressing and toss to coat, season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with crumbled blue cheese and garnish with basil sprigs just before serving. Salad can be made 1 day in advance and served cold or at room temperature.

6 medium beets, trimmed
1 large English hothouse cucumber, unpeeled, cut into 1/4-inch-thick rounds
1/2 sweet onion (such as Maui or Vidalia), halved lengthwise, thinly sliced
4 teaspoons honey
4 teaspoons apple cider vinegar
1 1/2 teaspoons Dijon mustard
1/3 cup corn oil

Steps:

  • Preheat oven to 400°F. Wrap each beet in foil, enclosing completely. Place on rack in oven and bake until beets are tender when pierced with fork, about 1 hour 30 minutes. Cool in foil. Peel beets, then cut each into 6 slices.
  • Arrange beets, slightly overlapping, on half of large platter. Arrange cucumber slices on other half. Scatter onion in center. (Can be made 4 hours ahead; chill.)
  • Whisk honey, vinegar, and mustard in small bowl to blend. Gradually whisk in oil. Season with salt and pepper. Drizzle over vegetables.

1 medium sweet onion, quartered
2 teaspoons celery salt

1 cup neutral oil

Steps:

  • In a blender, combine the vinegar, sugar, onion, celery salt, mustard, and black pepper and process until smooth. With the blender on its lowest speed, gradually add the oil in a steady stream until the dressing is thickened. Transfer to a jar or sealable container and store in the refrigerator for up to 2 weeks.

1 teaspoon dry mustard
1 teaspoon celery seed
1 medium vidalia onion, grated (or other sweet onion)

Steps:

  • In a small saucepan, mix the first four ingredients. Add grated onion (small to medium, depending on your taste), add the olive oil and vinegar. Heat until sugar is melted. Cool and refrigerate.
  • Reheat and use to wilt lettuce or serve cold on salad. Keeps in refrigerator indefinitely. Enjoy!

¾ cup roughly chopped Kim Chee Peanuts
Kosher salt

Steps:

  • In a large bowl, combine the kale, cabbage, cranberries, and sweet onion dressing. Toss to coat and mix thoroughly, using your hands if desired. Transfer to the fridge and let chill for at least 15 minutes.
  • When ready to serve, add the potato chips and peanuts and toss to combine. Season with a pinch of salt, if needed.

2 eggs
10 -12 slices bacon
1/2 cup slivered almonds
2 (8 ounce) bags spinach (see NOTE)
1 (6 ounce) can water chestnuts, sliced
1 (15 ounce) can bean sprouts
1 (6 ounce) can mandarin oranges
1 cup canola oil
1 medium yellow onion, quartered
1/8 cup cider vinegar
3/4 cup brown sugar, packed
1/3 cup catsup
1 teaspoon Worcestershire sauce

Steps:

  • Hard-boil two eggs (place in pot of water, bring to a boil; boil 3 minutes, turn off the heat--let sit in hot water 11 minutes, then pour off the water & cover with ice-cold tap water until cooled enough to handle); peel and slice or coarsely chop.
  • While that is working, fry the bacon, crumble into bite-size pieces; set aside.
  • Toast the almonds to a light golden brown (watch carefully so they don't burn).
  • Dump greens into a large serving bowl; set aside.
  • Drain the chestnuts, sprouts and oranges (rinse with sink sprayer -- and let drip while the eggs and bacon are working); set aside.
  • DRESSING: Add all these ingredients to a blender and PULSE whirl until well-mixed (but NOT pulverized---you want to see little flecks of onion in there).
  • Add water chestnuts, sprouts and oranges to the greens.
  • Drizzle dressing lightly over salad; toss gently.
  • Serve salad along with remaining dressing.
  • NOTE: Make one bag spinach, the other bag Romaine or a mixture of something interesting.

6 large cucumbers
2 large vidalia onions
2 limes, juice of
1/2 teaspoon sea salt
1/2 teaspoon white sugar

1/4 cup white wine vinegar
1/4 cup water

Steps:

  • Run a fork down the cucumbers, all over, making slight indentations.
  • Cut the cucumber in half, lengthwise.
  • Scoop out all the seeds.
  • Cut the cucumber halves into 1/8" strips.
  • Peel the onion and cut lengthwise into quarters.
  • Slice the quarters crosswise into thin strips.
  • In a large bowl, combine cucumber and onions with lime juice, salt and sugar.
  • Toss well.
  • Add hot pepper flakes, olive oil, vinegar and water, toss well.

1/2 teaspoon celery seed
1/2 teaspoon garlic salt
1 1/2 teaspoons basil
