BLUEBERRY SWEET ROLLS RECIPE
These blueberry sweet rolls are bursting with juicy berries and ready in about an hour!

Steps:
- Dissolve the yeast in the warm milk in a large bowl.
- Add sugar, butter, salt, eggs and flour to the bowl and mix well.
- Once the dough starts to come away from the edges, knead for about 5 minutes (if you are using your hands, dust them lightly with flour to avoid sticking) until a large ball is formed.
- Cover the bowl with a towel and allow to rise for 45 minutes to 1 hour, until dough has doubled in size.
- Lightly flour your counter top and roll the dough out until it is approximately 16x21 inches, and ¼ inch thick.
- Preheat your oven to 400 degrees.
- Spread the melted butter over the top of the dough.
- Sprinkle the sugar and the blueberries evenly over the buttered dough.
- Carefully roll the dough from the long top edge to the bottom edge.
- Using thread (wrap the thread around the bottom of the roll, bring up and cross over each other and pull tight), or a knife, cut dough into 12 1 to 1 1/2inch slices.
- Lightly grease a 9x13 baking pan
- Place rolls in baking pan and bake for about 25-28 minutes until they turn a lighten golden color.
- While they are baking combine frosting ingredients. Add more powdered sugar to the frosting if it is too runny, add a dash of milk if it is too thick.
- Remove rolls from oven and allow them to cool for about 5 minutes before frosting.
- Apply frosting generously to rolls.

BASIC SWEET-ROLL DOUGH

- Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
- Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
- Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
- Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

- 1. Place ingredients for dough in machine in order given, covering liquid ingredients with flour and adding yeast last. Upon completion of dough cycle, remove dough, divide into 12-18 equal pieces (depending on how large you want your rolls). For the best way to shape your rolls watch the video.
- 2. Place on lightly greased baking sheet, cover and let rise until doubled. I have baked these on two different kinds of baking pans. A 8 inch round and a 9x13 sheet. The 8 inch round makes them more of a "Pull A Part roll" and you have to bake a bit longer. The 9x13 bakes them all the way around and they come out very nice. I prefer the 9 x 13.
- 3. Beat together egg and milk and brush rolls with wash just before baking.
- 4. Bake in preheated, 350-degree oven for 15 - 20 minutes or until golden brown.

- 1. Scald milk (bring just to a boil and remove from heat immediately).
- 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
- 3. In a large bowl mix warm water and yeast. Stir until dissolved.
- 4. Stir in lukewarm milk mixture.
- 5. Add beaten eggs.
- 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
- 7. Your dough should be elastic and slightly stiff but not dry.
- 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
- 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
- 10. Cover bowl and place in a warm place so it can rise.
- 11. It will take about 1 hour to double in bulk.
- 12. At that time punch dough down and turn out onto a lightly floured board to shape.
- 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
- 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
- 15. Rolls should now touch each other. (A little more rising will occur during baking.)
- 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
- 17. Brush tops of rolls with melted butter immediately when removed from the oven.
- 18. Allow rolls to sit for at least 10-15 minutes before eating.

- 1. Breadmaker Dough Cycle: Add the liquids (milk, melted butter, beaten eggs to breadmaker container; add flour, sugar, and salt. Then make a well in center of flour and add yeast (or layer according to your manufacturer's directions). Select your dough cycle. I use the short dough cycle.
- 2. When dough cycle is complete roll out the dough on a pastry board into a rectangle 14" x 17". Spread blueberry preserves on dough leaving a small edge on all sides of dough. Roll the long top edge toward you as in a jellyroll style. You have to lift as you roll because of the filling. Turn to have seam on bottom and seal.
- 3. Cut into 11/2 inch slices (approximately 10 - 12). Place in greased 13" x 9" baking dish with filling side up. Cover and let rise in a warm place until doubled in size (approximately 45 minutes). Bake at 350 degrees for 18 - 22 minutes or until golden brown and center is cooked through.
- 4. Glaze: Mix together until smooth the powdered sugar, almond extract (or your preference flavor), melted butter and milk. Drizzle over blueberry sweet rolls.

- Place all ingredients in bread pan of your bread machine.
- Select dough setting and press start.
- When dough cycle has finished, remove dough from pan and turn out onto a lightly oiled surface (or use nonstick cooking spray).
- Form dough into an oval, cover with plastic wrap and let rest for 10 minutes.
- After resting, divide the dough into 16 pieces; shape as desired.

BREAD MACHINE SWEET DOUGH/ROLLS
Since this is an original bread machine recipe I firstly tryed it on my Zojirushi Home Baker bread machine and results were great! I have since adapted it to make on my Kitchen Aid stand mixer, I will be happy to forward the KA measurement adaptations to any who wants them. Prep time is only for the last rising time, and servings is only estimated. This delicious sweet dough can be used for buns or sweet rolls.

- Place the water, milk, egg, butter, sugar, salt, flour and yeast into the bread machine pan in order stated (starting with water and ending with the yeast).
- Select dough cycle, then press start.
- Since all bread machines are different the water or flour amounts will need to be adjusted slightly to your bread machine to create a soft smooth semi-sticky dough, so make certain to check after about 5 minutes of kneading time and adjust water or flour amounts.
- When the dough cycle has finished (including the rising time) remove and place dough on a lightly floured work surface.
- Divide into sections; let the sections rest for 5 minutes (important, the dough MUST rest for 5 minutes) then shape as desired.
- Place the shaped dough onto a greased baking sheet; cover with a light clean towel.
- Let rise in a warm place for about 1-1/2 hours or until doubled in size (due to the addition of an egg rising time will be longer).
- Bake in a 375°F oven for about 20-25 minutes or until until browned.
