1 large mango - peeled, seeded, and diced
3 tablespoons brown sugar
2 tablespoons chopped fresh mint
1 teaspoon freshly ground star anise
1 teaspoon freshly ground cardamom
1 tablespoon lime juice
2 cups plain yogurt
3 sprigs fresh mint for garnish

Steps:

  • Blend the mango, brown sugar, chopped mint, star anise, cardamom, lime juice, and yogurt in a blender on high speed until smooth. Pour into glasses and garnish with fresh mint sprigs to serve.

1 cup mango purée, fresh or canned Indian Alphonso mango purée
1/2 cup sugar
1 tray ice cubes

  • Put all the ingredients in an electric blender or food processor and blend until the ice is crushed and the liquid is frothy. Serve immediately in tall glasses. (The drink will keep, covered, for up to 3 days in the refrigerator. Whip again before serving.)

1 cup whole milk yogurt
1/4 cup cold water
1 tablespoon sugar
2 -3 ice cubes

Steps:

  • Combine all ingredients in a blender. Process at high speed for about 40 seconds, until frothy. Serve immediately.
  • Variations:
  • Autumn Lassi: Replace cold water with 1/4 cup fresh apple cider, add 1/2 teaspoon fresh ground cardamom.
  • Blackberry: Replace cold water with 1/4 fresh blackberries; adjust sugar to taste.
  • Mango: Replace cold water with 1/4 cup fresh or frozen mango pulp.
  • Nectarine: Replace cold water with 1/4 fresh pureed nectarine, don't add extra sugar.
  • Strawberry: Replace cold water with 1/4 cup fresh or frozen hulled, chopped strawberries.

150 ml plain yogurt
1/4 teaspoon ground cardamom
1 teaspoon rose syrup (substitute rose water, but add 1 teaspoon sugar more)
1 pinch turmeric powder
150 ml cold water with some ice cubes
2 tablespoons sugar
4 saffron threads
4 mint leaves

Steps:

  • Put the yogurt, the cardamom, the rose water and the turmeric in a bowl and mix well with the wire whisk.
  • Mix with a food processor the iced water, the sugar, the saffron threads and 2 mint leaves until the ice and the mint leaves are crushed and add it to the yogurt mixture.
  • Blend the mixture with a hand blender until smooth.
  • Pour into glasses and garnish with the 2 remaining mint leaves.

6 oz. plain organic yogurt
1/2 cup half and half (can be substituted with whole milk)
2 tablespoons raw sugar (or more depending on taste)
1/2 teaspoon cardamom powder
Can of whipped cream (you won't use all)
Crushed ice.

Steps:

  • In a blender, add yogurt, half and half, sugar, and most of the cardamom powder. Blend a couple of times so that a layer of froth forms on the top. In a tall glass, add crushed ice, then pour the lassi on top. Top with the aerated whipped cream, and garnish with a pinch of cardamom powder saved from earlier.

Boy was I wrong-- it was fantastic! It was so delicious and refreshing, and unlike anything I have ever had to drink. Lassi can either be sweet or salty, and is usually flavored with mint, banana or mango. This sweet mint Lassi is my favorite! Enjoy!

1/2 cup mint leaf
1 cup vanilla yogurt
1 (12 ounce) can soda water
1 -2 lime, juice of
2 teaspoons sugar
1 cup crushed ice

Steps:

  • Combine mint, yogurt, lime juice, sugar, ice, and ½ of the soda in a blender. Blend until mint is finely minced, stop the blender, and add the remainder of the soda. Blend for a split second more, just to mix, and serve immediately. Garnish with a sprig of fresh mint.
