Mixed Greens Salad with Strawberries and Candied Walnuts image

1 tablespoon unsalted butter
1 cup walnuts
1/4 cup granulated sugar
Pinch ground cinnamon
Pinch kosher salt
2 tablespoons sugar
2 tablespoons blush wine vinegar
2 tablespoons hot water
2 teaspoons mixed berry jam
1/4 teaspoon garlic powder
1/4 cup extra virgin olive oil
Pinch kosher salt
10 ounces mixed greens
1 cup sliced strawberries
1 cup candied walnuts (or pecans)
1/2 cup feta cheese
Blush wine vinaigrette, homemade (recipe follows) or store bought

Steps:

  • To make the candied walnuts: In a large skillet, melt the butter over medium heat. Add the walnuts, sugar, cinnamon, and salt and cook, stirring constantly, until the sugar melts and caramelizes, about 2 minutes. Transfer to a silicone mat-lined baking sheet and let cool completely, 20 minutes.
  • To make the vinaigrette: In a jar with a lid, add the sugar, vinegar, hot water, mixed berry jam, and garlic powder. Add the oil and salt. Cover and shake vigorously to combine.
  • To make the salad: In a large bowl, toss together the mixed greens and 1/2 cup of the strawberries. Add the vinaigrette to taste and toss until the greens are coated. Top with the remaining strawberries and sprinkle the feta cheese and candied walnuts on top.

I found a basic recipe for a Thai cabbage slaw, and I added a few tweaks of my own to give it a crunchier texture and a little more zip! It goes well with grilled meats and seafood on a hot day.

2 limes, juiced
1 tablespoon Asian red chili paste
1 tablespoon white sugar
1 teaspoon grapeseed oil, or more as needed
1 small head napa cabbage, shredded
2 carrots, shredded
1 small red bell pepper, thinly sliced
½ seedless cucumber, sliced paper-thin
⅓ cup cilantro, chopped
½ cup peanuts, chopped, or more to taste
salt and ground black pepper to taste

Steps:

  • Whisk lime juice, chili paste, and sugar together in a small bowl. Add oil in slow stream while still whisking.
  • Combine napa cabbage, carrots, bell pepper, cucumber, cilantro, and peanuts in a large bowl. Season with salt and pepper. Pour dressing over vegetables and toss with tongs to coat. Chill salad for at least 1 hour. Stir and adjust seasonings before serving.

4-1/2 teaspoons sugar
1-1/2 teaspoons water
3 tablespoons chopped walnuts
4-1/2 teaspoons olive oil
2-1/4 teaspoons tarragon vinegar
Dash salt
2-1/2 cups torn Boston lettuce
2/3 cup mandarin oranges

Steps:

  • In a small saucepan over medium-low heat, bring sugar and water to a boil, stirring constantly. Add walnuts; cook and stir for 2-3 minutes or until lightly browned. Spread onto a piece of greased foil; set aside., In a small bowl, whisk the oil, vinegar and salt. In a salad bowl, combine lettuce and oranges. Drizzle with dressing and sprinkle with walnuts; toss to coat.
