SWEET AND SOUR PORK TENDERLOIN

3 pounds pork tenderloin, silver skins removed
1 teaspoon olive oil
1 teaspoon salt
1 teaspoon freshly ground pepper
1 20 oz. can pineapple chunks in juice, drained, juice reserved, pineapple set aside
1/2 cup brown sugar, packed
2 tablespoons soy sauce
3 tablespoons tomato paste
1 tablespoon cornstarch
2 tablespoons fresh parsley, minced

Steps:

  • 1. Season tenderloins with salt and pepper.
  • 2. Heat oil in large skillet over medium-high heat and brown tenderloins on all sides. Place in crock.
  • 3. In small bowl, whisk together pineapple juice, brown sugar, soy sauce, tomato paste and cornstarch. Pour over pork tenderloin. 4. Cover and cook on HIGH for 4 hours or LOW for 6 hours or until internal temperature reaches at least 160 degrees Fahrenheit for medium doneness.
  • 5. Remove cover and stir in pineapple chunks.
  • 6. Cover and cook on HIGH for 15-30 minutes until pineapple is heated through.
  • 7. Slice pork and serve with sauce and pineapple.
  • 8. Garnish with minced parsley.
  • 9. Serve over hot, cooked rice if desired.

ROSEMARY-GARLIC PORK TENDERLOIN WITH SWEET-AND-SOUR PRUNES



Rosemary-Garlic Pork Tenderloin with Sweet-and-Sour Prunes image

8 ounces (1 1/3 cups) pitted prunes
1 1/3 cups water
2/3 cup Sherry wine vinegar
1/2 cup sugar
1/4 cup olive oil
6 garlic cloves
2 tablespoons chopped fresh rosemary
2 teaspoons cracked black pepper
1 1/2 pounds pork tenderloins
Generous pinch of dried crushed red pepper
12 cups sliced escarole (about 1 large head)
1 cup chicken stock or canned low-salt chicken broth

Steps:

  • Bring pitted prunes, 1 1/3 cups water, Sherry wine vinegar and sugar to boil in heavy medium saucepan, stirring until sugar dissolves. Reduce heat to medium and cook until liquid is syrupy, about 20 minutes. Set prunes aside.
  • Preheat oven to 400°F. Blend 1/4 cup olive oil, garlic cloves, chopped fresh rosemary and cracked black pepper in food processor to form paste. Place pork tenderloins in roasting pan; rub with 3 1/2 tablespoons garlic paste. Set remaining garlic paste aside. Roast pork tenderloins until thermometer inserted into thickest part registers 150°F, about 30 minutes.
  • Meanwhile, heat remaining garlic paste and dried crushed red pepper in heavy large saucepan over medium-high heat. Add 12 cups sliced escarole; cover and cook until wilted, about 6 minutes. Mix in chicken stock.
  • Transfer pork to work surface and slice. Mix any pan juices from pork into prunes and bring to simmer. Divide escarole among 6 plates. Top with pork slices, then prunes. Serve immediately.

SWEET AND SOUR HONEY MUSTARD PORK TENDERLOIN

I could not get my husband to eat pork loin or roasts. I tried dozens of recipes, but he would just say it was okay but would never want me to make it again. After numerous tries I came up with this, and he likes it, but only if the rub stays on it for 24 hours. Believe me he knows when it doesn't! Now it is a regular on the menu without complaint. I hope others like it.

1 (2 pound) pork tenderloin, trimmed of fat
1 teaspoon chili powder
1 teaspoon garlic powder
½ teaspoon paprika
¼ cup sweet and sour sauce (such as Kikkoman®), or as needed
3 tablespoons honey
4 teaspoons prepared yellow mustard
2 cups water, or as needed

Steps:

  • Rinse pork tenderloin with cold water, pat dry, and place in a baking dish.
  • Whisk chili powder, garlic powder, and paprika together in a bowl. Rub mixture all over pork tenderloin until completely covered. Cover baking dish with aluminum foil and refrigerate for 24 hours.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Brush a thin coat of sweet and sour sauce all over tenderloin and let rest for 10 minutes.
  • Whisk honey and mustard together in a bowl. Brush a heavy coat of honey mustard onto the tenderloin. Pour water into the baking dish to reach a depth of 1/2-inch. Cover the baking dish with aluminum foil.
  • Cook until pork is slightly pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

