This beet slaw is a tangy and sweet side dish, filled with farm-fresh beets, scallions, and fresh mint! It pairs perfectly with grilled chicken or salmon, or as an addition to any leafy green salad.

3 to 4 large raw beets, peeled and grated
2 scallion stalks, sliced thin (about 1/3 cup)
1 inch chunk ginger, peeled and grated
1/4 cup mint, chopped fine
2 tablespoons fresh lemon juice
1 tablespoon honey
1 tablespoon apple cider vinegar
1/3 cup golden raisins
1/3 cup sliced raw almonds
Pinch of fine sea salt
1 tablespoon sesame seeds (optional)

Steps:

  • Add all ingredients to a large bowl and toss to combine. Taste and adjust seasoning.
  • Serve immediately or make ahead and store in an air-tight container in the refrigerator for up to 5 days.

  • Toss 1/2 thinly sliced small red onion with 3 tablespoons red wine vinegar; set aside 10 minutes. Stir in 2 tablespoons olive oil and 1 teaspoon each grainy mustard and honey. Grate 2 carrots and 1 beet on the large holes of a box grater; add to the dressing along with 1/2 thinly sliced small red cabbage and 1/2 cup parsley; season with salt and pepper. Let stand 20 minutes.

3 pounds cabbage
1 tablespoon yellow mustard
1/2 cup mayonnaise
1/4 cup salad dressing spread, preferably Miracle Whip
1 cup sugar

Steps:

  • Slice cabbage into quarters; cut away the core, which is bitter. Peel and discard outer layers of cabbage until you get to the first unblemished layer of leaves. Break up the remaining layers of leaves and place in a bowl. Use a chopper to chop the cabbage by hand in the bowl, or chop on a flat work surface using a sharp knife. (Optional: Pulse cabbage in a food processor to a minced consistency.) Place minced cabbage back into the bowl.
  • Once cabbage is minced, add mustard, mayonnaise, salad dressing spread, and sugar. Toss well to combine. After several minutes, the cabbage will begin to release moisture. Cabbage is fully mixed when a spoon pressed down on the slaw yields pooled liquid. Serve.

1/2 teaspoon sugar
1/2 teaspoon salt

1 pound beets, peeled and shredded, about 3 medium beets
1/2 pound carrots, peeled and shredded, about 3 carrots
3 tablespoons fresh chopped parsley leaves

Steps:

  • In a small non-reactive bowl whisk together Dijon mustard, red wine vinegar, celery seed, sugar, salt and olive oil. Season with pepper. Place beets, carrots and parsley in large serving bowl, pour dressing over salad, toss to combine. Taste and adjust seasonings.

2 tablespoons honey
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup olive oil
4 cups beets, boiled until tender, through a rouet, and pressed in paper towels
2 cups jicama, peeled and cut into sticks
3 cups fennel, cored, halved, and sliced with mandoline
1/4 cup grated onion
1 Asian pear, halved, cored, and sliced with a mandoline
2 tablespoons lemon juice
6 ounces goat cheese, crumbled

Steps:

  • In a small bowl combine the red wine vinegar, honey, black pepper, and salt. Slowly, while whisking add the oil until the mixture is emulsified. Combine all vegetables and let drain in a colander. Combine vegetables and dressing then toss with the lemon juice and goat cheese.

2 tbsp Dijon mustard
1 clementine , juiced
1 large lemon , zested and juiced
2 tbsp maple syrup
5 tbsp extra virgin olive oil or rapeseed oil
50g pecans , roughly chopped
8 beetroots , a mix of colours, peeled and halved
¼ celeriac , peeled
1 dessert apple , halved
1 red onion , halved and thinly sliced
small pack dill , roughly chopped
small pack parsley , roughly chopped

Steps:

  • Mix the mustard, clementine and lemon juice, zest, maple syrup, oil and some seasoning in a large bowl. Toast the pecans in a frying pan until a shade darker, then tip them into the bowl. Cut the beetroot, celeriac and apple into fine matchsticks (use a mandolin with a julienne attachment if you have one) and add to the bowl.
  • Add the onion, herbs and some seasoning, and toss until everything is well coated in the dressing. The slaw will keep for a few days in the fridge but the beet will stain all the other veg, so it will look best if served within 1-2 hrs.

250g new season carrot
1 bunch spring onion , finely sliced
50g cashew or salted peanuts
150g pot low fat yogurt
1 tsp clear honey
pinch each chilli and ginger powder

Steps:

  • Fix the rough grating blade to your food processor. Peel and grate the beetroots and carrots.
  • Tip into a bowl and stir in the spring onions and nuts. Mix the yogurt, honey, chilli and ginger. Serve each portion of slaw drizzled with a little dressing.
