These Sweet and Spicy Korean Meatballs will change your life. They're made with lean beef, flavored with garlic and Sriracha, baked, no frying and glazed with a spicy apricot glaze.

Steps:
- Preheat oven to 400 F degrees. Line a baking sheet with parchment paper; set aside.
- In a large bowl, add all the meatball ingredients and mix with your hands to combine. Form the meatballs into small 1 inch balls. Place the meatballs on the prepared baking sheet and bake for about 20 to 25 minutes or until done to your liking.
- Meanwhile, in a medium bowl whisk together all the glaze ingredients. Add the meatballs and toss well until all the meatballs are glazed.
- Garnish with chopped chives if preferred and serve immediately over cooked rice or as an appetizer.

- Preheat the oven to 375 degrees F.
- Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.
- Add pepper jelly, orange juice and soy sauce to a small pan. Cook over medium-high heat until it simmers, then remove from the heat. Pour jelly sauce over the meatballs and toss to coat.

- Heat oven to 425°F. Line cookie sheet with sides or shallow baking pan with cooking parchment paper.
- In large bowl, mix all Meatball ingredients except broccoli and oil until well combined. Shape meatballs using 1 heaping teaspoonful mixture for each; place in cookie sheet. Arrange broccoli in cookie sheet. Drizzle broccoli with oil.
- Bake 25 to 30 minutes or until meatballs are thoroughly cooked and no longer pink in center, and broccoli is browned around edges.
- While meatballs and broccoli are baking, mix Sauce ingredients.
- Cook and drain capellini as directed on package. Toss capellini with sauce, meatballs and broccoli.

- Preheat oven to 350°. In a large bowl, combine bread crumbs, egg, garlic and pepper flakes. Add sausage; mix lightly but thoroughly. - Directions In a small saucepan, whisk together the first group of ingredients (water through grated ginger). Heat over medium-high heat until it comes to a boil, then reduce heat medium-low and simmer until reduced and thickened. While the sauce is thickening, combine the second group of ingredients (reserving one tablespoon of the green onion tops) in a medium bowl. Shape into 2-inch meatballs. Heat vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook for about 6 minutes, turning to brown all sides evenly. Reduce heat to medium and pour in the sauce. Continue to cook for 5-10 minutes, or until a meatball cut in half is fully cooked/no longer pink, and the sauce coats the meatballs.