1 (1 1/4 pound) pork tenderloin, trimmed of silver skin
salt and ground black pepper
⅓ cup ketchup
⅓ cup seasoned rice vinegar
1 (8 ounce) can pineapple chunks, drained with juice reserved
2 tablespoons brown sugar
4 cloves garlic, minced
2 teaspoons hot chili sauce (such as Sriracha®)
1 teaspoon soy sauce
1 pinch red pepper flakes
1 tablespoon vegetable oil
1 teaspoon butter
¼ cup chopped green onion (white part only)
2 tablespoons chopped green onion tops

Steps:

  • Cut tenderloin into 4 pieces. Arrange in a single layer between two sheets of plastic wrap and pound with a meat mallet until each is about 1-inch thick. Generously season with salt and black pepper.
  • Whisk ketchup, rice vinegar, reserved pineapple juice, brown sugar, garlic, hot chili sauce, soy sauce, and red pepper flakes in a bowl. Set aside.
  • Heat vegetable oil in a skillet over high heat. Place pork in pan; reduce heat to medium. Cook until browned on both sides and cooked through, 5 to 6 minutes per side. Transfer to a plate.
  • Return skillet to medium heat. Stir butter into hot pan. When butter melts and starts to brown, stir in pineapple chunks. Cook, stirring, until pineapple is golden brown, 3 to 4 minutes.

1 large pork tenderloin (about 1 1/2 pounds), halved crosswise
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
6 carrots, sliced 1/2 inch thick
5 cups broccoli florets (about 1 bunch)
8 pickled sweet cherry pepper slices, plus 3 tablespoons brine
2 tablespoons pure maple syrup

Steps:

  • Preheat the oven to 475 degrees F. Season the pork all over with salt and pepper. Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Add the pork and cook, turning, until browned on all sides, about 8 minutes. Remove to a plate.
  • Wipe out the skillet; add 1 more tablespoon olive oil and heat over medium-high heat. Add the carrots and cook, stirring, until browned around the edges, about 4 minutes. Stir in the broccoli, remaining 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper. Place the pork on top. Transfer the skillet to the oven and roast until a thermometer inserted into the center of the pork registers 145 degrees F, 12 to 15 minutes. Transfer the pork to a cutting board and let rest at least 5 minutes before slicing.
  • Meanwhile, return the skillet to the stovetop over medium-high heat. Add the cherry pepper slices, brine and maple syrup to the vegetables. Cook, stirring, until the vegetables are glazed, about 1 minute; season with salt.
  • Slice the pork and season with salt and pepper. Serve with the glazed vegetables.

1/2 cup golden raisins
1/2 cup hot water
4 tablespoons olive oil
28 red pearl onions (about 6 ounces), peeled
2 medium bulbs fennel, halved lengthwise, cored, thinly sliced lengthwise, and fronds reserved
1 teaspoon tomato paste
1/2 cup white-wine vinegar
2 tablespoons light-brown sugar
1 tablespoon capers, rinsed
2 pork tenderloins (1-pound each), trimmed and sliced crosswise into 1 1/4-inch-thick pieces
Coarse salt and freshly ground black pepper

Steps:

  • In a small bowl, mix together raisins and hot water; set aside until plump.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add onions and fennel; cook until softened and translucent, about 5 minutes. Add tomato paste and stir to coat. Add vinegar and sugar and continue cooking, stirring, until sugar has dissolved.
  • Drain raisins and add to skillet; reduce heat to medium and let simmer 2 minutes. Add capers; stir to combine and set aside.
  • In a large, clean skillet, heat 2 tablespoons olive oil over medium-high heat. Season pork with salt and pepper and add to skillet. Cook, turning once, until pork is just cooked through, 2 to 3 minutes per side.
  • Add pork to skillet with onion mixture and turn to coat; transfer to a serving dish. Serve immediately, garnished with reserved fennel fronds.
