5 cooking apples (medium to large)
2 cups sugar
2 cups water
1/2 teaspoon red food coloring (optional)
2 -3 sticks cinnamon, about 3 inches long

Steps:

  • Wash, and peel apples (peeling them is optional).
  • Cut each apple into 1/2-inch thick rings.
  • Use an apple corer to remove cores or remove seeds and cores after cutting into rings.
  • Combine sugar, water, food coloring (if using) and cinnamon sticks in a large skillet.
  • Stir over moderately low heat until sugar is dissolved.
  • Cook 10 minutes over medium heat.
  • Arrange apple rings in syrup.
  • Cook, basting frequently with syrup in skillet, until apples are tender, about 6 to 10 minutes.
  • Remove apples from syrup and use as garnish or serve in syrup as a side dish.
  • Makes 16 apple rings, serving size is two-apple ring.

4 medium apples, any variety
2 cups sugar
1 cup water
1/3 cup red cinnamon candies (i.e., Red Hots, etc.)
red food coloring

Steps:

  • Leaving peel on, cut core out of each apple, then slice into 1/2-inch rings horizontally.
  • Combine sugar, water, and candies in medium saucepan. Heat to boil, melting candies, then reduce to simmer. Add enough food coloring to make the liquid a nice red color.
  • Add apples to syrup, and cook until tender but not mushy. You should be able to pick them out with a fork when they're done.

2 gallons cucumbers, seeded, peeled and sliced
2 cups limes, sliced
8 1/2 quarts water
1 cup vinegar
1 ounce red food coloring
1 tablespoon alum
2 cups vinegar
2 cups water
10 cups sugar
8 cinnamon sticks
1 (12 ounce) bag red-hot candies

Steps:

  • Prepare cucumbers.
  • add lime and 8 1/2 qts water.
  • let stand 24 hrs.
  • drain, rinse, soak 3 hrs in cold water.
  • drain again.
  • simmer for 2 hrs in vinegar, red color, alum and enough water to cover.
  • drain.
  • Heat to make syrup of the last 5 ingredients (vinegar, water, sugar, and cinnamon sticks, and red hots).
  • Pour over the cucumbers.
  • let stand overnight or 8 hrs.
  • Drain and reheat syrup and pour over again letting stand for another 8 hours.
  • Heat syrup a 3rd time, pack rings in jars and fill with hot syrup and seal.

2 tablespoons honey
1/4 teaspoon cinnamon
4 medium cooking apples, unpeeled, cored, and cut into 1/2 in rings

  • Place the butter in a 12 x 8-in baking dish.
  • Microwave on HIGH for 50 seconds or until butter melts.

3 -4 large gala apples
1 cup all-purpose flour
1/4 teaspoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 large egg, beaten
1 cup buttermilk
vegetable oil, for frying

Steps:

  • In a medium-sized bowl, add the flour, baking powder, sugar, salt and ¼ teaspoon cinnamon. Set aside.
  • In a small bowl, combine the egg and buttermilk and mix well.
  • In a third dish, mix the remaining ⅓ cup sugar and 2 teaspoons of cinnamon and reserve for topping.
  • Slice apples into ¼-inch slices. Using a biscuit cutter, remove the cores along with the seeds, leaving ¼-inch-wide rings. Pat the apple rings dry with a paper towel to remove excess moisture.
  • Over medium-high heat, heat the vegetable oil in a frying pan to 350 degrees Fahrenheit.
  • As the oil heats, combine the flour mixture and the buttermilk mixture together into the batter, mixing well to remove any lumps.
