SWEET HEAT CHICKEN THIGHS



Sweet Heat Chicken Thighs image

2 tablespoons salted butter
2 tablespoons olive oil
8 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 cup chicken stock
1/2 cup low-sodium soy sauce
1/4 cup sherry
1/4 cup brown sugar
2 tablespoons hoisin
2 tablespoons sesame oil
2 yellow onions, sliced
2 tablespoons chili paste
2 tablespoon minced ginger
3 cloves garlic, minced
4 scallions, sliced
1 small butternut squash, peeled and cubed (about 2 cups)
1 bunch kale, torn and stems discarded
1/4 cup fresh cilantro leaves

Steps:

  • Heat the butter and olive oil in a Dutch oven over medium-high heat. Sprinkle chicken thighs with salt and pepper. Sear chicken in batches until golden, 2 to 3 minutes per side. Remove the chicken to a plate and set aside.
  • Meanwhile, whisk together the chicken stock, soy sauce, sherry, brown sugar, hoisin and sesame oil in a small bowl and set aside.
  • Add the onions, chili paste, ginger, garlic and scallions to the pan and cook, stirring frequently, for 2 to 3 minutes. Pour in the sauce and deglaze the pan, then return the chicken to the pot. Add the butternut squash, bring to a simmer and cover. Cook until the chicken is cooked through, 20 to 22 minutes.
  • Remove the chicken to a platter. Add the kale, then stir in and allow to wilt. Spoon over and around the chicken, then garnish with cilantro leaves.

1 pound thick-cut bacon, cut into small pieces
1 large Vidalia onion, diced
Four 15.5-ounce cans great Northern beans
1 cup molasses
1/2 cup tomato sauce
1/2 cup brown sugar
2 tablespoons yellow mustard
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
Candied Jalapenos, recipe follows
1 pound jalapeno peppers
1/4 cup brown sugar
1/2 teaspoon granulated garlic
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
Pinch kosher salt
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the bacon in a large ovenproof saucepan or Dutch oven until the fat is rendered and the bacon is crisp, about 7 minutes, then set aside to drain on a paper towel. Add the onion to the pan and cook until softened, 8 to 10 minutes.
  • Add the beans, molasses, tomato sauce, brown sugar, mustard, garlic powder, 1/4 cup water and salt and pepper to taste and stir to combine well. Let the mixture simmer for a minute or so. Transfer the pan to the oven and bake, uncovered, until the beans are very tender and dark and the sauce is thick, 1 1 /2 to 2 hours.
  • Transfer to a serving dish and top with Candied Jalapenos and bits of bacon.
  • Preheat the oven to 325 degrees F and line 2 baking sheets with parchment paper.
  • Thinly slice the jalapenos and place in a single layer on the prepared baking sheets.
  • Combine the brown sugar, granulated garlic, mustard, cayenne pepper and salt in a small bowl. Brush the slices of jalapeno with the olive oil. Sprinkle the sugar and spice mixture over the top. Bake until the jalapenos are crispy, 20 to 25 minutes. Set aside to cool.

  • Cut each jalapeno lengthwise. Use a spoon to scrape the seeds and membranes out of the halves. Place jalapeno halves on the prepared baking sheet.
  • Combine cream cheese, horseradish, garlic powder, and paprika in a small bowl. Stuff jalapeno halves with the mixture. Wrap each jalapeno with a strip of prosciutto.
  • Bake in the preheated oven until peppers are slightly softened and cheese is lightly browned, 15 to 17 minutes.
  • Meanwhile whisk apricot preserves, water, garlic powder, and red pepper flakes together in a small saucepan over medium heat until thickened. Remove from heat and keep sauce warm.

1 (4 pound) winter squash, halved lengthwise and seeded
1 tablespoon butter
1 large sweet onion, chopped
2 stalks celery, chopped
1 large poblano pepper, seeded and chopped

3 tablespoons brown sugar, or more to taste

  • Preheat oven to 400 degrees F (200 degrees C).

This is a recipe that I have improvised a little bit over the years. Everytime I bring these wings to potlucks or any type of party, I get lots of requests for my recipe.

18-20 chicken wings
worcestershire sauce
onion powder
garlic powder
12 oz bottle hot sauce
1/2 c brown sugar
1/2 c margarine
1 Tbsp sugar

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Cut each wing into 3 parts, discarding the tips.
  • 3. Coat 13x9 pan with cooking spray. Place wing pieces in single layer in pan. Splash wings liberally with worcestershire. Sprinkle wings lightly with onion powder and garlic powder making sure to season each piece. Cover pan with foil. Poke holes in foil for ventilation. Place pan in oven and cook until done-about 45-50 minutes.
  • 4. While chicken is cooking, in medium saucepan, melt butter/margarine on medium heat. Once melted, add hot sauce and both sugars. Stir to mix. Remove from heat.
  • 5. Test wings for doneness-using fork, chicken should come away from the bone easily. When done, remove from oven. Remove foil and pour hot sauce mixture over the wings, making sure to cover each one in sauce. Turn oven up to 400 and place wings back in oven uncovered. Watch closely and cook until start to brown. Remove and enjoy with blue cheese or ranch sauce.

