Continue baking until bacon is crisp and brown, 15 to 20 minutes more, then transfer to paper towels to drain.

- Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
- Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
- Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

- Pulse the bread, butter, and 1/2 cup cheese in a food processor until coarsely ground.

- Preheat the oven to 350 degrees F. If the turkey has a pop-up timer in it, remove it. It's useless. Combine the spices with three tsp of the olive oil until it forms a paste. Work some of the past under the skin of the turkey the best that you can. Combine the remaining olive oil and honey with the remaining spice mixture. It should be a consistency that you can use a basting brush to brush the mixture on the turkey. If it isn't, add a little more oil. Brush some of the mixture on the turkey. Then, start wrapping the bacon on the turkey. You can either layer it simply or weave it (see photo). Once it is completely covered, baste the bacon layer with more of the glaze. Place in oven and bake for one hour. Baste, then bake for another hour, basting after 30 minutes. If the bacon starts to get too brown you can loosely tent it with some foil. The cooked turkey should register 180 degrees F. Let stand, tented with foil, for about 10 minutes, then carve as desired. On the off chance there is any leftover bacon, use it on turkey sandwiches the next day.
