20 Minute Sweet and Spicy Noodles image

These Sweet and Spicy Noodles are a Thai inspired fast, easy weeknight dinner that can be ready and on the table in just 20 minutes!

16 oz linguine rice noodles (or regular pasta)
3 tablespoons soy sauce
3 tablespoons hoisin
4 tablespoons honey
2 teaspoons chili garlic sauce
2 -3 cloves garlic, minced
1/8 - 1/4 teaspoon red pepper flakes (to taste)
1/4 cup sesame oil*
2 cups shredded carrots (approximately 2 large)
1 cup roasted, salted peanuts
1/2 cup fresh cilantro, chopped
2 tablespoons green onion, chopped
Sriracha to taste

Steps:

  • Bring a large pot of water to a boil and cook noodles until al dente, approximately 6 minutes.
  • Meanwhile, prep your veggies / garnishes. In a small bowl mix soy sauce, hoisin, honey, chili garlic paste, and red pepper flakes.
  • A couple of minutes before the noodles are done, in a large saute pan, heat sesame oil over medium heat. Add garlic and cook for 30-60 seconds. Be sure it doesn't burn! Add sauce and stir.
  • When noodles are done, drain and add immediately to pan with sauce and stir until the noodles are well coated.
  • Top with carrots, peanuts, cilantro, green onion, and Sriracha. Mix and serve!

3 tablespoons taco seasoning
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 to 2 tablespoons canola oil
1-2/3 cups chunky salsa
1/2 cup peach preserves
Hot cooked rice

Steps:

  • Place taco seasoning in a large shallow dish; add chicken and turn to coat. , In a large skillet, brown chicken in oil until no longer pink. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until heated through Serve with rice.

Coarse salt
1/2 cup penne rigate (ridged) or other short pasta
1 boneless, skinless chicken breast half, cut into 1-inch chunks
1 plum tomato, seeded and diced
2 tablespoons tomato paste
2 garlic cloves, minced
1 tablespoon extra-virgin olive oil
1/4 teaspoon red-pepper flakes
3 cups baby spinach (3 ounces)
1 tablespoon fresh lemon juice

Steps:

  • In a large pot of boiling salted water, cook penne until al dente, adding chicken during last 2 minutes of cooking. Reserve 1/4 cup pasta water. Drain pasta and chicken; return to pot.
  • To pot, add tomato, tomato paste, garlic, oil, red-pepper flakes, and spinach; season with salt. Cook over medium, tossing, until spinach is barely wilted, about 1 minute. Remove pot from heat; stir in lemon juice and enough pasta water to create a thin sauce that coats pasta. Season with salt, if necessary, and serve immediately.

8 ounces chicken
1 tablespoon spicy oyster sauce
2 tablespoons soy sauce
1 cup spiral shaped pasta
1/8 cup fructose
1/4 cup sliced mushrooms
1 clove garlic
1 cup water
1/2 cup snow peas
salt and pepper

Steps:

  • Cut chicken into bite sized pieces.
  • Mix oyster sauce, soy sauce, fructose, minced garlic and water together with chicken.
  • Allow chicken to marinate for 1 hour or more.
  • Boil pasta until close to done.
  • Drain pasta and pour marinade, chicken, and pasta back into the pot you used for pasta Add mushrooms, snowpeas or other additives now.
  • Boil pasta chicken marinade mix until chicken is completely cooked.
  • Drain, season to taste and serve.