2 racks spareribs, on the bone (6 to 7 pounds)
1/4 cup paprika
1/4 cup firmly packed brown sugar
2 tablespoons coarse kosher salt
1 tablespoon cayenne pepper
1 tablespoon garlic salt
1 tablespoon freshly ground black pepper
2 tablespoons canola oil
4 cups wood chips such as cherry or hickory, soaked in water for at least 1 hour, optional
Sweet Heat Barbecue Sauce, recipe follows
1/2 cup vegetable oil
1 sweet onion, very finely chopped
2 1/2 cups ketchup
2 cups apple cider vinegar or distilled white vinegar
1/2 cup Worcestershire sauce
1/4 cup Dijon mustard
2 tablespoons freshly ground black pepper, or to taste
2 tablespoons firmly packed brown sugar
1 teaspoon cayenne pepper, or to taste
Juice of 2 lemons
Coarse kosher salt

Steps:

  • If necessary, remove the thin membrane from the back of each rack of ribs; discard the membrane. Combine the paprika, brown sugar, kosher salt, cayenne pepper, garlic salt and black pepper in a small bowl. Rub the meat with the oil and then rub liberally with the spice blend. Leave at room temperature for 45 minutes.
  • Meanwhile, set the grill for indirect cooking at 250 degrees F, with wood chips for flavor if using. (I use bourbon barrel staves. Cherry and hickory would be good, but stay away from mesquite.) Wrap the soaked chips in a double layer of heavy-duty aluminum foil. Place the foil-wrapped chips on the coals.
  • Add the spareribs, meat-side up. Close the lid and cook, flipping occasionally, until the meat is smoky and just tender, about 2 1/2 hours. Brush the spareribs with the Sweet Heat Barbecue Sauce and continue cooking until the sauce is nicely caramelized and the meat is completely tender, about an additional 30 minutes. Serve with Sweet Heat Barbecue Sauce on the side.
  • In a saucepan, heat the oil over medium heat; add the onions and simmer until soft and melted, 5 to 7 minutes. Add the ketchup, vinegar, Worcestershire sauce, mustard, black pepper, brown sugar, cayenne pepper and lemon juice. Bring to a boil, decrease the heat to low and simmer until the flavors have smoothed and mellowed, at least 10 and up to 30 minutes. Taste and adjust for seasoning with salt and pepper.
  • Store in an airtight container in the refrigerator. It will last for months.

Ketchup - 1/3 cup
Liquid smoke - 3 drops
Lemon juice - 2 tbsp
Garlic powder - 1 tsp
Maple syrup - 2 tbsp
Salt and pepper - dashes
Chili sauce - 1/3 cup
Tobasco - 1 tsp
Cranberry and Pomegranate juice - 3/4 cup each
Corn starch - 2 tsp

Steps:

  • In a pan, add the Cranberry and Pom juice with starch. Put on a low boil until reduced and thickened. In a bowl, mix the tomato paste, ketchup, liquid smoke, lemon juice,maple syrup, some S&P, chili sauce, a few dashes of Tobasco. Let the reduction cool and slowly it to the bowl with the rest of the ingredients and mix into a paste. Keep the paste fairly thick by not adding all of the reduction if there's too much (if you're doing ribs, this would make a nice, sweet glaze before BBQ'ing).

Steps:

  • Cut beef steak into 1-1/4 inch pieces. Combine marinade ingredients in a bowl, stirring well. Reserve 2 tablespoons marinade. Place half of remaining marinade and beef in food safe plastic bag; turn to coat. Place remaining marinade, squash and bell pepper in another food-safe plastic bag. Close bags securely; refrigerate 30 minutes to 2 hours, turning occasionally.
  • Remove beef and vegetables from marinade; discard marinade. Alternately thread beef and vegetables evenly onto four 15-inch metal skewers.

