CHERRY CLAFOUTIS

A simple French dessert, clafoutis is part flan, part Dutch baby, and all parts délicieux.

2 tablespoons unsalted butter
2½ cups (12 oz) cherries, stemmed and pitted
3 large eggs
1 cup whole or 2% milk
¼ cup heavy cream
½ cup plus 2 tablespoons granulated sugar, divided
½ cup all-purpose flour, spooned into a measuring cup and leveled off
¼ teaspoon salt
1 teaspoon vanilla extract
⅛ teaspoon almond extract
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat the oven to 375°F and set an oven rack in the middle position.
  • Melt the butter in a 10-inch cast-iron or nonstick ovenproof skillet over medium heat. (Alternatively, if you don't have the right skillet, melt the butter in the oven in a 2-quart baking dish.) Swirl the butter so that it coats the sides the pan. Place the cherries in an even layer in the skillet (or baking dish).
  • In a blender, combine the eggs, milk, cream, ½ cup of the sugar, the flour, salt, vanilla extract, and almond extract. Mix on medium speed until smooth and well combined. Pour the batter over the cherries.
  • Bake for 20 minutes, then remove the clafoutis from the oven and sprinkle evenly with the remaining 2 tablespoons of sugar. Place back in the oven and continue baking until just set and golden brown, 25 to 30 minutes more. Note that clafoutis will wiggle just a bit when done, but a toothpick or knife inserted into the center should come out clean. Let cool on a rack for about 30 minutes, then dust with powdered sugar (if using), and serve directly from the pan.
  • Leftover clafoutis will keep in the refrigerator for up to 3 days. Reheat individual portions in the microwave.

2 cups of fresh sweet cherries, pitted
2 tablespoons of blanched slivered almonds
3 eggs
1/2 cup of sugar (can reduce to 1/4 cup)
1 tablespoon of brown sugar
1/2 cup of all-purpose flour
1/8 teaspoon of salt
1 cup of milk (2% or whole milk)
3/4 teaspoon of almond extract (can sub 2 teaspoons of Amaretto)
1 1/2 teaspoons of vanilla extract
Powdered sugar for dusting

Steps:

  • Preheat the oven: Preheat the oven to 350°F.
  • Make the batter: Whisk the eggs, granulated sugar, and brown sugar together until combined. Whisk in the salt and flour until smooth. Then whisk in the milk, almond extract, and vanilla extract
  • Bake: Bake at 350°F for 35 to 45 minutes or until lightly browned and a tester inserted into the center comes out clean. Check about halfway through the baking, and if the top is getting well browned, tent it loosely with aluminum foil.
  • Remove from the oven to cool: When you pull it out of the oven, it will wiggle a bit, which is normal. Place on a wire rack to cool. The clafoutis will have puffed up quite a bit and will deflate while cooling.
  • Dust with powdered sugar: When cool, dust the clafoutis with powdered sugar. Serve.

1 cup sugar, divided
1/2 cup chilled mascarpone cheese or crème fraîche
1/2 cup heavy whipping cream, divided
2 tablespoons kirsch (clear cherry brandy), divided
1 pound frozen pitted sweet cherries, thawed
3 large eggs
1 vanilla bean, split lengthwise
3/4 cup sour cream
1/2 cup whole milk
6 tablespoons all purpose flour

Steps:

  • Using electric mixer, beat 2 tablespoons sugar, mascarpone, 1/4 cup whipping cream, and 1 tablespoon kirsch in medium bowl until peaks form. Cover and chill topping until ready to use.
  • Preheat oven to 375°F. Generously butter 10-inch glass pie dish; sprinkle with 1 tablespoon sugar to coat. Arrange cherries in single layer in dish. Place eggs and 3/4 cup sugar in large bowl. Scrape in seeds from vanilla bean; discard bean. Whisk until blended and frothy. Whisk in 3/4 cup sour cream, milk, remaining 1/4 cup cream, and 1 tablespoon kirsch. Sift flour over and whisk to blend. Pour batter over cherries. Sprinkle with remaining 1 tablespoon sugar. Bake clafouti until puffed, golden brown, and set in center, about 35 minutes. Serve directly from dish either warm or at room temperature with mascarpone topping.

2 tablespoons all-purpose flour
2 large eggs
2/3 cup milk
1 1/2 teaspoons vanilla extract
1/2 teaspoon orange zest
1/4 teaspoon almond extract
1/4 teaspoon salt
1 cup Bing cherries, halved and pitted
1/2 tablespoon unsalted butter, cut into bits
vanilla ice cream as an accompaniment if desired

Steps:

  • Preheat the oven to 400°F. In a blender blend together 1/3 cup of the sugar, the flour, the eggs, the milk, the vanilla, the zest, the almond extract, and the salt until the custard is just smooth. Arrange the cherries in one layer in a buttered 3-cup gratin dish or flameproof shallow baking dish, pour the custard over them, and bake the clafouti in the middle of the oven for 20 to 25 minutes, or until the top is puffed and springy to the touch. Sprinkle the top with the remaining 1 tablespoon sugar, dot it with the butter, and broil the clafouti under a preheated broiler about 3 inches from the heat for 1 minute, or until it is browned. Serve the clafouti with the ice cream.

½ teaspoon butter
½ cup flour
⅔ cup white sugar, divided
1 ¼ cups milk
3 eggs
1 tablespoon vanilla extract
1 pinch salt
12 ounces fresh cherries, stems removed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter 2-quart baking dish.
  • Place flour, 1/3 cup sugar, salt, and milk in mixing bowl. Whisk thoroughly to blend and break up any lumps. Whisk in eggs and vanilla until well blended. Ladle about half of the custard into the prepared baking dish.
  • Bake in preheated oven until set, about 12 minutes. Remove from oven. Distribute cherries evenly on top of the set custard. Sprinkle with 1/3 cup sugar. Ladle in the rest of the custard; avoid rearranging the cherries.
