Time 1h5m

Yield 4 to 8 servings

Number Of Ingredients 3

One 3- to 4-pound whole chicken, innards removed
Extra-virgin olive oil, for brushing
Kosher salt and freshly ground pepper

Steps:

  • Prepare a grill for high heat. Wrap 2 bricks with foil.
  • Remove the backbone of the chicken with kitchen shears. Place the chicken skin-side up and flatten the breastbone by pressing down hard with your hands or a cast-iron pan. Brush the chicken all over with oil, and sprinkle with salt and pepper.
  • Place the chicken on the grill skin-side down. Place the prepared bricks on top to keep the chicken flat. Cook, covered, for 30 minutes. Flip the chicken and cook, covered, until an instant-read thermometer registers 165 degrees in the thickest part of the thigh, 15 to 30 minutes more.

SWEET GLAZED BUTTERFLIED CHICKEN

Sweet Glazed Butterflied Chicken image

This butterflied chicken is so good, there's hardly a side dish I can think of that doesn't go with it. Try it and you'll know what I mean. I make this a lot. It has a sweet and sticky heat with curb appeal, perfect for a first date at home or the in-laws. Serves 4

Time 3h50m

Yield 4 servings

Number Of Ingredients 13

1 roaster chicken, 5 to 7 pounds, butterflied
Kosher salt and freshly ground black pepper
1/4 cup olive oil
Extra-virgin olive oil, to coat the pan
3 tablespoons unsalted butter
2 tablespoons (1/2 onion) grated onion (use the smallest side on a box grater or a rasp)
1/8 teaspoon allspice
Kosher salt and freshly ground black pepper
2 garlic cloves, grated on a rasp or finely minced
1/4 cup packed light brown sugar
1 tablespoon stone-ground mustard or Dijon
1/4 teaspoon hot sauce (I like Frank's Red Hot here), or more as desired
2 teaspoons apple cider vinegar

Steps:

  • Prepare the chicken. Season the chicken with salt and pepper. Rest on the counter for 2 hours to come to room temperature. Preheat the oven to 375 degrees F.
  • Roast the chicken. Pour the olive oil into a large ovenproof pan over high heat. As the oil begins to smoke, add the chicken, skin side down. Press gently, especially the legs, and allow to sear until a peek beneath reveals golden brown skin, about 10 minutes. Using tongs, flip over so the skin is on top and place the pan in the oven. Roast until the internal temperature is around 140 degrees F, 40 to 45 minutes.
  • Make the glaze. In a small pot over medium heat, add some olive oil to coat the pan and melt the butter. Add the onion, garlic, a pinch of salt and a few grinds of pepper. Cook until the onion and garlic are tender but not browned. Add the brown sugar, mustard, hot sauce, vinegar and allspice. Reduce, about 5 minutes, then remove from the heat.
  • Glaze the chicken. Remove the chicken from the oven and brush on the glaze. Return the chicken to the oven and continue to cook until the internal temperature reaches 165 degrees F, about 20 minutes more.
  • Serve. Cover the chicken loosely with foil and let rest for 15 minutes to allow the juices to redistribute. Then cut into sections and serve.

Time 3h5m

Yield 4 servings

Number Of Ingredients 11

1 (5 pound) chicken, spine removed and butterflied
Kosher salt and freshly ground black pepper
1/4 cup olive oil
3 tablespoons butter
2 tablespoons grated onion (use the smallest side on a box grater, or use a rasp)
2 cloves garlic, grated (on a rasp)
1/8 teaspoon ground allspice
1/4 cup light brown sugar
1 tablespoon stone-ground mustard
1/4 teaspoon hot sauce (recommended: Frank's Red Hot sauce)
2 teaspoons apple cider vinegar

Steps:

  • Preheat the oven to 375 degrees F.
  • Sprinkle the chicken with salt and pepper. Allow to rest on the counter for up to 2 hours to come to room temperature.
  • Heat a large oven-safe pan (such as a cast-iron skillet) over medium-high heat and add the olive oil. Right as the oil begins to smoke, add the chicken, skin side down. Press gently while cooking and allow to sear until a peek beneath reveals golden brown skin, about 10 minutes. Using tongs, flip the bird over so that the skin is on top and place the pan in the oven. Be gentle with the tongs, they could rip the skin; try gripping the legs to flip. Place the pan in the oven and roast about 30 minutes.
  • Meanwhile, in a saucepot on medium heat, add the butter and melt. Add the onions, garlic and allspice, and sprinkle with a pinch of salt and a grind of pepper. Sweat the onions for a few minutes, but do not brown. Add the brown sugar, mustard, hot sauce and vinegar. Cook a bit more to bring the flavors together, and then remove from the heat.
  • When the chicken is around the 140 degree F mark, about 30 minutes in, remove from the oven and brush on the glaze. Return to the oven and continue to cook until an instant-read thermometer reads 165 degrees F, about 15 minutes more. Let the chicken rest 10 minutes before serving. Cut off the legs, and then slice the breast off and cut into portions.

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 15

2 1/2 pounds chicken (I'm using thighs)
1 tablespoon olive oil
1 teaspoon favorite spice mix (I'm using Old Bay)
Kosher salt and freshly ground pepper
2 tablespoons honey (I'm using wildflower)
2 tablespoons mustard (I'm using sweet and spicy brown mustard)
2 tablespoons soy sauce
1 pound leafy greens (I'm using baby spinach)
One 14-ounce can beans, rinsed and drained (I'm using chickpeas)
1/2 cup sliced red onion
4 strips bacon, diced
1/4 cup vinegar (I'm using white wine vinegar)
1 tablespoon honey (I'm using wildflower)
1 tablespoon mustard (I'm using sweet and spicy brown mustard)
Leftover ketchup in the container (or about 1 tablespoon ketchup)

Steps:

  • For the chicken: Preheat a grill or oven to 450 degrees F. If using a gas grill, set to medium-high heat on one side and low on the other side. If using a charcoal grill, bank hot coals on one side of the grill.
  • Brush the chicken with the oil and season with the spice mix and a liberal amount of salt and pepper. Put the chicken on the hot side of the grill bone-side down, close the lid and cook for 3 to 4 minutes.
  • Meanwhile, whisk together the honey, mustard and soy sauce in a small bowl.
  • Flip the chicken, brush with the glaze and grill for 1 to 2 minutes. Move the chicken to the cool side of the grill bone-side down and apply the remaining glaze. Close the lid, open the vents halfway if using a charcoal grill and continue to cook until the chicken registers 160 degrees F in the thickest part, 15 to 20 minutes longer. If using the oven, place the chicken bone-side down on a baking sheet and roast, brushing with the glaze occasionally, until the chicken registers 160 degrees F in the thickest part, 25 to 30 minutes.
  • For the spinach salad: In a medium bowl, mix together the spinach, chickpeas and onions in a large bowl; set aside.
  • Put a heavy-bottomed skillet on the hot side of the grill, add the bacon and cook until crisp.
  • Add the vinegar, mustard, and honey to an almost-empty ketchup container and shake vigorously (or whisk together the vinegar, mustard, honey and ketchup in a small bowl). Remove the skillet from the heat and mix in the ketchup mixture to make a warm dressing.
  • Pour the dressing over the greens and toss together. Transfer the greens to a platter and top with the chicken.
