- Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square baking dish.
- Combine 1/2 cup sugar, cornstarch, and cinnamon in a large saucepan; stir in water until mixture is smooth. Add cherries and butter to sugar mixture and bring to a boil; cook and stir until cherry mixture is thickened, about 2 minutes. Pour cherry filling into the prepared baking dish.
- Mix flour, 2 tablespoons sugar, baking powder, and salt in a bowl; cut in shortening using a pastry blender until mixture resembles coarse crumbs. Stir milk into flour mixture until topping is just moistened. Drop topping by spoonfuls over cherry filling; sprinkle remaining 2 tablespoons sugar over topping.
- Bake in the preheated oven until topping is golden brown, 30 to 35 minutes.

FRESH CHERRY COBBLER
This is a delicious cherry cobbler made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product.

- Preheat the oven to 350 degrees F (175 degrees C). Place the butter in a 9x13 inch baking dish, and place in the oven to melt while the oven is preheating. Remove as soon as butter has melted, about 5 minutes.
- In a medium bowl, stir together 1 cup of flour, 1 cup of sugar, and baking powder. Mix in the milk until well blended, then pour the batter into the pan over the butter. Do not stir.
- Rinse out the bowl from the batter, and dry. Place cherries into the bowl, and toss with the remaining 3/4 cup of sugar and 1 tablespoon of flour. Distribute the cherry mixture evenly over the batter. Do not stir.
- Bake for 50 to 60 minutes in the preheated oven, until golden brown. A toothpick inserted into the cobber should come out clean.

- Preheat oven to 350. In a bowl combine the 3/4 cup Splenda and cornstarch. Then mix in the cherries. Place the cherries in a 13 x 9 baking pan.
- In another bowl cream butter and 1 cup Splenda. Add in milk powder, baking soda, flour, salt, baking powder, and milk.
- Spoon the batter over top of the berries, using a spatula to smooth it out.

- Preheat oven to 425 degrees F.
- In mixing bowl, combine cherries, flour and sugar; toss to coat evenly.
- Place in 8" square pan and bake for 25-30 minutes until bubbly.
- Meanwhile, sift flour into bowl; add baking powder, soda, and salt; and cut in chilled butter with pastry blender or 2 knives. When pea-sized texture, add buttermilk -all at once- stir just to blend.
- DO NOT OVERMIX; dough will be tough.
- When cherries are finished baking, remove from oven, drop dough by large spoonsful over cherries, and sprinkle lightly with granulated sugar.
- Return to oven for 25-30 minutes or until topping is done and golden brown.
- Serve hot or cool with whipped cream.

- Make filling:
- Cook all filling ingredients with a pinch of salt in a 2-quart heavy saucepan over moderate heat, stirring occasionally, until sugar begins to dissolve, about 3 minutes. Spoon filling into a 9-inch ceramic or glass pie plate (1 inch deep).
- Make topping and bake cobbler:
