- Variations:
- Autumn Lassi: Replace cold water with 1/4 cup fresh apple cider, add 1/2 teaspoon fresh ground cardamom.
- Blackberry: Replace cold water with 1/4 fresh blackberries; adjust sugar to taste.
- Mango: Replace cold water with 1/4 cup fresh or frozen mango pulp.
- Nectarine: Replace cold water with 1/4 fresh pureed nectarine, don't add extra sugar.
- Strawberry: Replace cold water with 1/4 cup fresh or frozen hulled, chopped strawberries.
- Salty: Replace 1 tablespoon sugar with 1 teaspoon coarsely ground cumin seed and 1 teaspoon fresh lemon juice.

- In a blender, add yogurt, half and half, sugar, and most of the cardamom powder. Blend a couple of times so that a layer of froth forms on the top. In a tall glass, add crushed ice, then pour the lassi on top. Top with the aerated whipped cream, and garnish with a pinch of cardamom powder saved from earlier.

Lassi is a unique and wonderful Indian drink. The first time I ordered one at an Indian restaurant, I figured I probably wouldn't like it, but wanted to taste something authentic. Boy was I wrong-- it was fantastic! It was so delicious and refreshing, and unlike anything I have ever had to drink. Lassi can either be sweet or salty, and is usually flavored with mint, banana or mango. This sweet mint Lassi is my favorite! Enjoy!
