Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Beat 1 cup flour, sweet potatoes, brown sugar, milk, vegetable oil, eggs, baking powder, cinnamon, orange zest, salt, and baking soda together in a bowl using an electric mixer until batter is smooth, about 2 minutes. Stir remaining 1 cup flour into batter; fold in pineapple. Pour batter into prepared loaf pan.
- Bake in the preheated oven until a knife inserted in the center of the bread comes out clean, 55 to 60 minutes.

Steps:
- 1. Combine flour, brown sugar, orange peel, salt and mace in a mixing bowl; cut in butter until mixture resembles coarse crumbs. Measure 1/3 cup and set it aside.
- 2. Add baking powder and soda to remaining crumbs. Combine egg and buttermilk; add to flour mixture, stirring until well mixed. Turn into a greased 9" square baking pan. Add cinnamon and walnuts to reserved crumbs; sprinkle evenly over batter.
- 3. Bake in a 400 oven for 45 to 55 minutes or until a wooden pick inserted in center comes out clean. Makes 9 to 12 servings

- Preheat oven to 350°F. Butter and flour 9x5-inch loaf pan. Using electric mixer, beat sugar, eggs and butter in large bowl until well blended. Beat in milk. Mix flour, baking powder, cinnamon and salt in medium bowl. Add to butter mixture and beat just until blended.
- Pour batter into prepared pan. Bake until golden brown and tester inserted into center of bread comes out clean, about 1 hour. Transfer pan to rack and cool 10 minutes. Using small knife, cut around sides of pan to loosen bread. Turn bread out onto rack and cool completely. (Can be made 1 day ahead. Wrap in foil and store at room temperature.)