2 fresh limes
2 tablespoons sweet chili sauce
1 tablespoon sweet hot mustard
1 teaspoon horseradish, prepared
1 tablespoon rice vinegar, natural
Canola oil, for frying
3 green plantains
1/4 cup garlic, minced
Salt and fresh cracked black pepper
1/8 teaspoon red pepper flakes
Dash cayenne pepper

Steps:

  • In a bowl, combine the juice of 1/2 of lime, sweet chili sauce, mustard, horseradish and vinegar. Set aside.
  • Heat 1/2-inch of oil in 12-inch heavy pan.
  • Cut plantain on diagonal into 1-inch thick pieces, remove peel.
  • When oil is hot, add the plantains and fry both sides until golden.
  • Drain on paper bag, and sprinkle with salt, and minced garlic. With a flat bottomed, heat proof, glass bowl, smash plantains evenly flat, embedding garlic into them. Return to hot oil and fry until dark golden brown. Remove, drain again on a paper bag, adding more coarse salt, to taste, the red pepper flakes, the cayenne pepper and a squeeze of lime.
  • Serve while hot with sweet heat sauce.

A Home Made Simple recipe. The original recipe uses buffalo sauce, but can be tailored towards the Southwestern using adobo sauce or Asian using Sriracha. The original recipe did not call for seasoning the wingettes with salt, but I'd lightly salt them pre-dipping into the sauce before baking.

2 cups ketchup
2 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
1 tablespoon yellow mustard
1/3 cup buffalo, sauce (can sub 2 tbs adobo sauce or 2 tbs sriracha asian garlic sauce)
3 garlic cloves, minced
1 cup packed light-brown sugar
nonstick cooking spray
4 -6 lbs chicken drummettes, patted dry

Steps:

  • In a medium-sized mixing bowl, whisk together ketchup, Worcestershire sauce, vinegar, mustard, buffalo sauce (can sub 2 tbs adobo or 2 tbs Sriracha), garlic and brown sugar.
  • Preheat oven to 450°F.
  • Line a baking sheet with aluminum foil; coat with nonstick cooking spray or can brush with vegetable oil.
  • In a large mixing bowl, toss chicken drumettes with 1 cup of the barbecue sauce. Arrange on prepared baking sheet, being sure the drumettes aren't touching each other.
  • Bake until opaque and cooked throughout, about 30-35 minutes, turning over halfway through cooking.
  • Carefully toss with 1/2 cup barbecue sauce.

This was my rendition of a Thai wing my husband fell in love with, at a popular local wing restaurant, called "Thai R Cracker". I couldn't have gotten any closer....was spot on! A little messy, serve with lots of napkins! If you like sweet/heat...you'll love these! Enjoy!

1/4 c garlic chili sauce or to taste - found in the asian section
1/2 c sweet chili sauce ( franks )
2 1/2 tsp sesame oil
2 tsp grated ginger
1/4 c soy sauce
flour plus season salt to coat wings...optional...makes wings crispy
peanut oil for frying
Fresh wings or thawed frozen

Steps:

  • 1. Mix first five ingredients, well. Add more or less spicy garlic chili depending on taste. I just kept adding until I got it right. Depends on your heat tolerance! We love heat!
  • 2. In a large baggie, add about a cup of flour. Season to taste. Add wings, about a dozen at a time and shake bag to coat. Shake of excess and place in hot grease..350 degree. Fry until crispy. Note: You can skip the flouring of the wings, but it really does help crisp up the skin.
  • 3. Season hot wings with salt. Place desired amount in bowl, add desired sauce...place lid on bowl no shake. Pour onto plate and repeat!
  • 4. We loved these wings! Now a new favorite!

3 tablespoons olive oil, or more as needed
15 small fresh jalapeno peppers, diced
4 ears fresh corn, kernels cut from cob
3 plum tomatoes, diced
1 red onion, diced
1 yellow bell pepper, diced
5 Scotch bonnet chile peppers, diced
½ cup shredded carrots
5 cloves garlic, diced
3 cups cider vinegar, or more as needed

Steps:

  • Heat oil in a large Dutch oven over medium heat. Cook and stir jalapeno peppers, corn, tomatoes, red onion, yellow bell pepper, Scotch bonnet peppers, carrots, and garlic in hot oil until onion is translucent, 10 to 20 minutes.
  • Pour enough cider vinegar into Dutch oven to cover vegetables by 1/2-inch. Bring to a boil, reduce heat to medium, and cook at a low boil until liquid is reduced to just covering the vegetables, about 20 minutes. Reduce heat to medium-low and simmer until liquid is slightly more reduced, about 20 minutes more. Pour mixture through a strainer to separate vegetables from liquid; reserve liquid.
  • Pour 1 cup of vegetables into a blender. Cover and hold lid down; pulse a few times before leaving on to blend. Add another cup of vegetables and continue pureeing until smooth. Repeat with remaining vegetables. Add reserved liquid and blend until desired sauce consistency is reached.
