Sweet Onion and Swiss Phyllo Roll-Ups image

These are the most popular appetizers I make! Friends ask for them again and again. These are best when baked right before serving, but they do taste great even as they begin to cool. This appetizer recipe also freezes beautifully before baking. Just bake them, while they are still frozen, for about another 10 minutes until golden brown.

8 ounces cream cheese, softened
2 cups swiss cheese, shredded
2 onions, chopped
3 garlic cloves, minced
1/4 cup butter
1/2 teaspoon dried thyme leaves
1/8 teaspoon pepper
phyllo dough, thawed
1/3 cup butter, melted

Steps:

  • Preparation:.
  • In medium bowl, mix cream cheese and Swiss cheese. Set aside. In heavy skillet, sauté onions, thyme, and pepper in 1/4 cup butter until very soft and beginning to brown, 10-15 minutes. Stir in garlic and cook another 1 minute. Cool 20 minutes. Mix together onion mixture and cheese mixture and refrigerate for 30 minutes.
  • Place one sheet filo dough on work surface. Brush with melted butter. Lay another sheet on top, brush with butter, and put one more sheet on top.
  • Take the onion mixture and form a roll about 1 inch in diameter down one long edge of the stacked filo. Roll up carefully and place on cookie sheet. Brush thoroughly with more butter. Repeat with remaining filo and filling, making six rolls total. I place three rolls on each cookie sheet. Cover well with plastic wrap and chill overnight.
  • When ready to bake, preheat oven to 375 degrees F and remove the rolls from the refrigerator. Bake for 10-17 minutes or until rolls begin to brown and cheese filling melts. Let stand 5 minutes, then, using a very sharp knife, cut rolls into 1" pieces. Let cool for 5-10 minutes, then serve. The onion filling right out of the oven is super-hot. Serves 8-10 - or 4-6, at my parties!
  • You can also freeze these rolls. Wrap well in freezer wrap, label, and freeze up to 3 months. To bake frozen rolls, place rolls on cookie sheets and bake at 375 degrees F for 15-23 minutes or until the rolls are beginning to brown and crisp and cheese melts. Proceed as directed above.

I found a similar recipe on a recipe card, and adjusted a few things to my liking. This dish is so buttery and flavorful, the seasonings awesome. One bite you will be hooked. My BIL said it was the best thing he had ever eaten! It does take some time to put together, but so worth it.........Enjoy! You may want to use buttery Pam on the Phyllo, at least on some. I like real butter!!

4 skinless chicken breasts
2 tablespoons olive oil
1 (10 ounce) package frozen spinach, drained well, squeeze dry
1/2 teaspoon salt
1 cup fresh mushrooms, chopped
2 teaspoons chopped garlic
3 teaspoons dried basil
1 cup shredded parmesan cheese
16 sheets phyllo dough
1/2 cup butter, melted (or more for brushing Phyllo)
1 teaspoon sesame seeds

Steps:

  • Pound out chicken breasts between waxed paper, until about 1/2 inch thick.
  • Refrigerate.
  • In a large skillet over low heat melt butter, add garlic, cook for 1 minute. Add mushrooms,and salt, cook stirring for 3 minutes, then add spinach.
  • Cover and cook 3 minutes longer. Divide the mixture, leaving in pan, into 4 portions.
  • Mix parmesan cheese with basil, put on a plate.
  • Take chicken out, and place each portion of spinach mixture onto chicken, spreading out within an inch of sides. Sprinkle 1 Tbl. of cheese on top. Roll each piece up, tucking sides in slightly. Repeat with remaining chicken.
  • Preheat oven to 400.
  • Make sure Phyllo is room temperature. Cut 8 sheets of phyllo at a time in half, cutting on the longest side.
  • Using 4 halves per chicken roll, brush with melted butter, each piece, stacking as you go. Roll chicken, in more cheese mixture , then place on one end of buttered Phyllo. Fold up 2 sides, then roll to the end. repeat with the 3 remaining chicken rolls.
  • Using a glass casserole dish, set the rolls in pan. Cut slits on the top of each. Brush butter over top. Sprinkle tops with sesame seeds.
  • Bake untill golden brown, about 45 minutes.

