Buttery Garlic Green Beans image

Only fresh green beans and garlic will do for this easy, healthy, and flavorful side dish.

1 pound fresh green beans, trimmed and snapped in half
3 tablespoons butter
3 cloves garlic, minced
2 pinches lemon pepper
salt to taste

Steps:

  • Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
  • Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

This recipe has a wonderful mixture of flavors going on. It's easy to make and tastes even better if made a day ahead and reheated. It comes from the Lean and Luscious and Meatless cookbook.

2 tablespoons vegetable oil
1 cup chopped onion
1 cup chopped sweet red pepper
1 garlic clove, finely chopped
1 (8 ounce) can tomato sauce
1/3 cup apple juice
1 tablespoon brown sugar
1 tablespoon vinegar
1 teaspoon prepared yellow mustard
2 (1 lb) cans butter beans, rinsed and drained
1 1/2 teaspoons cornstarch
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 1-1/2 qt baking dish with a nonstick cooking spray.
  • Heat oil in a large nonstick skillet over medium heat.
  • Add onions, red pepper, and garlic.
  • Cook until onions are tender and start to brown, about 10 minutes.
  • Remove from heat.
  • Add remaining ingredients, dissolving cornstarch in the 2 Tbsp of water before adding.
  • Mix well.
  • Transfer to prepared baking dish.
  • Bake, uncovered, for 1 hour.

1/4 cup brown sugar
2 tablespoons butter

Steps:

  • Drain out just a small bit of liquid from the can.
  • In a small saucepan, combine beans with remaining liquid, brown sugar and butter; mix well.
  • Cook over medium heat until heated through and until sugar and butter is dissolved.