24 sheets phyllo dough (14 inches x 9 inches)
1/4 cup butter, melted
8 thin slices prosciutto, cut into 1-inch strips
24 fresh asparagus spears, trimmed
24 fresh green beans, trimmed
ARTICHOKE SAUCE:
1/4 cup sour cream
1/2 teaspoon lemon juice
1 jar (6 ounces) marinated artichoke hearts, drained
2 ounces cream cheese, softened
1/4 cup chopped roasted sweet red peppers, drained
3 tablespoons grated Parmesan cheese
2 green onions, chopped
1 garlic clove, peeled
1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper

Steps:

  • Line baking sheets with parchment; set aside. Place 1 sheet of phyllo dough on a work surface (keep remaining dough covered with a damp towel to avoid drying out). Brush with butter; fold in half lengthwise. Brush with butter; fold in half widthwise., Brush with butter; top with a prosciutto strip. Place an asparagus spear and a green bean at a diagonal on bottom right corner; roll up. Repeat with remaining dough, butter, prosciutto and vegetables. , Place roll-ups on prepared baking sheets. Bake at 400° for 6-8 minutes or until golden brown. Meanwhile, in a blender, combine the sauce ingredients; cover and process until smooth. Transfer to a small bowl; serve with roll-ups.

These rolls are based loosely on b'stilla - a phyllo-crusted "pie" of shredded chicken that's been simmered with Moroccan spices and then mixed with egg and nuts. The egg lends the filling an almost custard-like richness.

1 small onion, finely chopped
1 tablespoon olive oil
Scant teaspoon salt
3/4 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/4 teaspoon ground coriander
1 1/4 pound chicken thighs (with skin and bones)
3/4 cup low-sodium chicken broth
1/2 cup water
1 (3-inch) cinnamon stick
1/4 cup sliced almonds, toasted , cooled, and coarsely chopped
2 large eggs, lightly beaten
1 stick (1/2 cup) unsalted butter, melted
8 (17- by 12-inch) phyllo sheets, thawed if frozen
1 teaspoon ground cinnamon
2 teaspoons brown mustard seeds

Steps:

  • Make filling:
  • Cook onion in oil along with salt, cumin, ginger, turmeric, pepper, and coriander in a 3-quart heavy saucepan over moderate heat, stirring, until softened, about 5 minutes. Add chicken, broth, water, and cinnamon stick and simmer, covered, turning chicken over once, until meat is very tender, about 45 minutes total. Transfer chicken with tongs to a bowl, reserving cooking liquid.
  • When cool enough to handle, shred chicken, discarding skin and bones, and transfer to a large bowl. Transfer cooking liquid to a 2-cup glass measure (do not clean saucepan) and let stand 1 minute, then skim off fat and discard cinnamon stick. Return liquid to saucepan and simmer over moderately high heat, uncovered, until reduced to about 1/4 cup (liquid will look like a glaze in bottom of pan), about 8 minutes, then stir into shredded chicken along with almonds.
  • Reserve 2 tablespoons beaten egg in a cup for egg wash. Lightly season remaining egg with salt and pepper, then cook in 1/2 tablespoon butter in an 8- to 10-inch nonstick skillet over moderately high heat, stirring, until just set but still slightly soft. Stir scrambled egg into filling.
  • Make rolls:
  • Put oven racks in upper and lower thirds of oven and preheat oven to 450°F.
  • Put 1 phyllo sheet on a work surface, keeping remaining phyllo covered with overlapping sheets of plastic wrap and a damp kitchen towel, and brush generously with some melted butter. Evenly sift 1/4 teaspoon cinnamon over buttered phyllo using a fine-mesh sieve, then top with another phyllo sheet and generously brush with butter.
  • Halve buttered phyllo stack crosswise, then arrange 1 half with a long side nearest you. Spread 1/4 cup chicken filling in a narrow strip along edge nearest you, then roll up filling tightly in phyllo, leaving ends open. Transfer roll, seam side down, to a cutting board set inside a baking pan (to help contain mustard seeds when sprinkling). Make another roll with remaining half stack. Make 6 more rolls in same manner, transferring to cutting board.
  • Lightly brush top of rolls with egg wash and immediately sprinkle with mustard seeds, pressing lightly on seeds to help adhere. Cut each roll crosswise into 4 pieces and arrange pieces 1 inch apart on 2 baking sheets. Bake, switching position of sheets halfway through baking, until phyllo is golden brown, about 12 minutes total.
  • Transfer rolls to a rack to cool slightly.
